Today was a long day at work. Eating was easy though. The less I think about it the easier it is.

Breakfast- 4 sausage links fried in butter and a little olive oil and dipped in 1 tbsp s. cream mixed w 1 tsp mustard

Lunch- handful of spicy pumpkin seeds, Atkins Chocolate Hazelnut bar (I never eat these, but I needed something quick while I was at work, and this bar did the trick!)

Dinner- Chicken breast dipped in homemade ranch dip, cabbage stir fried with bacon, butter, salt and pepper.

It is late now...and I ate a little more today after I posted my menu for the day.

I finished off that cabbage with bacon. It just was so freaking delicious!!! And, then I took about 1/4 c full fat cottage cheese and mixed it with 1 tsp of sugar free jelly. I was really craving some of those fresh cherries at the market, and settled for the sugar free cherry preserves instead AND...the biggest news...when I peed on a ketostick tonight, finally I am back in ketosis Yay me!!!!

so...It is 5:39 a.m. and I haven't been able to fall asleep yet Thinking about just going outside and going for a brisk walk. I normally don't like to do any exercising outside cuz I don't want people looking at me...but I think I might be safe this early in the morning. I need to get on the exercising bandwagon again anyways -_-

Breakfast today= 3 eggs scrambled w mushrooms, tomatoes and garlic, topped with a new cheese at my store called italico
Lunch= philly cheese steak with peppers, mushrooms, mozzarella and bbq sauce (found this Walden Farms thick and spicy barbecue sauce that has 0 carbs in it-I hope it tastes good!)
Dinner= (Since I will be at work...) Chicken marsala with asparagus instead of pasta

I have been picking up an iced coffee w sugar free vanilla syrup, medium or small, at mcdonalds every now and then. I just looked up the carb count, and depending on what site I clicked on...it ranged from 8 carbs to 12 carbs. This could be what is stalling me. I was for sure that with them using cream that my coffee was 3 carbs tops. Ugh. They are so good, so it's kind of depressing

I couldn't even finish the eggs. I only ate about half of them. It is so freaking hot here...the day started at 83 degrees at 4 am. Just means a ton of water and staking out inside of the house. The yard needs mowing, but its too dang hot to do it. I keep hoping for some rain or relief of the heat, but the sky looks nice and blue. If I didn't have to work in a few short hours, my boys and I would be headed to the waterpark!~!

Today was unique. I have been volunteering at the school for my son's senior year. Today was the senior lunch. It is also homecoming. I did not eat very well, because I found myself doing a lil bit of grazing.

B-McDonalds Iced Coffee with sugar free vanilla
S-Grazing at the luncheon (4 boneless wings with buffalo sauce, 2 pb squares)
L-2 kosher hotdogs chopped up w/ chili, mustard, cheese and relish
D-no idea yet...depends on how much I feel like cooking when I get home from the homecoming game. I have an Atkins frozen dinner in the freezer if I'm too tired. I have stuff to make sauteed cabbage and bacon if I'm not.

Do you know what I truly love about low carbing? Skin. Crisp skin on rotisserie chicken. Crisp skin on Thanksgiving Day turkey. In my past eating life, I would avoid the skin. Now, i wouldn't dream of it!!! *Sitting here enjoying a few slices of fresh rotisserie chicken, and its crispy seasoned skin

Sooo...I have found a new pure almondmilk by Califia farms that is 40 calories per cup. AND the best news is it is 1 carb per cup, with 1g of dietary fiber!! I have been making iced coffees at home all weekend with it. (One per day, ofcourse).

Make a cup of Maxwell House sugar free international cafe swuisse mocha, with water. Fill a glass up with ice. Put a little almond milk on the bottom, pour in the coffee, then top with a little more almond milk. (Depending on the size of the cup, I bought these pretty big ones at Target with the lid and straw). Stir it up and enjoy. There might be 1/4 milk in the entire thing. The coffee is 2 carbs...and just for good measure, I would say 1 carb for the milk. So, a delicious, BIG iced coffee for 3 carbs max. Take that McDonald's

Today was good...and then...ha ha, story of my life.

B~3 sausage links with a small handful of mushrooms and heavy cream
L~Bibb Salad with blue cheese, walnuts, prosciutto, crispy onions, grilled chicken and Newman's 1 carb italian dressing
D~1 oven roasted chicken breast w/skin and tons of herbs, 1 c steamed broccoli
S~Homemade Iced Coffee

And then...my son baked a few of his cookies from the fundraiser. And, I ate one. Then another. Then 2 more Uggh...this is never going to work if I give in so easily~~

This year is a tough one for me. My oldest son turns 18 next week. And, it's his senior year of high school. I have been looking forward to, and dreading, this day for years now. It literally feels like a part of me is dying. And yet, I love seeing him become this wonderful man that I helped create. The sad thing is I feel like I am alone with my emotions. My niece is in her senior year, and my sister is ecstatic for her to be leaving. My friends all will miss their children, but they make fun of me nonstop that I get emotional over it. Does no one else feel this ache? This past weekend was the last high school homecoming for him. Ugh...just typing it is bringing tears to my eyes. He only has 5 more high school football games to go...and then it is done. What the hell am I going to do with my friday nights anymore? That was my friday night for so many years.

