Been gone for quite some time
I started low carbing last year, and eventually with reading all the different advice, and adding and taking away things, I got so far from the original diet that one day I realized I wasn't low carb anymore. I restarted about two weeks ago, and so far, have lost 13 lbs and 7". Daily I would like to post my menus and would love any feedback or new recipes. I am sticking to my basic guidelines this time until I get down to atleast half of my weight gone. I am 5'4", and started at 203 lbs. Presently, I am down to 190 lbs
Well here goes today's menu: Breakfast: Leek, goat cheese and chicken tart Lunch: Leek, goat cheese and chicken tart Snack: 2 slices of spicy salami wrapped with mozzarella and a little bit of salsa on top, melted Dinner: Cabbage and beef soup, Greek salad Snack: Atkins Peanut Butter Cups Drank a ton of water, ofcourse. Didn't drink anything else today.

Today so far has been a great day. I haven't been tempted to eat off plan at all.
Breakfast: Leek, goat cheese and chicken tart Snack: Six english cucumber slices with whipped cream cheese on top, a little smoked salmon and tamari sprinkled on top Lunch: Beef and cabbage soup Snack: handful of wasabi almonds Dinner: Eggs benedict over sauteed spinach I have celeraic dauphinoise baking in the oven and plan on tasting it when I get home from work tonight. Gonna be a long night at work. 1/2 celeraic small onion salt pepper heavy cream parmesan cheese baked for 45 mins at 350 |

back! I think its a good idea to have a plan and follow it as much as possible. Years ago when I was doing low carb I "modified" myself right off the program and regained all the weight I had lost. Hoping not to do that again! |

Yesterday was a crazy day, as I worked both jobs, and barely got a moment for myself. I did manage to stay on plan though
Breakfast: Last slice of Leek, goat cheese and chicken tart Lunch: Steamed cabbage with bacon Dinner: Salmon, 4 shrimp scampi with salsa on top, grilled summer squash 2nd dinner after a hard nights work: broccolini, bacon, chicken, roasted garlic, roasted tomatoes and roasted peppers on top of a bed of wilted spinach Somewhere in the middle of the day I had an Atkins peanut butter cup. I worked yesterday from 9 am to 1 pm, then went to the second job from pm to midnight. Long day. But, keeping busy like that prevents me from popping stuff into my mouth too!! |

Had to work all day again today. Sometimes these weekends kill me!
Breakfast: Leftover beef and cabbage soup Lunch: skipped Dinner: Filet mignon with pepper jack cheese and mushrooms on top, salad with boiled egg and ranch, a few grilled scampi with butter and green beans with bacon (making up for skipping lunch lol) Drank a ton of water today due to running around a restaurant like a madwoman. Nothing makes me thirstier than work!! Working both jobs tomorrow-morning and night, then relaxing finally!!!! Sometimes hard to do when you are a single mom, that's for sure... |

Posting early today. Called off tonight! ha ha. My son is in a championship tournament for basketball, Varsity. He is only tenth grade, and they usually bench him unless something happens and they need him, but one of the varsity kids got hurt, and so my son is starting in the championship game! My boss was very understanding and gave me the night off. I am so happy.
Anyways...on to the menu for today Breakfast-6 "sushi", (cuke slices w/whipped cream cheese, smoked salmon and tamari) Lunch-leftover beef and cabbage soup Snack-handful of macadamia nuts Dinner-steak with queso shrimp and cauliflower with the works(sour cream, cheese, bacon and chives) Having dinner early due to going to the game. Probably will make microwave cheese crackers to take with me as a snack. I am excited for this night! P.s. Weighed myself, the scale didn't move (but I did lose 3.5 more inches). I think its my time of the month...maybe water weight or something. Who knows? What I do know is that I feel wonderful |

Well I took the kids to Kalahari for the weekend, and did not eat on plan very well. It all started well...I packed a cooler with lunch meats and cheese in it, but once that was gone, I am sorry to say that I did not do such a good job. I am not weighing this week or measuring lol. I don't really want to know. I will do it next week. Right now, I have a butternut squash roasting in the oven to turn into soup

Breakfast~woke up late and didn't have it
Lunch~bowl of butternut squash soup with mozzarella and bacon bits on top Snack~thin slices of deli ham, slice of american cheese, and a few more thin slices of deli ham on top. Fried in butter to make a kindof grilled cheese between the ham. Drizzled yellow mustard on top and ate it with a fork. Was amazing. Dinner~Coney Island Chili Dog Pie, diet dr. pepper Snack~SF cherry jello topped with redi whip, three bites of Sodelicious Coconut milk Ice Cream. |

Today was a good day. A few flaws, I am sure I am on a slippery slope, but with so many obstacles, I am proud of what I ate.
Breakfast~samples of cuisine from 12 different nations at my sons multicultural breakfast. I only chose ones I believe were low carb Lunch~tomato and arugula salad, glass of white wine Dinner~Indian buttered chicken with raw spinach Snack~handful of popcorn at the play we went to tonight Tomorrow will be a better day for me, not nearly as many obstacles. I am having lunch with my girlfriend. We haven't seen each other in months! She is suggesting going to a mexican place, and I have heard tamales are the way to go? Any suggestions?? |

ugh...i take that back, tamales are definitely NOT low carb lol...I will stick with either a soup or fajitas...without chips, tortillas or any of that other crap...

