Hi Monica! Thanks for stopping by! Here's the recipe, I didn't do exact measurements, probably more onions, and used asian mushrooms because I was at the international market and didn't want to make another grocery stop. LOL

Based loosely on this recipe:

Beef (sirloin steak) Stroganoff
what you need
1 Boneless beef sirloin steak, 3/4 inch thick (1 lb.)
1 cup BREAKSTONE'S or KNUDSEN Sour Cream, any variety
2 Tbsp. xanthan gum
1/2 cup Water
2 tsp. instant beef bouillon granules
1/4 tsp. Pepper
2 Tbsp. Butter or margarine
1-1/2 cups sliced fresh mushrooms
1/2 cup chopped onion
1 clove Garlic, minced
4 cups hot cooked lc noodles
Make It
PLACE steak in freezer 30 minutes to firm. Cut across grain into 2x1/2-inch strips.
MIX sour cream and thickener in small bowl. Stir in water, bouillon and pepper; set aside.
MELT butter in large skillet on medium-high heat. Add 1/2 of the steak; cook and stir until steak is cooked through. Remove steak from skillet. Add remaining steak and vegetables to skillet; cook and stir until steak is cooked through and onion is tender. Return all steak to skillet. Reduce heat to medium.
ADD sour cream mixture; cook until bubbly, stirring constantly. Cook an additional minute. Spoon over hot noodles.

I used glucomannan instead of xanthan gum. I also used this pepper marinated beef tenderloin I got from Sams and used the blood juices instead of boullion/water for flavor....and olive oil instead of butter....lol
I used shirataki noodles, but you could also make faux noodles with cabbage...

Yesterday's DD was a good one. Total calories were 530. Had a massive headache by days end, so that was no fun. Today should be a good up day. Calorie goal is 1850.

Today I just work 1/2 day. Then the kids and I are off to TEXAS. I am so thankful that our 2 travel days are DD's. Won't be hard to stick with it while driving. Then Sunday DH will drive back and I will read all day long...can't wait! Friday's DD will be tough, but I am bumping the calories so it is managable! Tomorrow we will be at Six Flags. WE are packing a cooler so the food will be whatever we take. Saturday is the 100 year olds birthday party. I won't be tempted by the cake as it will be Gluten. So really my only "worry" day is Friday. I'm sure I will manage ok! Then next week, right back on weight loss DD levels!

Yesterday's up day ended up a bit higher than planned...I guess I started VACATION early!

Thanks Izzy!!!

Well I am back, safe and sound! It is a 7 1/2 hour drive to Dallas from here. Well, actually Melissa TX, but is a suburb of Dallas/McKinney. We had a blast. We went to Six Flags on Thursday, Friday we went swimming, Saturday was the Birthday for my dear friend Grammy (turned 100) and then Sunday we headed home. Great time with friends. We played TONS of games and had TONS of laughs. Ate good food and tried to keep calories in check on Friday and Sunday for DD's. Yesterday DD was right at 800! Wednesday was closer to 850c. Friday, well I did good for breakfast and lunch and then....the chips were opened and it all went downhill fast.

Today will be a DEAD ON Up day with 1850 calories and tomorrow's DD will chime in around 500! Jumping back into it. I probably won't weigh this week, no need to get depressed.

I was disappointed. When I arrived, no one noticed my weight loss. We started lossing after the last time I saw these people. Then when my DH showed up...EVERYONE noticed. That's when I got to mention I was down just over 17 pounds. Still seemed like nothing when DH was toting that he was down 30 pounds. YUCK! Oh well, my clothes fit better so that is all that matters to me! 13 more pounds to goal and ultimately that should get me comfortably into a size 8!!!!

Yesterday was a good up day. Little over on my calories but within my range. I think it was just over 2000. My range is 1850 - 2100. Today is a DD. BUMMER! I haven't had a dead on good 500c DD since last Monday. I need to go get some water to chug!

Yesterday's DD was a struggle. I was hungry from 3:00 on. I nibbled a little but not much. I think it came in right at 630c. Not great but not bad. I was supposed to weigh this a.m. and totally forgot! DH weighed and he maintained perfectly while we were gone. He is holding tight at 201. I will weigh on Friday!

I have reevaluated my calories. I hadn't been counting my Crystal Light stuff, I am going to start doing that now. That's 20 calories a 32 oz jug. I am also going to try and find some new DIFFERENT things to eat. I am growing bored of our standard stuff. KWIM?

