We've enjoyed the cheesecakes so much that I'm making a cheesecake for Thanksgiving. I hope it's good.

My day was good and op, I baked country pork ribs overnight and steamed cabbage wedges for today.

Thank you, I hope it's good, it's the first cheesecake I've ever made. I have fresh strawberries and glaze to go on it. I think my boys will be impressed.

Everything is ready set go here, I have my lowcarb cornbread made for my dresssing and I'm planning to stay on program.

Thank you ladies for your wishes and stopping by!

Our Thanksgiving went off without a hitch. We had a visitor and that was nice to share a meal. I stayed op with my stuffing, etc. After everyone ate and fixed plates to go, I threw everything away that wasn't lowcarb that I'd cooked for dh and Son.

I continue to be satisfied with no raging hunger but I'm not tempting fate. At times my mind drifts to sugar plums lol, but I don't dare go there because I don't want to mess up this peace.

The cheesecake was good and I made dh another one yesterday.

Most of the family has been or is on vacation so our schedules are off again and will be for another week and half.

I weighed today and I haven't lost nor gained, guess I've hit a set point but that's okay, if I can make it though the holidays with no gains I'm okay with that.

I hope everyone had a great holiday and are circling the wagons in preparation for the rest of the year!

Everything is fine with me. I hope it is with you too!

Dh is on vacation so our schedules are messed up again but it's fun that way. Up late watching movies, sleeping late. I'll won't be on much this week.

I've added in greek yogurt and I'm enjoying that. Only 1/4th of a cup twice a day with a T hwc mixed it. I'm not adding in sweetner, just eating it with ground flax. Nothing negative yet.

I've been all over the internet reading about yogurt making, I may try doing some, I love trying new recipes like that; however, I do like the Cabot's really well.

Sneaking back in,

With dh being on vacation, we are having breakfast at lunch usually and it's always bacon or sausage and eggs. After reading threads of ppl getting reactions from eating eggs so often, I decided to fix lunch not breakfast.

It started out googling for a cheeseburger pie but everything has eggs in it, so....

This is my own cheeseburger pie or crack pie in a bowl, whichever..

1 lb ground chuck
1/2 chopped onion
1/2 c tomato sauce
shredded cabbage, about 3 cups
3 T mayo
2 T hwc
2 T mustard
4 slices american cheese

I cooked the hamburger and onion, added in the tomato sauce and cabbage and steamed it done, then added the rest, toped with the cheese and covered stovetop.

I served it with chopped tomatoes and hamburger pickle slices. I usually never eat pickles on a cheeseburger but they were so good with this. I think next time I'll leave out the mayo.

Recipe sounds great! As for yogurt, I'm interested in hearing about your home-made version! I stay away from Greek yogurt because I can't control the portions, but I used to love eating it with oat bran!

Good morning!

Lots to share today.

I made the yogurt and it is so good. I used Dana Carpender's recipe using powdered milk and you don't have to scald it so that eliminates a step and a dirty pan, you know me, all about easy. I used a small cooler and warm water to culture it, 8 hours. She says to add walnuts, sour cream or something fat with it. I strained it really good and it made 1 cup out of a quart.

I found another recipe which takes it to a European level that uses her recipe but also uses 1/3 c powdered butter, yum, and I have some so that will be my next recipe. Her take on carbs in yogurt is interesting and I do think she has her ducks in a row.

Last week I made Mr scalestepper some chicken fried steak coated with crushed pork rinds and almond flour, it was good. I don't have any of the Atkins flour blends yet. I read a thread, I think Barbo's where she did this but she used 1/2 carbalous --sp? , 1/2 pork rinds, I need some of that. My gravy was just reduced hwc. Definitely a keeper also for chicken breast and pork.

Last night was our splurge night, this makes the 3rd time we've eaten it in almost 4 months. We had Schwan's giant fried shrimp, 5 for me, omg! So thankful this hasn't thrown me off yet.

So, it's boiled eggs and bacon in a few minutes

Scalestepper, you are such a great cook! The yogurt and the cheeseburger pie recipe sound so good. I love how your call your husband "Mr. Scalestepper" -- that is so adorable. And, yum -- I LOVE fried shrimp! That is a good indulgence!

Hey for a good flour substitute, you might want to try CarbQuik.

I'm back, we took advantage of dh's time off and enjoyed a little get away. ...time away is niice...

I was good to myself and stayed on program, there are lots of eggs, bacon, grilled chicken and bunless burgers, steaks, etc out there. I took my snacks along.

