I understand completely. Get if off NOW, and keep it off. Once you hit 50(I am 51), it is tough to even maintain, much less lose! It's not just my personal experience, but, my observation of spending too much time on this site, lol.

I believe you will be able to get there. You do a lot in your daily life and have managed to lose 13 pounds in one round. You are very close to the 180s right now. You will have a lovely summer !

Good morning! I'm back on the hcg as of this morning. I did some damage over the weekend but I believe most of it is just carb bloat. We went to the St. Patty's Day parade on Saturday and then went to see a cousin's band from 6-8 pm. It was a lot of fun! I did partake in a lot of green beers Yesterday I was a bit hungover and didn't eat great. Today's a new start and I'm planning on about 2 more weeks of P2 and hoping to get to 194.6 - that would make -20 lbs. for 2014. I'm also going to try to do some type of exercise each day. It may just be some light walking or swimming. But I know that activity definitely helps get these pounds off!!!

Back to my stats, today's weight was not pretty at all but I'm looking forward to getting back down now.

Scale moved down this morning -1.8 lbs which is great! I was a bit rogue yesterday and had corned beef and cabbage to celebrate St. Patty's Day. Today I'm going to follow protocol 100% and hope for another loss tomorrow.

Menu So Far:
Coffee/cream
apple/ground chicken/cucumbers

Thinking dinner will either be more ground chicken or maybe taco meat.

Come on ONEDERLAND!!! My pants are loose again today!

Hi Peeps I'm off again today but my customers keep calling me!!! I'm ready to change my voicemail so I stop getting messages. Scale was nice to me this morning, 199.6 My menu yesterday was pretty good, I'm definitely not very hungry.

Good morning I can't believe it's Monday already Weekends go by so fast. I stayed pretty much on plan but I've been starving. I looked on the calendar and TOM is due, BLECH! I went to the gym yesterday and did 40 minutes incline on the treadmill, swam with Erin for about an hour, then hot tub and steam room. My legs/arms are a little sore today so no surprise the scale went back up to 200.0. Plus TOM on the horizon always mean a gain I'm feeling the PMS too - cranky, anxious, tired. SUCKS!!!

I'm going to focus on water and staying on plan today.

And YEP, TOM just showed up!!! I just took 2 Advil because my head is splitting in two. My eating has been pretty good though. Coffee for breaky and lunch was 5 ounce of canned chicken mixed with red onions and a teensy bit of mayo. Plus I had a serving of Ritz crackers I've been using these with no adverse problems in place of the melba. I only have one serving a day which is 80 calories and I figure that matches the 2 servings of melba.

Kind of glad to see that I was 200.0 this morning with TOM. I generally can gain anywhere from 3-6 lbs with TOM. Hoping for a nice whooshie maybe by the end of the week once the bloat is gone!!!

Hello! Decided not to weigh today because TOM is kicking butt and I took some meds for my sinuses last night. Our weather is supposed to get better the next week so I'm hoping to feel better! My sinuses were killing me last night.

Well, I'm back to where I was last Friday EXACTLY. I'm honestly not upset because I know TOM is the culprit here. Yesterday it was terrible and I woke up this morning to my rings super duper tight. I wasn't going to weigh but figured WTH! I can tell that my body is burning fat because my clothes are all getting loose. I just have to be patient and wait for TOM to leave and hopefully get my whooshie that I deserve!!!

Hope everyone reading has a wonderful weekend. The weather here is already improving. It's supposed to be in the 50's today

Wow, I haven't updated here in forever I went off the hcg because of TOM and sinus issues. I've been taking sinus meds and they definitely make my weight fluctuate. Scale was at 201.2 today. I'm going to try and keep it very low carb today and get some exercise in. I also want to drink more water. I totally struggle with it. It's rainy and crappy here today so there's go walking outside. DS came home from school sick, praying nobody else gets it

How is everyone else? Definitely quiet in here lately.....

I'm still hovering around 200-202 every day. So, at least I'm not gaining back my losses! I know that 15 pounds less would feel totally awesome though. I just need to focus and start working the protocol again. This weekend I have plans and next weekend is of course Easter. I may dose and load on Easter and then start VLCD's that Monday. My goal for now is to maintain or lose a little!

