Squeeze all of the moisture out of the meat.
Mix all of the ingredients and shape in 4 patties.
I used my hands to shape each pile into a patty.
Cover with plastic wrap and chill at least 1 hour.
Heat the oil in a skillet over medium heat.
Fry the patties 4-5 minutes per side, flipping carefully, until
golden brown on each side.

Makes 2-4 servings
Can be frozen

*Original recipe is BRUCE'S POOR MAN'S CRAB CAKES* I just adapted it to suit my needs/tastes, but giving credit where credit is due.

This works for any canned meat. I've used salmon, tuna and chicken.
sounds good Thanks for sharing!

Friday menu:

B- EAS low carb chocolate shake
S- coffee
L-chicken with caramelized onions and salad

I skipped dinner, I know that's not good. It's not something I do often. Sometimes I'll have just a snack, but last night I had a bad headache and just lay on the sofa watching TV and napping.

Today is Saturday. YAY!!!

I didn't sleep in because I went to sleep with the chickens last night. Super early.

Have some weekend goals:

- Clean my room (it's a pig sty, not really dirty, but so messy I put a teen to shame)
- Clean my makeup brushes
- try a yoga dvd that's been sitting around for months
- spend some quality time with my kids ( hadn't seen them since Sunday - they were at my parents' house )
- try a new recipe

August goals:

- Lose 5 pounds/get out of the 160s.
- Get over my aversion to peach (associated with dumb event in the past, but I look good in this color)
- Face my fear of looking at my reflection (huge self loathing problem) will purchase a full length mirror next paycheck and actually stand in front of it. *gulp*
- Get over my pale leg complex - wear a pair of shorts in public (only wear them at home)

I know some of you lurkers are probably thinking what? such silly things. And you know what? They probably are, that's why I am confronting these silly things that bring me down. I have to build up my self esteem. I have some sabotagers (sp?) around me, but I'm my WORST enemy. I won't let them get me down or let myself get into that funk anymore.

All part of the process of making myself more fabulous.

You got this lady! August will be a fabulous month of change and conquering. I am totally my own worst critic, and honestly so hard on myself that I should be guilty of abuse. Sounds silly, but when you think of someone saying things to another the way I sometimes talk to myself.... no bueno. I have really tried working on this the last few months, trying to take to heart the many compliments my family and friends heap upon me and take them for what they are. I find that being able to accept and listen, it's really helping me stay on track and helping with my self affirmations daily. You are so worth the work!

Have a great day! ♥

lol Monet' - don't think the spam chips was me, but the idea of them sound ok.

Today - I cleaned my room, cleaned my makeup brushes and organized all my makeup. Let's see how long that lasts.

Went to see Step Up Revolution 3D with Mario yesterday, that boy loves those movies. Didn't get to spend too much one on one time with Lee since she has TOM and wasn't feeling all that great. We did talk on the way home from her BF's, but I wanted to do something. That's ok though we spend tons of time together.

I did NOT like the yoga DVD, she used blocks which I don't have and I felt it was tooo slow. Maybe I was too agitated or she annoyed me but I couldn't get through it. I'm willing to buy another DVD before I give up on yoga totally. I KNOW it's slow, I can normally deal with that, don't know what happened this time.

As for my 5th goal, I made cheese danishes with the oopsie rolls and pork chops in alfredo sauce.

Menu:

Coffee and scrambled eggs with swiss cheese
cheese danish w/ tea
pork chops in alfredo sauce and zoodles

Saw Step Up Revolution last weekend. I love those movies! Actually re-watched the first two this weekend for the billionth time. .....Channing Tatum...

Sorry about the yoga dvd. I have one yoga one, it's a Bob Harper one. It's kinda a ramped up version of yoga, not alot of "slowness" to it, lots of loud music. It is HARD. My DD16 loves it and uses it several times a week. Hopefully you'll find one that works for you!

I have debated about oopsies...are they tasty?

I subscribe to the Mom Generations blog and Audrey - one of the 40-something daughters that helps write it - highly recommended the new Jergens Natural Glow Express moisturizer. I'm not a fan of self-tanners, I normally just like to lay by the pool, but I tried it and my legs were darker the very next morning! That stuff rocks!

Thanks for the rec, Heidi. I'm always afraid of streaking with self tanners so that's why I haven't used any.

Dani - regarding the oopsies, um it's no french bread, but it serves its purpose. I find them too light to use as a bun. I usually make them sweet. Last year I made the tiramisu (from Cleo's site) and it was awesome. Now that I've made them danishlike, I can make them more often.

Menu:

Coffee and danishoopsie
pork in alfredo sauce
jr bacon cheeseburger - no bun (I got a salad a Wendy's but they didn't give me dressing and gave me a side salad instead of caeser. CAN NOT do it without dressing. )
Eggs
cream cheese muffin

No veggies for me today.

Today my baby started her first day of school. She's a senior. I'm still in denial.

It's been a little tough getting up earlier and the school routine will take a few days to get used to again.

Waking up at 4:30 is the pits. Makes a lonnnng day.

I went to the track yesterday anyway. I was tired and cranky, but decided to go anyway because I know some days i won't be able to make it. I do not like to exercise (at the moment) and walking/jogging is tolerable for now. Make it'll grow on me.

I left work early on Friday to spend it at the mall with my baby.

I had coffee and a piece of cheese

Late lunch/early dinner - fried pork and coleslaw from the foodcourt

I know the coleslaw had sugar and carrots, but I went with it instead of potato salad

Went to bed early

Today I spent the day at a car wash fund raising for Lee's class.

The kids washed over 50 vehicles, we sold hamburgers, hot dogs and chicken kebobs, soda, water, they even collected some $ at the lights. We raised about $1500 roughly. ( the class has only 120 students)

I only had coffee in the morning.

2 kebobs and a bunch of water bottles

flank steak and broccoli with bacon bits and garlic

I'm around.

So much to say, but my thoughts are all scrambled.

I had the day off since there was a Tropical Storm coming. I went grocery shopping and cooked up some stuff. The storm didn't come. yay!

cream cheese muffins
cream cheese clouds
flaxseed muffins
deep dish pizza
brewed mint green tea and made a slushie

I'm up in weight due to being off plan for 2 days. Was at my cousin's wake and funeral on Sunday and Monday. I wasn't prepared to stay as long as I did and I didn't pack a thing so ate what was available. Eh, onward and upward.

Hey Monet!

I use the one with the chicken and cheese as the dough. Love it! Great taste, easy to make and filling.

One of my friends is moving to Florida. We went out for her last hurrah to the Bacardi Distillery and Longhorn's. I didn't go the low carb route, but I did get an idea on how to do so for next time we go out.

Remaining girls all agreed, no more drinks until November. Let's see if we make it.

Needless to say, I won't be making my August goal. At least not the weight one, the others I did/am doing well on. I'll get back to that on Saturday.

Today I started Slim in 6.

And I tried a new recipe: Cheesecake pudding

I haven't eaten it since it's so late at night, but I did lick the spoon. Tastes like cream cheese muffins, but with the consistency of pudding. I'm sure I'll love it.

Cream cheese, sweetener, HWC and sour cream, what's not to love, right?
