Okay... I guess I need to jump on the coconut oil bandwagon!!! LOL

I may try making some coconut bark... I saw a recipe for some. And I have a scar on my arm I am dying to get rid of!!!

OMG Girls! My trip to San Diego was an EPIC FAIL!!! After 2 cancelled flights and a missed connection, I ended up spending the night in NYC. Sounds good,right? WRONG. Of course it is the night that the President is in town AND they are lighting the Rockefeller Center Tree. Can you say Traffic Gridlock? It was insane there last night and this morning! My brother and his wife live on the upper west side, so I called them to go to dinner. By the time I got there, It was 10:30 at night, I was starving! We went to a Chinese restaurant, and I go and eat dim sum,spring roll,edamame, AND sushi! Holy travel stress induced carb binge from hell! I'm so ticked at myself. I let the stress of missing my meetings and just getting too tired get to me. I should never have gone so long without eating! It was a recipe for disaster!
Back on track today. I felt better when I decided to scrap the west coast all together and just come home.
Cee Cee. The bar was OK, not great. Also, it was a lot smaller than some of the atkins bars that have the same cals and carbs. I'd say they are an ok snack, but they wouldn't make a meal.
Well, glad to be home anyway!

Man you didn't get to SD after all? I lived out there after college for 6 years, OMG I love CA, it was so expensive to live there but I loved it!

We watched the tree lighting last night, I had that meeting and got home at 8:30 so we could watch, we are going to NYC the weekend of 12/17 for the night we always go see the tree and the sites and hit canal street for knock offs, LOL

Well when we are tired, and stressed is when temptation calls, surprisingly you wont gain a ton from sushi maybe the soy bloat the next day but it doesn't seem to make you gain like pizza or sugar! I had plenty of sushi episodes, there is a sushi buffet in Vegas we love, OMG Todi, they are a chain, allt this glorious sushi being rolled by a team right in front of you and seafood, and mongolian grill, OMG it is so good, now i want sushi! LOL

I know. I love San Diego! all of southern California, actually. I get to go a couple of times a year because my corporate office is in Orange County. So I'll probably get there in a month or 2.
Aw Man! I am going to be in NYC Dec. 14-16 for work and shopping! My one friend Carm and I love to do the whole Canal Street thing. I'll let you know if we hit any goldmines!
My Birthday is in December, and when I was a kid, my parents used to take me into the City to see the Radio City Music Hall Christmas show and see the tree. Good times! I love Christmas!! The City is all decked out already!
Sorry to tempt you with Sushi! I am not going to weigh until next Wednesday for the challenge (probably I will, but I won't record it. I always try to avoid the scale, but it lures me!) I'm in this for the long haul. Life is going to happen from time to time...

OK.
Here are a few things I have discovered and love:
1. Celestial Seasons Sugar Cookie Sleigh Ride herbal tea. I am drinking a cup right now with splenda and coconut oil melted in. tastes like a christmas cookie! I also like candy cane lane!
2. Polar seltzer Candy Cane flavor. I spied holiday flavors and tried one of each. For the record...the eggnog flavor was just meh. The cinnamon was YUCK!

I am going to try and make some coconut bark. Janet? Do you have a recipe you recommend? I've seen bunches on here!

Hi Meg! I didn't know you had a journal-- that's great! POST POST POST and POST some more! It is one of the very best tools you can have to keep yourself going strong!

Low carbing is awesome and makes you feel good and tastes amazing and WORKS! We can do it!

Oh I would use the most basic recipe - coconut oil, sweetener, and cocoa. I tried to get all fancy with it and it went badly - yuk!
Splenda doesn't work well with chocolate unfortunately but I did like it made with Truvia.

Yeah, we're cool like that. LOL!

Truvia is a good one, but if you can get Steviva Blend or Heartland's Ideal Sweetener, I'd go for those instead. Those are some mighty good sweets! Bakes nicely!

Meg- Wegman's sells the Ideal sweeteners if you have one near you!!!!

I know we always got o NYC for Christmas with Mom, we have since I was a kid we always went to the Rockette's show, my son is not so into it so we dont go anymore, but it is a fun tradition!!! I love seeing the city all lit up, I like to visit but I could never live there!!!