Green Bean Casserole

This one is from Peace, Love and Low Carb:

GREEN BEAN CASSEROLE
The days of making a green bean casserole entirely out of canned and packaged ingredients are long over. Once you try this recipe, I promise you won’t be buying canned cream of mushroom soup any time soon. This is a great holiday classic but also a delicious year round side dish.
INGREDIENTS
1 lb. Fresh Green Beans – Cleaned, Trimmed and Halved
½ Cup Almond Flour
1 tsp. Sea Salt
½ tsp. Black Pepper
4 oz. Onion – Thinly Sliced
2 Large Shallots – Thinly sliced
8 oz. Mushrooms – Rough Chopped
2 Tbs. Butter
3 Large Cloves Garlic – Minced
½ Cup Chicken Stock
½ Cup Heavy Cream
¼ Cup Parmesan Cheese – Grated
(2 Tbs. Peace and Love)
DIRECTIONS
In a large pot of salted water, bring the green beans to a boil. Boil for 5 minutes. Drain in colander and submerge the beans in an ice water bath to shock them and stop the cooking process. Drain and set aside.In a large mixing bowl, combine almond flour, sea salt, and black pepper. Add onions and shallots and toss until they are well coated.

In a large skillet over medium-high heat, heat ½ inch of avocado oil. Once oil is hot, add breaded onions and shallots in small batches and fry until crispy and golden brown. Remove from oil and spread out on a paper towel to remove excess grease.

Drain skillet and reduce heat to medium. Add mushrooms, butter and garlic to pan. Sauté mushrooms and garlic for 5 minutes.

Preheat oven to 400°

To the skillet, add heavy cream, and chicken stock. Bring to a boil over medium heat and then reduce heat to low and let simmer to thicken. Once sauce has started to thicken, stir in Parmesan cheese.

Add green beans to sauce and stir until they are coated. Transfer mixture to a casserole dish. Spread crispy onions and shallots out evenly around the perimeter of this dish. Bake 15 minutes.

Makes Servings 8

1 Serving:

Carbs: 8 net g
Fat: 11 g
Protein: 5 g

Low Carb Cheesecake

From 24/7 Low Carb Diner:

New Year's Cheesecake

Crust:
1 cup coarse unblanched almond meal
5 tbsp butter, melted

Filling:
5 (8 oz) blocks cream cheese, softened
sweetener equivalent to 1 1/2 cup sugar
1/2 tsp salt
1/4 cup heavy cream
2 tsp lemon juice
2 tsp vanilla extract
2 egg yolks
5 eggs

Preheat the oven to 350 degrees F. In a medium bowl, melt butter. Stir in the almond meal and mix until the nuts are moist. Press into the base of a 9 inch springform pan. Butter your fingers to rub an inch along the base edge of the spring form pan. Bake for ten minutes. Remove crust from oven and change the oven temperature to 500 degrees.

In a large mixing bowl, beat the cream cheese until fluffy. Incorporate the sweetener 1/4 cup at a time. Add in the salt, cream, lemon juice and vanilla. Beat for 2 minutes. Add the egg yolks and beat until incorporated. Add the eggs, one at a time, continuing to beat between additions.

Pour the cheesecake mixture into the pan. Smooth the top and tap for air bubbles. Bake on a lower middle rack of the oven for exactly 10 minutes. At the ten minute mark, turn the heat down to 200 degrees. Do not open the door. Bake for 1 1/2 hours. If top is browning too much, place a foil guard loosely around the edges. Remove from oven. The cheesecake should be firm around the outer edges and still slightly jiggly in the center. Let cool for 5 minutes, then run a knife along the edge to loosen it and help prevent cracking. Let cool at room temperature for an hour, then transfer to the refrigerator for several hours.

Serves 16
357 calories 35 g fat 4 net carbs 7 g protein

This is creamy and delicious even without the fruit topping. The nut crust is perfect. Everyone loved it. Don't wait for another New Year Celebration.

