Coconut Drops


For a festive touch, color the coconut with food coloring before you mix with cream cheese. Place in small paper cups in a gift box of sugarless candies for someone you love.

Servings: 90 (Serving = 1 piece)

Ingredients

1 cup light Philadelphia cream cheese
2 cups shredded coconut
Directions
1. Mix cream cheese and coconut. Drop by 1" diameter spoonfuls onto waxed paper. Refrigerate.
Nutritional Information Per Serving
Calories: 19 ; Protein: 0.29 g ; Fat: 1.8 g ; Sodium: 8.2 mg;
Cholesterol: 2.8 mg ; Carbohydrates: 0.5 g
Exchanges: Free

Hmmm....so many possibilities I see here

Is that unsweetened coconut?? I would have to have some sweet yet sugar free in these :P

Cauliflower Tortillas

Ingredients:

1 medium head of cauliflower (all the florets)
3 eggs OR 4 egg whites
^ yup, that’s it!

Instructions:

Preheat oven to 375 degrees
Use a food processor, blender, or hand grater to grate the cauliflower into a crumb-like texture
Microwave the cauliflower for 5 minutes, stirring a little halfway through
[If you don’t want to use a microwave for Step 3] Move the grated cauliflower to a pan and add 1/4 cup of water. Cover the pan and steam over medium-high heat for about 8-10 minutes. Just make sure to stir half-way through to avoid the cauliflower from burning. Keep in mind that you will have a bit more water to squeeze out.
Place the now-cooked cauliflower in a kitchen towel, that is on top of a sieve, on a bowl . Make sure to drain as much excess water as possible.. there is surprisingly A LOT of water in cauliflower
Mix the drained cauliflower and eggs until smooth
Place the mixture on a baking sheet into circles at about 1/4” thick.
Bake for 10 minutes. Flip. Bake for another 5-7 minutes. This is important to dry out the tortilla
Move the tortillas to cooling rack to cool, so the bottom does not become soggy.

Savory Cheese Chive Waffles

1 cup processed, raw cauliflower (should resemble coarse crumbs)
1 cup processed mozzarella shredded cheese
1/3 cup Parmesan cheese/shredded
2 eggs
1 tsp garlic powder
1 tsp onion powder
1/2 tsp pepper
1 Tbsp chives
fresh parsley, optional
sun-dried tomatoes, optional
Heat waffle maker until ready. Add scant 1/4 cups filled with batter on the griddle. Set the timer for 4-6 minutes, peeking after minute four. If the waffle maker sticks, let cook slightly longer. Remove once cooked. allow to cool on a plate. Refrigerate remaining.
Makes 6 waffles.
Nutritional Information per waffle: Calories: 135, Carbohydrates: 3g, Fiber: .8g, Net Carbohydrates: 2.2g, Protein: 11.7g, Fat: 8.5g

1 head of cauliflower
1/2 stick butter (melted)
6 strips of crumbled bacon
3 Tbs sour cream
1/4 cup heavy whipping cream
Salt and pepper to taste
1 large egg
Cheese (optional topping)
Sour cream (optional topping)

Break up the cauliflower and place in a large pot of water. Cook on high heat to a boil for 20-30 minutes until very soft. When it reaches this consistency, put out paper towels across the counter and carefully pull the cauliflower out individually on the paper towels. Take more paper towels and place on top of the cauliflower. Gently press down to soak up the excess water in the cauliflower.

Grab a big bowl and place the cauliflower you just dabbed with the paper towels in it. Using a potato masher, thoroughly mash up the cauliflower until it is smooth. Add butter, bacon, sour cream, whipping cream, salt and pepper, and egg. Whip until well-blended.

Heat up a non-stick skillet to medium high, spray cooking spray or use butter to grease the bottom of the pan, and scoop the cauliflower mixture into the skillet. Cook the cauliflower patties for couple of minutes constantly scraping the sides. Gently flip and place cheese on top cooking for two more minutes.


These are soooo good

Soooo....some things never change! I just spent an hour or so, scouring the boards and much to my surprise, it seems like the old gang is still here! Lurked a little through a couple journals, remembering once apon a time ago, I couldn't go through a whole day without posting..

Not much has changed, I am still LC, will be for life.. Only difference now is, I dont count carbs, unless my pants get a little snug feeling, then I go back to the basics for a week or so.. I know what to eat, and what not to eat.. I have made a lifetime commitment, actually I have no choice, I still look at food and it makes me gain.. When someone asks me if I want a piece of cake etc, I just tell them I will just sit on it cause it goes to my ass anyways..

I stay within 10 pounds of my goal weight, and if I even get close to that on the scale, I start to hyperventilate It was not a easy road, and this girl aint walking down it again...

My menu's are pretty basic, I always was a creature of habit...Eating the same basic things each and every day.. I found if I strayed from the norm, I went into panic mode.. My day consists of very high fat (it keeps me full) and low protein.. Veggys I say are open for me.. Meaning I eat whatever veggy I want, in "controlled" portions.. Key word: Controlled... Thats a new word I have learned