Today I will post progress thus far:
On February 16th: I weighed 203 lbs My neck was 13 1/2" My wrist was 6" My bust measurements were 36" and 43". (under breasts and across by the nipple) My waist was 38 1/2" My hips measured 45 1/2" And my stomach (cringe) measured 42" Today, on March 15, 2012... I weigh 190 lbs My neck measures 13 1/2" My wrist measures 6" My bust measurements are 35" and 41" My waist measures 36" My hips measure 42 1/2" And my stomach measures 40 1/2" That is 13 pounds down and 10"!!! I ate a lot today...but all within my limitations. It's that time of the month, and I guess my hormones were craving lol.
Breakfast: 3 slices of roast beef with chunk of sharp cheddar and spicy mustard Lunch: Leftover Pork meatballs with coconut and cilantro sauce over a bed of spinach; pepsi max Snack: 5 shrimp dipped in mayo Snack: 3 mini sugarfree hersheys candies with caramel Snack: raw cauliflower dipped in guacamole; 3 slices of chorizo dipped in brie Dinner: 7 baked wings with sweet &sour sauce (sugarfree maple syrup with franks hot sauce) I drank a ton of water today too! Breakfast~egg salad on an oopsie roll with lettuce and tomato Lunch~chorizo dipped in brie, handful of olives stuffed with sundried tomatoes Dinner~Red Lobster~Had Shrimp in garlic butter and herbs, bay scallops in lemon butter and broccoli snack~did have a few sugarfree chocolates again today, but am determined not to have any tomorrow. |

Yesterdays menu...I worked so much last night, that I didn't have a chance to post.
Breakfast~chicken, greeen onion and goat cheese tart Lunch~7 shrimp dipped in mayo; cukes and green peppers dipped in spinach dip Dinner~Corned beef and cabbage, and then more corned beef! 2nd much later dinner~Salad with cukes, onion and ranch; steak with cheese and shrimp on top Snack~decaf coffee with heavy cream Had two dinners because I worked from 8:30 a.m. until 12 a.m. and was starving!!! |

I changed up the butter chicken and made a dinner with things I had on hand. Saved me a trip to the grocery store!
TUNA PATTIES - Linda's Low Carb Menus & Recipes and CHEESY BROCCOLI CASSEROLE - Linda's Low Carb Menus & Recipes instead. And, it was yummy. And the kids loved it. I topped the tuna patties with TARTAR SAUCE - Linda's Low Carb Menus & Recipes. The only thing I did different, was I didn't have celery salt or celery seed, so I omitted it. Used just regular salt for the celery salt. |

I weighed 188.6 lbs. Neck-13 1/2" Wrist-6" Bust-36" and 43" Waist-38 1/2" Hips-45 1/2" Stomach-42" As of Monday, I am technically 18.6 pounds lighter |

You know what I love? Waking up and peeing on a ketostick and it being pink. It makes resisting all the garbage at work everyday even more satisfying. Just a thought before I head into work

I was doing so great. And then, I woke up late and couldn't eat breakfast. I was rushing to work, and when I got there, they had ordered bagels. So, I had half a bagel, which I didn't even finish. Then at break, I had two oreo cookies from the office kitchen. When I got home, I just continued out the day on the right track, but when I weighed this morning (just to check) I was up a pound
Tomorrow is my official weigh in and measure day, so I am just gonna eat today 20 carbs or less and hope it balances itself out! I work way too hard to gain a pound. Right this minute, I am baking a quiche to have for emergency breakfasts for the next week. |

Finished shopping for the kids easter baskets today. Going to go easter dinner shopping tonight.
Menu: Appetizers~ Salami and Cream Cheese roll ups Deviled Eggs Dinner~ Low sodium ham glazed with sugar free preserves (not sure which one yet, depends on carbs) Broccoli Crunch Salad Green Beans cooked with bacon (Mac n cheese for non-lcers) Dessert~ Low carb cheesecake with a nut crust(found the recipe on here, made it today, and had a small piece to test it out~~yummy!!!) (Easter basket cupcakes for non-lcers) |

I forgot to post my weigh in and measurements yesterday. Just as I suspected, I did gain
Weight~190 lbs Neck~13" Wrist~6" Bust~34" and 39" Waist~34 1/2" Hips~43 1/2" Stomach~41 1/2" Gained 1.4 lbs, Also, measured quickly, so not sure I did it very accurately. Anyways, next week will be a better weight loss and inch loss |

One of the ladies I work with came in today with "Easter Cheese" that her and her mother make every year. She asked me to try it, and because I deny practically everything this woman makes (too carby), I tried just a small piece. Instantly I could taste the heavy sugary taste. I quietly smiled and swallowed, and half hour later, I was in the bathroom puking! I am home early from work now
I feel like crap! |