Low Carb Red Velvet Cake

From Healthy Indulgences:

Healthy Red Velvet Cake

Serves 8-10

Ingredients:
1/2 cup unsalted organic butter, softened
9 large eggs
1 cup erythritol
1/4 teaspoon good-tasting pure stevia extract
1/2 teaspoon sea salt
1 teaspoon pure vanilla extract
1/2 cup yogurt
1 tablespoon red food coloring
3/4 cup sifted coconut flour
3/4 teaspoon aluminum-free baking powder
2 tablespoons Dutch-processed cocoa powder

Preparation:
Preheat oven to 350 degrees Fahrenheit.

Set out butter and eggs to bring to room temperature. Alternatively, microwave butter for 8-10 seconds and dunk eggs in warm tap water for 15 minutes. Prep 9 inch cake pan by greasing with nonhydrogenated shortening and dusting with extra cocoa powder. Tap pan on all sides to distribute cocoa powder in an even layer. Whisk together eggs in a bowl until a bit foamy, and add vanilla extract to eggs. In another bowl, sift coconut flour and stir in sea salt and cocoa powder. Mix together yogurt and red food coloring in a third bowl. In the largest bowl, cream butter for about 30 seconds to make it fluffy. Add erythritol in a steady stream and cream together for 2-3 minutes, or until light, fluffy, and close to the color of cream cheese. Scrape down the sides of the bowl occasionally. Slowly stream in beaten eggs, beating continuously. Don’t worry if the batter curdles. Once eggs are added, add dry and wet ingredients alternately until everything has been added but the baking powder. Mix in baking powder and scrape batter into prepared pan. Bake for 40-45 minutes in the center of the middle oven rack, or until batter is completely set and springs back. Cover top with foil and bake for longer if center is not set. Remove cake from oven and let cool for 10 minutes.

Invert pan onto a cookie sheet and let cake cool completely. Slice into two layers with a serrated knife, if desired. Transfer bottom cake layer to a serving dish lined with strips of wax paper hanging off the edges. Frost cake, laying over a thin crumb coat first. Then pile on the frosting spread outward from the center of the layer. Add top layer to cake and cover completely with frosting. Store and serve at room temperature. Refrigerate after 24 hours. Cake is best tasting after warming up if it has been kept in the refrigerator.

Cream Cheese Frosting

2-8 oz packages cream cheese or Neufatchel 1/3 less fat cheese
1/2 cup to 3/4 cup erythritol, powdered
1/8 to 1/4 teaspoon pure stevia extract
1 stick organic unsalted butter

Bring cream cheese to room temperature. Beat until smooth and creamy, then add powdered erythritol and beat for about 2 minutes, or until erythritol is dissolved and the mixture does not feel gritty to the touch. Beat in butter just until smooth and incorporated.

~60g net carbs for the whole, frosted cake
~6g net carbs per 1/10th
~7.5g net carbs per 1/8th

I'm so ready for the weekend and it's only Thursday! I have to work tomorrow which stinks. We are getting a new roof put on tomorrow at home. Hoping the weather cooperates. Atkins induction is going good. I seriously have no control when I start to eat carbs. And I feel like crap. Why do I even want them??? I feel so much more clear headed and have more energy on low-carb too. Those processed sugar carbs don't even taste that good! I think something in our brains is addicted to them. I will weigh tomorrow morning and see where I'm at for the week. I think I'm just going to weigh on Fridays and consider that my official weigh in. I'm really attempting a good 2 week induction following Atkins rules. My only problem is after dinner when I want sweets. I've been having one small snack size bar that has 3 net carbs. I know it's not perfect but my stupid body still craves the sweets. Maybe after I get a good week of induction under my belt the cravings will go away???

Anyhoo, hope everyone has a wonderful Easter weekend!

Gracie - SUGAR AND SWEETS are my downfall too. I crave it daily. Which snack size bar are you talking about? I am always looking for good ideas. Sometimes when I am trying to make a good choice I make spiced apples. I peel and slice an apple or two, add truvia, and cinnamon, and cook it on the stove.

WTG for not gaining back your losses.