I really truly believe I am addicted to food Yesterday was a prime example of that. Today, I will try my hardest to resist crappy food.

B~Leftover shredded chicken w/ green salsa and a little shredded cheddar on top
L~2 hard boiled eggs and 5 salami tacos
D~Chicken and Broccoli Soup

I found a few recipes online, and finally put my own twist on it, and will be trying it out tonight.

1/4 c heavy whipping cream
8 oz. velveeta chopped
2 bone in chicken breast, meat removed
2 oz. cream cheese
2 tbsp butter
1/2 leek
3 c broccoli
1 can chicken broth

I am going to saute the leeks in the butter for a few minutes, then add all the ingredients except the chicken. Let the soup simmer for about 10-15 minutes to soften the broccoli, then add the chicken.

I did some math with *********** and came up with about a 7 carb count per serving. I am thinking the added chicken will increase the soup to 7 servings. Crossing my fingers Next time, though, I think I will just use one of Linda Sue's soups...she has so many amazing ones on her site.

Do you know what I hate about lc??? That I always seem to have little binges like yesterday. Starting today, my goal is to get through the week without any binges. So far, today is a good day.

I am slightly changing my menu today.

Breakfast stayed the same.
Lunch is what I made the boys for dinner, the soup.
Dinner will be a fresh greens salad at work topped with grilled chicken. (No carrots or croutons) Snack will be my delicious iced coffee

Today I weigh... 199.4...I think I am going to start weighing myself daily. I have some ketosticks in there from before, I will let you know when I break into ketosis again First step is to get out of the bingeing habit.

Meatball Curry with Cilantro Coconut Sauce
Source: Slightly adapted from Girl Cooks World
Serves: 2-4

For the Meatballs
1 pound ground beef or lamb
1 serrano pepper, seeded and minced
1 teaspoon cumin
1/2 teaspoon garam masala
1/2 teaspoon salt
Black pepper, to taste

1. Add all of the ingredients to a bowl, and mix together. Form into 16-20 meatballs and set aside on a plate.

For the Sauce
2 tablespoons coconut oil
1 medium onion, chopped
1 tablespoon minced ginger
4 large cloves garlic, minced
1 serrano pepper, seeded and minced
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon garam masala
1 13.5 oz can coconut milk
2 cups loosely packed cilantro leaves
2 handfuls baby spinach
1 teaspoon Kosher salt
1 teaspoon apple cider vinegar

1. Heat the oil in a large saucepan over medium high heat. Add the onion, and cook until softened.

2. Add the ginger, garlic, and serrano. Cook for a few minutes until everything begins to brown.

3. Add the cumin, coriander, and garam masala, and stir to coat the vegetables.

4. Add the coconut milk, cilantro, spinach, and salt. Bring to a boil, and then reduce the heat and simmer for five minutes.

5. Use an immersion blender to process the mixture until smooth. Bring the mixture to a boil again.

6. Add the meatballs, and reduce the heat to a gentle simmer. Cover and cook for about 10 minutes, until the meatballs are cooked through.

7. Stir in the vinegar and serve.

Breakfast this morning consists of a MIM and some of that delicious iced coffee

¼ cup flax meal
½ teaspoon baking powder
1 packet granular sugar substitute (sucralose) <---I use Splenda
1 teaspoon cinnamon
1 large egg
1 teaspoon butter
Directions:
1. Put the dry ingredients in a coffee mug. Stir. Add the egg and the butter. Mix. Microwave 1 minute (or more).
2. Take out and slice, butter and eat.

OMG...just found this buttered lobster/seafood dip by Sea Gold that is 1 carb per serving. I am eating some right now with pork rinds to scoop it up with. So delicious

Flipping around through the internet looking for new recipes...found this one. I am SO making this tomorrow night for dinner.

Roasted Bacon-Wrapped Pork Loin & Cabbage

1 2-1/2lb pork loin roast
6 slices thick-cut bacon
salt, pepper, garlic powder and thyme to taste
1 large head cabbage, shredded

Place roast in large roasting pan. In a single layer, arrange bacon slices over top, tucking under roast. Roast at 350°F for 1 hour. Shred head of cabbage (you can add whatever other veggies you'd like at this point -- I had a couple carrots that I added). After roast has cooked for 1 hour, arrange cabbage shreds around roast and return to oven and adjust temperature to 400°F and roast for an additional hour, turning cabbage often.

D~dozen super spicy wings, one vodka with soda, lemon wedge and a lime wedge

Still not a bad day. Hit right around 18 carbs for the day

4-6 chicken breasts
1/2 cup cream
3/4 cup Monterey Jack pepper cheese

Grill breasts on an indoor grill. While they are cooking, heat cream in a small saucepan. Gradually add in shredded pepper jack cheese. Spoon sauce over cooked chicken.

Serves 4 282 calories 1 carb



The best Greek restaurant is waiting in your freezer with this recipe. Just add some fresh yogurt sauce the day you eat it. Serve it with a big Greek salad.

