We watched the Superbowl yesterday and I made a lot of snacky foods, but ate completely on plan - far too much, but on plan so I'm happy.
I made an oopsie coofe cake which was soo good, then had wings, baked mozzarella cheese sticks w/ sauce, parmesan crusted chicken, and roasted asparagus. Then for a sweet treat, I made chocolate mousse and added walnuts, then popped it in the freezer for a mock ice cream. I probably at 2100 caloried yesterday, but I stayed on plan. |

It was good. I forget at times, when I am whining and fretting about what I can't have and can't eat on this diet, what I CAN have. I can have delicious, satisfying food with no guilt that is actually good for me.

So, I am completely embarassed. I was walking down the (carpeted) hall at work to fill up my trusty water bottle from the cooler in the (tiled) breakroom. Apparently someone had used a large amount of (greasy) spot cleaner on the carpet outside the breakroom. Greasy floors and tile do NOT mix and I landed feet up by my head!
Not hurt, although I feel a little sore now. Mostly embarrassed. |

I am old. I am home today because I CAN'T MOVE! Geez, I am so stiff and sore, just from falling down. Not bad enough to go to the dr, but I am shuffling around like an old woman.

I think because I used a liquid sweetener rather than granular in the glaze and it was too runny. Next time, I will leave it off. Really tastes like a coffee cake! The mousse is super easy. I take a cup of heavy cream, cocoa powder, a tbsp of xylitol, and a tbsp of Torani SF Chocolate syrup and whip until fluffy. Then I fold in some walnuts, divide into 3 bowl and pop into the freezer. In about 20 minutes, I have something that really fills my need for ice cream. (This amount makes enough for K, P, and me.) |

So because in my house, TOM hits for three people at once, I made the almond flour fudge cake yesterday. OMG it's so good - one of the best cakes I've eaten never mind the lower carbs!

Lord have Mercy...DH freaks at the idea of us 3 girls dealing with TOM all at once.. I pointed out that if he was smart he'd wish for it cause otherwise it is just one long endless month of repeated bad moods, hormonal outbursts, and grumpy comments..kinda like Groundhog Day (ala Bill Murray)

So yesterday I drug (dragged?) out the DVD that Angela gave me of 10 in 10 Callanetics, and I convinced P to do it with me. Geez, it was harder than I thought it would be and I had a hard time with several of the movements. Hard on my knees too, but I did enjoy the pace. With most exercise, I feel like I am going to die because of my asthma, but this was good. Anyone else done or doing Callanetics? I think I'm going to do the 10 hours recommended and then regroup. So - 1/10 Hours Callenetics done! |

And today - 2/10 hours done!
I really feel it today. My legs and back are super sore. I think tonight migth be a treadmill night. I want so much to really get healthy this year. I'm so tired of feeling yukky and tired all the time, so I am trying to be really dedicated to the choices I'm making. It's funny, several of the women I work with are doing WW right now and we eat lunch at the same time. I'm there with my chicken salad over lettuce with some cheese cubes and almonds, and they are all clicking away on their phones to count how many points they have for lunch. I laugh to myself looking at the carefully counted out Cheetos and low fat, sugar free chemically laden things they eat. Different strokes, but all three of them look worried about their food every time we eat lunch. I'm not. And this is why I need to stick with it! |

Last night I cheated. P's father sent her 3 large homemade chocolate chip cookies and we each had one.
Today, back on track! I didn't work out last night either as I was still sore but will be tonight. I really think I have a problem with gluten. I try to avoid it whenever possible, but did eat that cookie last night. Today I woke up with an itchy rash on my hands which is one of the signs of gluten intolerance. It's happened before, but this is my first "test" so to speak. I feel better with no gluten anyway - less pain, less sinus problems, less brain fog. Who needs gluten anyway! |