I will weigh in tomorrow. Yesterday was a good up day. Today may be a struggle as we are at the ball fields tonight from 5:30 - 11:00! I am bring strawberries. Will probably be a bit of a higher DD!

Bummer I am already struggling today! I could honestly EAT everything in site. The good thing...THERE's nothing here to eat! I had my breakfast at 8:30 and I usually am able to wait till 10:30, then I had an extra "snack" at 11:00 and I just finished my soup and could eat MORE! This is going to be a long afternoon!

17 pounds is a lot! Glad you didn't let their lack of notice get you down! You go girl on fitting better in your clothes!
You are soooo close to goal! You did great for vacation. Many would have vacated their food plan.

My DD yesterday came in about 850c. The way I was feeling, I almost threw it all in and had whatever I wanted for dinner. For some reason I was so HUNGRY yesterday. Instead I had some peanuts and moved on! It was so hot for Haven's 6:30 game. There was not a cloud in the sky and the sun just beat us to death! By the 9:00 game it was actually nice. We WON both games. Haven had 1 double and 1 triple! It was a great night for the OUTrageous!

I remembered to weigh this morning and was up 1 pound. Further reason to HATE my husband and his ability to drop weight like NOTHING!

171.2, I won't record it on my stats....we will assume it is from the heat!

Funny you ask that. In December I had an endometrial ablation procedure done so I don't have a period anymore. Now, my body still cycles, there is just no bleeding (TMI, SORRY). Friday I started getting cramps and my lower back was killing me. I traced back to my last period in November and sure enough, TOM was Saturday July 29th so YES it was close to TOM. I had lost track of it over the month. BTW, not having a period yet body hormonally still functioning is the BEST thing EVER!!!!!!

The weekend was good. My calories for Up and Down days were a bit on the High side. We were in the heat all day Sunday, Saturday and Friday evening. My ability to focus when I am that hot isn't the best. I stayed the coarse and just went to the top part of my calorie range for both up and down days. It went well.

Softball is done till 09/07, that should help a lot. OH and bring on FALL. I am done with 110* days. It is just gross anymore! Feels crappy and just drains a person of all energy, focus and caring!

Today is a DD and I have a good plan in place. Hoping it works. I was starving when I woke and had a massive headache (guessing way too much SUN/HEAT this weekend). I ate some deli ham and have chugged the water. Hoping I can hold off eating anything else till after 10:00 a.m. We will see how that goes.

I weigh in on Thursday this week, hoping I am in the 160's. Even if it is just 169.8!

Yesterday's down day ended up on the higher side. I was doing SO WELL TOO! Then I served the kids some jello poke cake and had 3/4 of a piece. Totalled it up, it was just shy of 800c. I do a range on DD's anyway, 500-800 so still within my range, just had hoped to keep it lower. OH WELL! Now when I complain I didn't lose, SOMEONE remind me of this! Today's goal is a CONTROLLED up day!

Eating salad for lunch so I can enjoy a nice, big piece, of jello poke cake tonight! YUM~

It seems to me that the reason to have a range is to be satisfied being in it. Being out of range would be less than optimal, but as long as you're in range that should be fine. Otherwise, why is 800 part of your range?

My point my friend is that you're senselessly beating yourself up. It's the same game we all play - I can have 30 net carbs but if I have more than 20 I start getting upset. Let it go, you're doing so well. And you darn well know that the scale is no measure of short term success. Let's see some new pics kiddo.

Yesterday was a good Up day! I think it was right at 2000c, which is fine as I do a range from 1850 - 2100! Right RD, it's all within the RANGE!!!!! I measured this morning as it is August 1st (which is shocking that it is August already) and all areas were down from last month. Moving in the right direction. Tomorrow is weigh in day for the week!

I know that you know this already, but it helps to have someone remind us from time to time, lest we get set in our bad habits. We're all fighting the same fight after all.

My little ones are great! My daughter turns 2 tomorrow, I can't believe it. And my son turns 5 in a few weeks. And I turn 40 a few days after that. Yikes!

RD, you are such a young pup! I turn 42 in September! You are so right. It does help for someone to remind us. You are doing so well. I looked at your before and after picture...WOW ! You look GREAT! SKINNY even!!!!!!!!

I would love to see some pics of your little ones. Compared to mine, yours are TINY!