That seltzer sounds good! The have metromint water here it feels like you just brushed your teeth so I drink that after my coffee and feel so fresh, LOL

That coconut bark recipe is simple... might have to try it. I have some xylitol... may use that as my sweetner. I hate the splenda aftertaste...bleeehhh! But ideal is good.... got that from Ang.

I have Wegmans...This is where Wegmans started (well actually it was Rochester, but close enough!) so I will go get the Ideal today. They have a lot of interesting things in the natures market place. I waste a lot of time dawdling around in there! I love Wegmans. It's funny. I grew up on Long Island, so when my Mom and Dad brought me to Buffalo for college, my Mom was in awe of Wegmans. We never saw a supermarket like that!!! She still talks about it to this day!! and that was a lot of years ago. A LOT!! Now a lot of stores are doing similar things, but there will never be another Wegmans!!
I woke up this morning, and it seems that the cold I have been fighting has won! I am working from home today, so maybe I can catch a nap! I don't want to be sick for the weekend!
We have a Christmas Party tomorrow night. Other than the wine, I'm not too worried. I will eat dinner before we go and I'm bringing my famous peppers which just happen to be low carb. I stuff jalapenos with sausage,cream cheese,sauteed onions, top with shredded cheddar and bake. They are so good!! they go quick. Everyone always asks me to bring them wherever I go.
I am going to be perfectly on plan today!
B- OMM with coconut oil
L- chicken salad with celery and baby carrots
D Home made Beef Vegetable soup. I may put a coco pop with laughing cow cheese spread on it on the side if I am feeling munchy.
I am going to try not to snack, but again if I feel munchy, I'll have sugar cookie sleigh ride tea with coconut oil, and if that doesn't help, there's always raw veggies and string cheese!!
I am going to do this!!!
Back to the Gym tomorrow 9am for body sculpting!!

All the Wegman's were like an hour away from me, and now they put a brand new one in right across from Tony's office, OMG I could spend hours in there, and spend so much, that cheese counter!!!!! I am sort of glad there is not one too close, cause man I would spend so much there!

Those peppers sound good!!!!

Kitty! I bet you get one at some point...they are in NE PA, my folks have one byt them (they live near Scranton) so they just need to move west!!
Meg's Peppers
Fresh jalapenos (sliced lengthwise,seeds removed...wear gloves!!)
1 small onion chopped fine
1 roll bulk sausage (such as Jimmy Deans)
1 pkg cream cheese
Shredded Cheddar
Sautee the onion in olive oil until soft. Add sausage and cook through. (drain if necesssary) Add Cream Cheese and incorporate until it is all through the stuffing. Allow stuffing to cool a bit. Stuff into the peppers and top with cheese. Bake a 350 for 30 minutes, or until peppers are soft and cheese is melted. YUM. They are good hot or at room temp.
Sometimes I have trouble finding the fresh jalapenos, so I get the red yellow and orange sweet peppers of similar size. To add heat, I puree half a jar of pickled jalapenos and add them to the stuffing. These are hot, and if you use this method, you have a bit more control. We love heat here!

OK, so TOM started today and my cold is worse. I am actually sneezy,snotty,crampy and *****y all at once. Look away! I'm hideous!

I had a good day on plan yesterday. Today will be good as well!

D-I'm going to make a Linda Sue recipe with Ground beef...not sure what yet...

I did not go to the gym because I am so congested I can't breathe sitting still. If I feel better later, I will take my sweet Roxy for a nice long walk. Not exactly a work out, but better than nothing. I figure if I can just do something each day, it's a start!

We have a Party tonight. May have hubby do the peppers for me so as not to spread my germs! He's a great cook.

Glam,
Coco Pops are these rice cakeish thingy's I found at Wegmans (where else?) They have 20 cal and 3 net carbs. They are a good size...larger in circumfrance and flatter than a regular rice cake. They don't really taste like anything, but they are a nice vehicle for cheese or peanut butter. they do have wheat along with rice in them, so no good if you avoid that. I'm not sensitive, so they work for me!

UGH! I am not feeling well today. Still have the cold, and TOM and now the vodka flu! ACK! Vodka and Soda has no carbs, but apparently I am a lightweight. Bah Humbug! no more Christmas cheer for me! Well not this week anyway.
