You are very welcome. Let me know if you are thinking about anything else. Pinning low carb recipes is a hobby of mine !

If you crave sweets, eat a fat bomb. It has no carbs. I usually feel full after 1, sometimes I need 2. But the coconut oil makes me feel full. Can you have peanut butter ? You can make you a Reese's fat bomb with a layer of natural peanut butter in between your cocoa. I have a bunch of fat bomb recipes pinned, too.

Forgot the biscuit !

From Joan's Low Carb Living:

GRAIN FREE Red Lobster cheese and garlic Biscuits

Grain-Free Red Lobster Biscuits

Modified from the Satisfying Eats Cookbook

Makes about 9 small biscuits or 6 medium biscuits

1 small biscuit: 100 calories, 8 grams of Fat, 1 Net Carb & 3.5 grams of Protein

1/4 cup blanched almond flour (I use Bob's Red Mill)
2 tbsp coconut flour (I use Bob’s Red Mill)
1 tsp baking powder
1/4 tsp garlic powder
1/4 tsp salt
1/4 cup fresh grated Parmesan cheese
1/4 cup heavy cream (or pure sour cream, I use sour cream now)
1 egg, cold
1/2 cup sharp cheddar cheese, grated (around 1 oz)
2 tbsp butter, softened (I used salted)

**Finish with Salted butter & dried or fresh parsley
Directions
Preheat oven to 350 degrees F. In a medium bowl, mix dry ingredients. Then add remaining ingredients and mix with a wooden spoon or spatula until well blended. Use scoop to scoop out dough onto un-greased cookie sheet lined with parchment paper . Space 2-3Grain-Free “White” Dinner Rolls
Serving Size: Makes 12 rolls

From Deliciously Organic:

Grain-Free “White” Dinner Rolls
Serving Size: Makes 12 rolls

Arrowroot is a starch, so these rolls should be eaten in moderation (perfect for a holiday meal).
Adapted from Food Network

Ingredients

For the rolls:

2 cups shredded mozzarella (you can substitute with fontina, mild raw cheddar, or Monterey Jack)

1 cup arrowroot flour
1/2 teaspoon Celtic sea salt
1 teaspoon grain-free baking powder*

1 large egg
3 tablespoons whole milk
Instructions

Preheat oven to 350 degrees F. Place mozzarella, arrowroot flour, sea salt and baking powder in the bowl of a food processor. Process until blended. Add egg and milk and process until mixture forms a dough. Divide the dough into 12 pieces and using your hands, roll into the size of ping pong balls. Place each dough ball on a baking sheet lined with parchment paper and press them slightly so the bottom is just flat (Without this step, when they heat up in the oven they roll around and touch each other). Freeze for 5 minutes. Remove from freezer and bake for 15-18 minutes until just turning golden brown. Best served warm.

*To make your own homemade grain-free baking powder - Combine 1 part baking soda, 2 parts cream of tartar, 2 parts arrowroot flour.

AG - you could also make rolls from oopsie rolls and just had some flavoring like parmesan and spices.

WTG for not gaining back your losses.

I found them at Aldi's. I think they are $4.99 and there are 5 in the box. They are similar to Atkins bars. It's chocolate-caramel-peanut or something like that. It has 3 grams carbs net. There are sugar alcohols in it. The calorie count is pretty low - maybe like 160.

The apples sound yummy but not Atkins approved. That would be good on HCG protocol though!

Happy May 1st!!! I can't believe May is here already. May 14th is my 42nd birthday Sunday is Erin's 5th birthday Lots of celebrating this month for sure.

I started Atkins induction on April 14th at 208 lbs. Today, after 17 days on plan I am at 198.4 lbs. Not too shabby! So my birthday will mark one month exactly on plan. So my goal right now is to simply make it to my birthday staying on induction. So far today I had coffee/hwc/splenda & 1 ounce of sharp cheddar for breakfast. Lunch was a double quarter pounder with cheese minus the bun and ketchup. They serve it in a salad container. I brought it home and added sugar-free low carb ketchup and mayo. It was seriously so yummy and induction friendly. Not sure about dinner but I have some leftover ground meat that I may make LC meatloaf. I'll add HWC, sugar-free low carb ketchup, and ground up pork skins like bread crumbs. Hopefully it will taste good. I also need to make up another couple batches of oopsies. I use them for everything. I use mayo in them but I may try one batch with sour cream today just to taste.

I need to start exercising!!! I know my clothes will fit better and I'll feel better overall. I don't want to be skinny saggy I'd rather feel healthy and strong. I know the scale won't go down as quick but nobody else can see my scale but they can see my flab if I don't start exercising!!!

Hope everyone has a wonderful day!

Scale at 198.0 this morning. I keep forgetting to update my journal because I'm posting daily in another thread.

Menu today:
Breaky: coffee/hwc/splenda
Lunch: oopsie sandwich with egg, cheese, bacon, mayo

Not sure about dinner, maybe burgers or steak?

Anyhoo, I tried to get my mom to take a progress pic for me but it kept coming out blurry. I have a pic from Ricky's sno-ball dance back in January and then one today. Sorry for the blur!!! I think it's a difference of maybe 15 lbs or so?

Happy Sunday! Weight jumped up to 199 this morning. I don't think I'm going to weigh every single day, just once or twice a week. I know my weight can fluctuate terribly day to day depending on circumstances. Yesterday I was on plan so I know everything is cool.

Today is my baby's 5th birthday!!! We are having a party today. I'm making dry rub wings, roast beef, devilled eggs, and off-plan things like mac salad, mac and cheese, buff chicken dip, and italian hoagies. She's so excited! We woke up this morning and said "Mom, I'm 5 now!!!" I just love her!!

I will post some pics from her party tomorrow!!

Hey girl. I'm not currently doing anything except wallowing. My personal life is taking its toll on me right now. I have a few events planned within the next few days and then I plan to restart Atkins. I'm over myself. What are you doing? hcg?

Hi Gracie, I am doing OKAY. My stats are current. I've been struggling a bit with maintenance, but, think I am back on track. It all started going south with our move in Oct/Nov, and then I stopped tracking a few months ago. We are still walking a lot though. Sugar is still MY problem. I am contemplating intuitive eating.
