Made an AWESOME casserole today- man it is soooo good!
Super easy to make, common ingredients, each serving is about 1 cup- VERY filling and right about at my 300 cal per meal goal- woo! Cauliflower Casserole 2 Smallish Fresh Heads Cauliflower (approx. 8 cups...6-7 cups after cooking) 2 T Unsalted Butter 4 oz. Cream Cheese 8 oz. Sharp Cheddar, grated 12 0z. Bacon, chopped, cooked & drained (becomes about 3 oz. cooked) 2 Small Green Onions, chopped (about 1 oz.) 1 Clove Garlic, chopped or pressed Seasoned Salt Pepper Water In large microwavable bowl, add all the cauliflower florets. Add a few T of water and nuke for 5 mins at a time until soft. Keep stirring in between. (This took me about 5 rounds and I added a little more water after 20 mins). Meanwhile, cook the chopped bacon until crispy. Add garlic to bacon grease and lightly brown. Drain off oil. When the cauliflower is very soft, mash with potato masher until not too chunky. Add butter and cream cheese to hot mix and blend until smooth. Add most of the cheese, green onions, and bacon. Season to taste w/ salt & pepper. Mix well. Put in casserole dish, smooth top and sprinkle remaining cheese. Bake 350 for 20 mins until bubbly. Makes 8 Serving- about 1 Cup ea. Stats for whole recipe (by Fit Day): Cals: 2445 Fat: 199.2 Protein: 115.3 Carbs: 51.6 Fiber: 26.7 Net Carbs: 24.9 Stats per serving: Cals: 305.6 Fat: 24.9 (73%) Protein: 14.4 Carbs: 6.5 Fiber: 3.3 Net Carbs: 3.2 |

Oh that does sound good!!
I plan on doing the normal-ish protocol with HCG till I get fed up with it or don't lose any more (I started adding a little fat cos my body was telling me most emphatically that I needed it)... then, not sure what I'll do... maybe JUDDD or maybe will try this. But I need to give the "normal" protocol a fair shake. These drops are not cheap!! lol |

I made a mistake lastnight when making my peanut butter balls but came out with a pretty good recipie afterall - thought I'd share. Really yum and great source of fiber.
Peanut butter muffins 8 oz of cream cheese 1/2 cup of sugar free peanut butter 1/2 cup of granulated Splenda 1/4 cup of golden flax seed (grounded into flour like consistency) 2 eggs 1/2 tsp of vanilla Soften cream cheese about 40 seconds in microwave. Add other ingredients. Beat with mixer till smooth. Pour into a greased (I use Pam spray) 24 mini muffin pan. Bake at 325 for 20 - 23 mins. Refridgerate or freeze I'm sure you could use a regular sized muffin pan but I would bake at 325 for a little longer. Haven't tried it yet... Last edited by AlieKatt; 10-19-2012 at 05:19 AM.. |

I already made them. YUMMY! Moist little bites of peanut buttery goodness!
The recipe made 24 perfect mini muffins- awesome with coffee. I've already had 2. I used Trader Joes Valencia PB w/ roasted flaxseeds and I didn't have golden flaxmeal so I used regular. What is the difference between golden & regular anyway? Anyway- They are VERY yummy! THANK YOU! ![]() On Thursday I lost .8 thank goodness but yesterday I isn't lose anything and today I haven't so far either. I ate about 4 bites of my daughter's Chinese food last night and boy was that a mistake lol. I was SO thirsty all night after that I knew already I did myself in lol. I'm happy I lost recently though and in still hanging on waiting for my body to have TOM which should come in about 100 years at this pace LOL

Hi all, I have lost another 2 pounds in the last few days! I noticed I lose faster on weekends when away from the stress of the office. Note to self: take more time off So, to put things into perspective. I am at the weight I got married at. I was a fat bride. I have plenty more to lose. It was not my intention to be an overweight bride, in fact I was determined not to be but with the stress of arranging it and family conflicts on both sides of the family, I ate myself down the isle. I can't bare to look at my wedding pics. Good news is I am at a much much better place in life. Wishing you all whooshes this morning! |

Poopie... up 0.6 lbs today (I am on HCG but a bit "rogue" with it). The funny thing is, almost everyone I know is up a little today... I am blaming it on "something in the air" and not stressing about it. I hope you folks are all exceptions to the Monday blip!!

I keep losing! SOOOOOOOOOOO Happy! Down another .8 today. I doubt I will lose much tomorrow because I have been under a tremendous amount of stress today. I can feel that cortisol looking for a place to dump.

I am also a torturously slow loser on HCG. I found if I varied my calories say 500, 700, 550, 650 to trick my body I would lose better. I also had great luck with fat fast to either break a stall or get things moving. I also felt so much better with the addition of fat.
I agree about prior dieting being an issue to lack luster success. I think the fact that I have done so much low carbing keeps my NK from being much more than a maintenance plan. It seems like you need to shake things up to get your body moving. With that said I probably should just go for a protocol round, but I just don’t have the heart for it right now. I’m going to try the roguish of rogue rounds. I’m going to try NK with HCG. I started taking my pellets today. I’m going to load by just eating as much protein and fat as I want without regard to calories. I think I might throw a few carbs in to shake things up, but nothing excessive. Although I do find that I really don’t want as many calories on my loading days as I think, and I’m not going to force it at all. Then Friday I’m going to strictly journal keeping calories between 1000 and 1500 and fat between 80-87.

I'm curious to see how that works for you. I'm a little scared to go off protocol right now because I just started and have so much to lose ![]() The weight loss just seems to be slowing down pretty quick this round and I miss the taste of other foods lol |
