Okay ladies! I just made some cream cheese clouds. It may be possible, but I think they're SO rich that I will only be able to eat them once in a while. I made 34 of them. I have no idea how I'm going to eat them all... anyone want some?

they are DELICIOUS. I licked the beater from my mixer and that was enough. I think next time I might not use as much splenda. I doubled the batch so I was supposed to use 1 1/2 cups of granular splenda, but I think I would only use 1 cup next time.
Not all of them are the same size, but I worked it out and each one comes to about 90 calories, so I could have three for breakfast and I'd be set for quite a while. |

yes, yes you do. do you have the recipes? I made "Linda's Cream Cheese Clouds"
You could search it. I'm not sure if I can link it. Like I said, I doubled the recipe because I wanted enough for a while but also i've found that my kitchenaid stand mixer doesn't work so well when there isn't much substance in the bowl. I'd use only 1 cup of granulated splenda. Oh, and I also used 1.5 TSP of vanilla. love vanilla! Edit: OH. MY. GOSH!!!!!!!!!!! I just snuck the smallest one out of the freezer to see if they were cold yet. I think I just died and went to heaven. LOL!!!! SO GOOD!!!!!!!

Menu for today
3 coffees with HWC (I need to start measuring that) 6-7 pieces of bacon 3 eggs 1 cream cheese cloud 1278 calories fat - 115 - 86% YAY!!!!! carbs - 5 - 2% protein - 37 - 12% I probably could have easily just had 4 pieces of bacon, but my OCD was in high gear and I didn't want to put 3 pieces back in the fridge... ![]() |

Finally able to get some food; stores are slow in getting everthing but I was able to get a few low carb things to hold me over until they are stocked again. Trying to get back on track; hurricane eating did knock me out of ketosis but that's ok. Heat is unbearable and making my asthma act up terribly but at least we have our power. Some people are STILL suffering.
Menu for the day: B= 2 eggs; 1 T. heavy cream; 1 T. butter; 4 slices bacon L= none D= hamburger patty (80/20); 1 slice cheese; 2 lettuce leaves; 2 T. mayo S= 1 oz. almonds (I need to get macademia nuts instead!! Need to wait until everything is up and running. Some stores still don't have power.) 1284 calories; Fat: 109.56 g (77%); Protein: 54.07 g (19%); Carbs: 12.08 total g (4%); Sodium intake: 1618 mg PS: Feels great that I am back on track and our lives are getting back to normal PSS: Just can't seem to get it my fat count over 80%

Okay so for my entire batch of 34 clouds...
Butter 1628 cals 184g fat Cream Cheese 1600 cals 144g fat So they are about 91.5% fat and each cloud would have almost 10 grams of fat. I hope my math was right. I'm leaving out the splenda. The carbs for each one is negligible. About 1 each for the granulated, almost nothing for the liquid splenda. Edit: I feel kinda weird. I feel like I need to eat, almost like my blood sugar is low, but my stomach doesn't feel hungry. It's very weird. I'm not even sure what to do about it. Edit 2: had a small bowl of canned chicken and mayo with an avocado. Feel way better. Odd craving for whip cream, but I will walk away LOL Last edited by manders; 09-03-2012 at 09:02 PM.. |

Then I took his little honey treats which look like chocolate chips but they're honey, and I mashed them up into soft mush like a paste and he ate that too. I feel horrible. My poor thing was starving because he couldn't eat. It must be because he's getting older and it's hurting his mouth/teeth. Looks like I'm going to have to hand feed him from now on. Better get some baby food from the store tomorrow. Gotta fatten him back up! |

Morning! Its 5:00 am and weigh in time. Down another 1.2 pounds!!!!!!!!!!! I can't frick'in believe it!! My WORK clothes are starting to hang off me but I don't want to buy new ones- not yet.

Thanks Alie! I found this thread yesterday. I went through and calculated all the percentages and saw that my fat % is around 70%, my carbs are between 2 and 5 % and my protein is between 25 and 30 %. So I've got to figure out how to get the protein % lower now!!

Well, I got on the scale with the new batteries in it and still got diff results....then I changed the batteries in the display unit and It looks now that I lost about 1+lbs, but still not back to virgin weight.....
So a loss is a loss right?????? |