5 pounds beef tips
2 cups cider vinegar
1/2 cup lemon juice
1/2 cup olive oil
3 Tablespoons dried oregano
1 Tablespoons thyme
1 1/2 teaspoons black pepper

Combine marinade ingredients. Place approximately 1 1/2 pounds of beef tips into each of three gallon size freezer bags. Pour 1/3 of the marinade into each bag and freeze.
To cook, thaw meat. Discard marinade and bake or pan fry.

Serves 12 476 calories 4 carbs
Yogurt Sauce:
1/2 cup seeded, shredded cucumber
1 teaspoons salt
1 cup plain yogurt , Greek style is best
1/4 cup sour cream
1 Tablespoon lemon juice
1/2 teaspoon vinegar
1 teaspoon olive oil
1 clove garlic, minced
1 teaspoon dill
1/2 teaspoon Greek seasoning

Blend all ingredients and serve over beef.



Take a trip to Italy tonight. Good with steamed veggies drenched in garlic butter.

4 boneless skinless chicken breasts
1 Tablespoon Italian seasoning
1 Tablespoon lemon juice
1/4 cup cooking sherry
½ teaspoon salt
1 8 ounce package of cream cheese

Put chicken breasts in crock pot and sprinkle Italian seasoning, salt and lemon juice on top. Add sherry. Let cook on low 4 hours if thawed and 8 hours from frozen. Remove chicken breasts and set aside. Add cream cheese. Stir until cream cheese is blended in. Add a bit of water if the sauce is too thick. Return chicken breasts to crock pot until heated through.

Serves 6 280 calories 2 carbs

What a day today has been! I am so proud of myself. I work in an Italian restaurant, and am in charge of all the training and hiring, as well as a server. Today, I was training the new managers in training on front of the house stuff, and there were certain foods we had to order so they can see the dish, taste the dish, learn the dish. The menu was...

Appetizers:
Spicy Ricotta Meatballs
Mac'n'cheese Bites
Mozzarella Fonduta

Entrees:
Salmon with a side of orzo
Chicken Scallopine with a side of cappellini

So, instead of making a fuss of it...I also ordered a side of asparagus. I took 2 of those spicy meatballs and put some of the fondue on top and ate that. I took some of the chicken scallopine, which comes with a lemon butter sauce, and ate that w/ half of the asparagus. I didn't make any comments on what or how I was eating, I literally picked out any cappellini that got into my chicken. I got a few weird looks, but hey...it didn't really bother me. Instead I felt a sense of empowerment that I could do this. And, that I wasn't afraid to do this!

Breakfast today was leftover sauteed cabbage with bacon, and I really couldn't even finish that. Drank lots of water today.

I planned on making that new pork recipe with bacon and cabbage, but when I got out of work it was so stinking hot outside that I am making chicken shish ka bobs and asparagus out on teh grill instead.

I feel amazing. I am starting to feel a little more comfy in my clothes. They aren't exactly loose on me, but definitely noticing a difference in the way they are fitting today. And...I can't stop smiling. Plus I peed on a stick today and I am officially in rosy pink, sort of purple ketosis Yay me!!!

My weigh-in this morning was the same lol. 198.4. Today I think I am going to measure myself, and maybe see if I am shedding inches My sister is coming for lunch today, and I have decided to make bacon cheeseburgers on oopsie rolls and a cheesecake. I am trying to talk her into taking this low carb journey with me and want to impress her with the delicious food you can still eat while lc. So...because I am so busy baking and stuff this morning, breakfast has been a hodge podge of leftovers from the fridge. Heated up 2 kosher hotdogs, topped them with lc chili, drizzle of low sugar ketchup, drizzle of mustard, sprinkle of shredded cheddar and a tsp of pickle relish. I am eating this right now as I type I am not a big hot dog person...what so ever. But, these kosher hotdogs have a nice bite to the casing and taste pretty delicious.

Today and tomorrow are my days off. Every thursday I make food for my son's football team. We have a big dinner for them Thurs night before the game on friday. This week, the mom's have decided to have a taco bar. I am in charge of the meat. 15 lbs of ground meat~not only was it expensive, but it is going to literally take me all day to cook that much ground meat lol.

I am excited to have these oopsie rolls. They smell so delicious baking. I took someones advice and added parm cheese, garlic salt and oregano to them. I hope they are as good as they smell

Last night, Andrew (my son) was determined to watch the Indians game. We haven't had October baseball in Cleveland in YEARS. So, ofcourse, Christian ( my 11 year old) did not want to watch baseball To avoid an argument, I asked Christian to go on a walk with me. And, walk we did. I was trying to make peace and instead gained so much more. We walked for almost an hour. And talked. And, I loved it. Not only was I getting my exercise, I was bonding with my son. He asked me if we could do it again today. My heart is just beaming!!

Hey welcome back greengeny!
That is so sweet about your son and the walk...I can't wait to do that with my little boy one day...right now its just all about keeping up w/ him and keeping him on the sidewalk and away from the street!
I think you asked me a while back for my shrimp enchilada recipe, I'll have to put it together for you - it's one of those I sort of just wing every time