This is my daughter Haven, she turns 11 in October. She is our SOFTBALL NUT! She lives, breathes and sleeps it.



Here's my boy Tristan. Not so much a boy anymore. He turns 14 in December is just as tall as me and out weighs me by a bunch now! He is all ROCKING and takes his music seriously!

Weigh in day was today, I am the same as last week. I should probably own it and put it in my signature...but I so don't want to. I am 171.2 Like I said earlier this week, dang cake was hard to resist. I haven't had any for a couple of days and what isn't gone by this evening, I am throwing away. Tonight we are taking the kids to Orange Leaf - frozen yogurt place. I love that stuff so I will save calories for that.

*sigh* My goal by Labor day was 165, I somehow think that is NOT going to happen! Heck, I think my July 4th goal was 168, that might not even happen by Labor Day! Pulling my boot straps up and am going to be more diligent with counting my calories. You know, ever since I tried to LOWER my Up day calories, I have been EPIC FAIL! I am going to put those back up to 1950 and see what happens. I lowered them to 1850 thinking it would help. Now, I am not saying I ate at 1850 level, but I think mentally, trying to lower it is messed me up!

Hi Monica.. I just read your whole story and i loved it,, i could feel your excitment as you posted every day or so,, i could feel that whole"cant wait to see" .. It feels great dont it? But i just wanted to jump in here, and share with you,, how i dint change a single thing and i had a whole month,, where i only lost 2pounds! The body needs this time to kind of re coup.. So.. Dont change up any thing,, just hang tight, and do your self a favor and dont set goals by dates.. When you put a date on things.. you set your self up for dissapointment.. The body has its own time adgenda.. one that you cant control.. So Hold fast on your rotations keep doing what your doing, cuz its not broke.. no need to fix it.. relax This is a journey.. there is no end.. AFter "goal" Comes maintaince! WE are never done.. Thats why its a journey.. not a race.. Love ya Girl,, you my JUDDD BUDDD have done amazing~

Kimberly - thank you so much for your kind words. YOU ARE RIGHT! I know that, just like RD! My body has done well! You and I have similar builds! I am 5'8", so close in height girl and our current weights are close too! You have done so well, I totally admire you and welcome any thoughts/ideas you can provide. I won't change things up I will keep staying the coarse.

Last night I saved calories for 9oz of frozen yogurt goodness. I have learned to SKIP the toppings as that packs on the calories and is very hard to estimate the calories. Just having the ice cream is enough for me! YUMMY!

DD today and I am planning my calories so I can have an adult beverage this evening. Hoping I can keep my bloodsugar stable enough to keep those calories down. Plan is for cottage cheese/strawberries for breakfast and cottage cheese/tomato lunch! Tomatoes are awesome right now. HOME GROWN GOODNESS!!!

We told Haven about her making the Volleyball team last night. SHe was beyond thrilled! Friends in this weekend. Today will be a good DD, tomorrow UD and Sunday's DD may be a little tough. I will start making a plan for how to tackle it once I know how long they will be at the house!

Ok, I can finally see the pictures of your kiddies! Couldn't see them for some reason but I kept checking back. Wow, great lookers! I play baseball and electric guitar myself so I have something in common with both of them. In fact, my first guitar was a red stratocaster imitation with a white pickguard, just like your son's! Although my trem bar just knocked the whole thing out of tune so I never used it.

What a beautiful family!

Enjoy them, they all grow up so fast. Everybody knows that, but it really is true.

RD, I know NOTHING about guitar. Tristan has played for 2+ years now and loves it. He is an 80's rocker. Loves all that old hairbands stuff. Now that is right up my alley!

Anna - thank you! You are right, the time flies by!!!!! I can't believe he is going into 8th grade and Haven into 5th!!!!!!

The weekend was good. We had friends at the house all weekend. Even with that, we maintained our rotation. Friday and Sunday were good down days. I think Friday was at 700c and yesterday 680c! Saturday we spent 5 hours at the water park. We all had a great time even my 13 year old that would rather be inside playing his Xbox! He told me yesterday that he really enjoyed Saturday! That is music to a Mom of a TEEN's EARS! Saturday calories might have been a bit high, I honestly didn't track, I was having too much fun!

MWF are my up days this week. That's my favorite rotation. DD's are simply easier for me when I am at home! Weigh in this week is Wednesday. I am hoping to see 169.X something!