Good morning! Thanks GG and Christine!

I was rewarded with a 2 lb loss this morning, woohoo, I get to change my stats and it's been a long time coming. That makes me approx 18 1/2 lbs down. Happy holidays to me! Woohoo.

I am still so thankful for the change in my woe, I'm still op and satisfied.

I've been busy this week, I went for lab work Thursday, yesterday out for a haircut and fun with my friends. My yearly Dr. appointment is next Thursday, I will have been on Atkins over 5 months so I'm hoping for good numbers.

Mister is oot this weekend, things have so changed with me. No longer do I even think of planning a secret carb feast, no more closet eating for me. My mind has become so uncluttered.

I had my annual checkup today and all my bloodwork was excellent. My Dr just couldn't say enough about the improvements/weight loss and my woe.

Merry Christmas to all!

What a wonderful Christmas gift I've given myself! Almost 6 months on this woe, satisfied and happy beyond words.

We're on the home stretch now. The days have been good for me, cooking low carb as usual and not overeating. Thank you good Lord.

Family coming today and the menu is stew as everyone is tired of holiday foods. I will be easily able to eat around the potatoes and corn in it and I have a sf cheesecake made, plenty safe stuff for me.

Good morning!

I log on today being so thankful for all my blessings.

I feel so much better with my weight loss and still enjoy this woe.

Sometimes I'm amazed at how easy it can be, just stay strong with the low carbs and hunger/binge can be controled.

I will share some of my conversation with my Dr. when I had my physical a week or so back. He is so in favor of Atkins, very supportive. I told him I missed a few things like maybe a 1/2 of beans, did he think it would be wise to add some in and his answer was...."I have had many patients do well with Atkins, but most begin gaining weight back when they add things back in. I'd rather every 3 weeks or so that you pick a day and eat something you'd really like even if it's beans. My patients who maintain seem to do better doing this." I thought that was interesting as that's what Mr and I have done a couple times, we had fried shrimp. Just his experience and thought I'd share.

I overate of cream cheese and cheese during the holidays but didn't get into the refined/white sharky ones. I'm so glad I don't have to restart tomorrow, just keep on keeping on.

I don't have new resolutions but do hope I can continue being so satisfied.

Good morning and thank you GGirl!

New Years Eve was good for me, a rotel cheese dip and 0 carb salami, bbq little smokies with sf grape jelly and ss bbq sauce. Got to watch the ball fall another year.

I am so thankful for the new year. I ordered the Atkins 120 day Journal and just love it, I wish I had been using one all these months. I like to journal.

I put the cheese and sour cream back into their limited space in my woe yesterday. They sure served a good purpose thought the holiday but not it's down to business.

Our new year dinner was simple and traditional, blackeyed peas, salt pork, steamed cabbage, almond meal cornbread, and I baked pork chops. I only ate 2 T of the peas which was 4 carbs but can say I DID eat some, lol. DS enjoyed the meal with me and MR and he liked the cornbread, was in awe of it as a matter of fact. My net carbs for the day, 12.3.

I'm glad we didn't fall off the cliff but now we can listen to how things are screwed up because we didn't. Politics, ugh. I fell asleep early, thank you Lord for the peace I have with food.

I'd love to Gail. I googled and found the recipes online.

The first is the original and the second is one that was improved upon for more moistness. I sometimes substitute 1/4 c of corn bran for 1/4 c of the almond meal. I used the second recipe yesterday. After baking, I broil it a minute or so to slightly brown the top. Sliced into 16 pieces, its 1 carb per sq.



Low carb cornbread

1 c almond flour
2 T melted butter
2 large eggs

1 In a small bowl, mix wet ingredients, then work in the dry ingredients.
2 Pour into a greased microwave-safe container (about 6-inch square, or thereabouts).
3 Microwave for 2 minutes at power level 8.
4 Cut into 8 slices, about 1 carb per slice.
5 Serve with butter

1 cup almond flour
1-2 green onions, chopped
3/4 tsp. baking powder
1/4 tsp. salt
2 large eggs
2 tbsp. butter
1/4 cup sour cream
Preheat oven to 350°F.

In a bowl, mix together wet ingredients and green onions, then add dry ingredients and mix again.

Pour into greased baking dish (I use an 8? square pan), then bake for 20 minutes or until edges begin to brown.

Tip: If you’re short on time or patience, you can bake this in a microwave in 5-6 minutes.

Serve warm.
