MMM....yummy! This is George Stella's recipe. I dare you to try it! I'm going to write it here and copy and paste to my site. I did not follow exactly so I wrote my changes in italics. I think you can shzooshz this up any way you like.

The Original Cauliflower "Mac" and Cheese

NON-stick cooking spray
1 large head of cauliflower, cut into small florets (I used frozen and microwaved)
2 ounces light cream cheese (I used regular) about 1/4 brick.
3/4 cup of heavy cream ( I used FF half n Half)
1 1/2 tsp Dijon mustard (I used regular)
2 cups shredded sharp cheddar ( I used cheddar/colby mix and velveeta)
1/8 tsp garlic powder (onion powder)
1/4 tsp salt
1/4 tsp black pepper

Boil cauli until crisp tender about 5 minutes. Drain and pat between paper towels to dry, transfer to 8X8 greased baking dish and set aside. Bring the cream to a simmer, whisk in cream cheese and mustard until smooth. Stir in ONE cup of cheddar (I used both cups, oops) and seasonings. Whisk until cheese melts about 1 to 2 minutes. Pour the cheese sauce over the cauli and mix to combine, top with remaining cheese (I made more shreds for the topping)

Bake at 350 until browned and bubbly hot, about 15 minutes or so.

Laura this was so good! DH loved it!

Hey Ellgee! I mixed some browned ground sirloin with the leftover Cauli mac and cheese. OMG GOOD!

Hi girlies! Dani! You gonna try JUDDD? Woo Hoo! You can do it, sister!

I'm in a bit of a rut and not really JUDDDing. Half ass counting calories and then blowing it mid-day. I am making myself weigh every day so this doesn't become a free for all party fest. I am up 3 pounds. And trying to get my head back on to get started again. I don't know why I burn out on everything I try after two months. GAH!

Ok. Enough fooling around. After stepping on the scale this morning, JUDDD is back in full effect. NOT going back. NOT going back. NOT going back.

Up 5.4 pounds from my lowest. And those pounds are going DOWN.

DD today.

Laura, good for you! It's so hard to be "perfect" and totally unnecessary. You are staying accountable, you are monitoring yourself. May I suggest that if you are not low carbing at the moment that you forgo the DD and LC for a couple of days...then have a DD to start you off and running again. It helped me enormously when I couldn't get it together on JUDDD. Once I got my appetite and cravings under control then I could actually finish a down day. Just a thought. If you feel good and strong right now then have a great DD!!!

This is actually what I plan on doing once I get going!

No time better than the present to get going again. Proud of you! The extra weight will be gone in no time!

Good God - how long was I gone?????? Time and food have smudged the edges of my memory!

Okay - I went off the rails, over the cliff and all the way to the deep blue bottom of the "I'm Sick of Dieting I want to Eat Like a Pig" ocean.

As I told Blonde - I marched my fat(ter) ass into Weight Watchers on 12/29/12. I kept giving myself arguments on why it wouldn't work, how I always quit, blah, blah, blah. Did that through the first meeting on 12/29/12. My husband finally told me to get dressed and DROVE me to the second meeting. He said, "Do this. Of all the successes you have ever had with weight loss, Weight Watchers was the one you did best. Commit to this for one year. See what you can do."

So here I am. And feeling good. I know I will start getting nutty at some point but I have made a promise to myself to really try to do this one year. Whether I lose 10 pounds or 100, makes no matter. I will do this and I'm grateful that my husband could see I was floundering and miserable and helped me out of that ocean.

I thank all my friends for not giving up on me. I had already given up on myself and started to decide I was just going to live life fat and quit torturing myself. But that isn't how I can lead my best life. Grandkids aren't too far in the future - I want to be healthy for that!!

Hi Laura.

I love that your hubby was supportive and able to convey how much he wants to support you. 1 year..in the grand scheme of things..not too much time to have to commit to, right? You can do it!!!!!!! Try your best to enjoy the ride, learn new things about yourself...the good and the bad but focus on the really great things that make you YOU! We know how amazing you are, now it's your turn to see that too! And trust me, we ain't going anywhere! I'm still plodding along trying to regroup after the holiday and a new scale... ..

What a wonderful husband you have! He's so smart, he loves YOU.

Oh my gosh, what a can of mixed nuts we are. I joined WW yesterday, AND I'm gonna commit to a year WITH YOU. My only real limitation is to remain gluten free, I need to do that. I Love these boards, I can't tell you how many times I would have given up if not for our wonderful friends here. I want this to be our year, all of us faithful friends~!

I AM so thankful for that man of mine. He saw that I was a deer in headlights. Too frightened of failing again to make a decision. I'd STILL be sitting trying to decide if he hadn't made the decision for me! He's always so supportive and has loved me through thick and thin. Literally.

2013 is our year. It just feels different. And a year is really a small chunk of time in the scheme of things. We can make some big changes!! So excited to see this unfold.

Oh Laura, I'm SOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO glad to see you!!! Sometimes the hardest part is just picking a plan. I'm glad your husband helped you see that WW is a great plan for you. Even if you decide in a month or two to switch, you are on the right track. We can always change and adapt. It's much easier to switch from one good plan to another than to start in the first place.
