Oh my I feel like I came home,

Coconut Drops


For a festive touch, color the coconut with food coloring before you mix with cream cheese. Place in small paper cups in a gift box of sugarless candies for someone you love.

Servings: 90 (Serving = 1 piece)

Ingredients

1 cup light Philadelphia cream cheese
2 cups shredded coconut
Directions
1. Mix cream cheese and coconut. Drop by 1" diameter spoonfuls onto waxed paper. Refrigerate.
Nutritional Information Per Serving
Calories: 19 ; Protein: 0.29 g ; Fat: 1.8 g ; Sodium: 8.2 mg;
Cholesterol: 2.8 mg ; Carbohydrates: 0.5 g
Exchanges: Free

Hmmm....so many possibilities I see here

Is that unsweetened coconut?? I would have to have some sweet yet sugar free in these :P

Cauliflower Tortillas

Ingredients:

1 medium head of cauliflower (all the florets)
3 eggs OR 4 egg whites
^ yup, that’s it!

Instructions:

Preheat oven to 375 degrees
Use a food processor, blender, or hand grater to grate the cauliflower into a crumb-like texture
Microwave the cauliflower for 5 minutes, stirring a little halfway through
[If you don’t want to use a microwave for Step 3] Move the grated cauliflower to a pan and add 1/4 cup of water. Cover the pan and steam over medium-high heat for about 8-10 minutes. Just make sure to stir half-way through to avoid the cauliflower from burning. Keep in mind that you will have a bit more water to squeeze out.
Place the now-cooked cauliflower in a kitchen towel, that is on top of a sieve, on a bowl . Make sure to drain as much excess water as possible.. there is surprisingly A LOT of water in cauliflower
Mix the drained cauliflower and eggs until smooth
Place the mixture on a baking sheet into circles at about 1/4” thick.
Bake for 10 minutes. Flip. Bake for another 5-7 minutes. This is important to dry out the tortilla
Move the tortillas to cooling rack to cool, so the bottom does not become soggy.

Savory Cheese Chive Waffles

1 cup processed, raw cauliflower (should resemble coarse crumbs)
1 cup processed mozzarella shredded cheese
1/3 cup Parmesan cheese/shredded
2 eggs
1 tsp garlic powder
1 tsp onion powder
1/2 tsp pepper
1 Tbsp chives
fresh parsley, optional
sun-dried tomatoes, optional
Heat waffle maker until ready. Add scant 1/4 cups filled with batter on the griddle. Set the timer for 4-6 minutes, peeking after minute four. If the waffle maker sticks, let cook slightly longer. Remove once cooked. allow to cool on a plate. Refrigerate remaining.
Makes 6 waffles.
Nutritional Information per waffle: Calories: 135, Carbohydrates: 3g, Fiber: .8g, Net Carbohydrates: 2.2g, Protein: 11.7g, Fat: 8.5g
