WHITE CASTLE HAMBURGER PIE - Linda's Low Carb Menus & Recipes

I love this and made it last year for the Alabama homecoming party we go to. Today is homecoming, and for the first time since I was in high school we are not going to this one house for homecoming. The lady of the house had a stroke this summer. It is so sad, the end of an era. In her honor, I'm making this tonight.

Julia, that is really nice that you are making that recipe -- it looks terrific (I love Linda Sue). I am so sorry that the lady of the house had a stroke -- that is very sad news. At least you had some good memories of past Alabama homecoming memories to cherish.

Up a bit, 201.2, but my hands and feet are puffy with water-retention. Love that cheeseburger pie, but it is filled with salt. Tonight I'm making Linda's creamy southwestern taco soup. And for breakfast this morning I'm going to have a flax muffin with pumpkin purée added, with some sugar-free syrup. Pancakes, sort of.

Karen is missing us, so it's a beautiful day. We may go to the zoo.

Back down to 200.8. Last night I made creamy taco soup and I was sure it would cause bloat, but apparently not too bad.

We did go to the zoo yesterday, before a cold front brought in rain. It was a fun day. I worked yesterday afternoon, and is week will be interesting: parent-teacher conferences, so we won't have school Tuesday afternoon or Wednesday. It's so hard to get into a routine. Is also hard when it is dark in the morning - I say I'm going to get up to exercise, but it is pitch black out when I can. Excuses, excuses!

Don't beat yourself up about the exercise -- you are getting the food part right and that is 80% of the equation. They say that successful weight loss is 80% diet and 20% exercise so you are on the right path. Glad you went to the zoo!

Your breakfast sounds great! I agree with Gail that dialing in the nutrition should always be our first priority. Don’t get me wrong, exercise is a wonderful thing for a healthy body, but when it comes to the task of shedding weight, nothing is as important as staying on your food plan… and you are ROCKING on that front!

Wow, I've really neglected this space. Not intentional, just busy I guess.

This morning I had blood work done and I have an appointment on October 28th for a follow-up. This should be interesting. I'm concerned that my thyroid isn't functioning as it should, and I am going to a clinic that has a reputation for being aggressive in treating thyroid issues in women in their 40s.

I have signed up for a 5k November 24 and a half marathon in February. Commitment! Deadlines! Something to work toward!

I'm still sitting at a weight that fluctuates between 200.5 and 202. I am still not feeling the motivation I need to go to a fat-fast level of low carb and calories to lose. Just having a hard time (it is all in my head of course). Happy to be maintaining, though. Proud I'm not back-sliding.

Busy days ahead, as I guess they all will be until Christmas. It's here before I know it each year.

Wow, congratualtions on signing up for the 5K and the half marathon! That is great. I did a half marathon way back in 1999 and it ain't easy but you can do it. Your weight will start moving again -- don't worry.

Just checking in to say I'm sorry I've not been checking in.

I'm still holding strong at 202. Well, varying between 201-202. I have a doctor's appointment on Monday to get the results from my blood work.

My grandmother passed away Saturday morning, and the funeral service will be this Sunday. Hard on everyone, of course, but she is no longer in pain and for that we must be grateful.

I went Cub Scout camping over the weekend and I was not given great eating options. I did okay (I guess) since I'm still maintaining but it has been hard to find the resolve to do anything other than maintain.

I appreciate y'all checking on me. I really mean that.

Thank you so much. Her memorial service is tomorrow. Hard on my father and his siblings, but today we had a nice moment: we were in the A Club room for former players, and a woman came up to Daddy and told him that Granny had been her favorite teacher, and how much she had meant to her as a student. It was very touching for my father to hear.

Y'all, thank you so much. The service was lovely - lots of laughter through tears, so the best kind of service.

This morning, I had the most incredible doctor's visit. I was actually with the nurse practitioner, because I didn't want to spend the money for the doc At first, I was annoyed, because I didn't see her until 10:40 and my appointment was at 10. That is such a pet peeve of mine. But, once I got in, we started talking about my general health and my way of eating and the results of my lab work. My appointment ended at 1:30! Nearly 3 solid hours with her. It was incredible.

So, what did we find? That I'm incredibly healthy, except where I am not. My kidneys, liver, blood - all good. My b12 is woefully low, as is my vitamin d and magnesium. And my thyroid is allllll out of whack. So, some things were great! And other things are fixable. The result should be that I feel better over all. I should feel more rested. And i should see weight loss without having to kill myself going down to 800 calories to lose. They are starting me with a low-dose and will step me up over the next 90 days.

And she is allllll about a low carb way or eating. We talked about coconut oil and the myths of fat. We talked about changing the way you eat versus being on a diet. It was, honestly, the most amazing way to spend my morning. I feel so good about how I can lose the next 30-40 pounds I want to lose, and about my overall health.

I'm starting on thyroid meds - Armour at 30 mgs daily. And weekly b12 shots, and vitamin d supplements. I'm already taking magnesium so I will increase that.

I can't even explain how good it is to hear that is isn't "my fault." I'm doing everything right - but my body needs a boost. It is such a relief.

200.2 - moving back toward onederland!

It's my tom and frankly it explains a thing or two - starting with the giant zit on my chin. Hey, I'm only 44 so period-related acne is just awesome! Go me!

It's Halloween and it will be pouring down rain all day. My poor kiddo. Hopefully I can work with a few friends and we can give our boys a good Halloween memory.

Yesterday I bought "grilling cheese" at Publix. Wow!!! This is so yummy - a new treat for me for sure. Easy to make, and ooey gooey yummy! No carbs! I had that and a lettuce wedge for dinner last night - perfect.

Today it is Halloween but I'm in Christmas mode. I can't believe how close the holidays are! I'm painting about 200 mugs, plates and ornaments from a preschool. While I paint I concentrate on having good posture and sitting up straight. I swear that helps me feel better!

Honey, I just turned 50 and I still get that one TOM zit on either my chin or my right cheek. It never ends. Now they just come with wrinkles and crows feet!

Grilling cheese sounds delicious. I am going to have to find some. Hope you guys have a great Halloween. Maybe it will stop raining.
