OK....planning on making the Black Bean Cake...the chocolatey sinful one you posted way back....Got a question to see if you or anyone else can answer:

The sweeteners....What have you used? The recipe calls for the mixture...

I want to make this for a pool/birthday party so there will be a lowcarb/gf dessert available. I want it to come out the best I can get it.

Looks like I used Steviva for that recipe-- but Steviva measures 1/2 of Ideal and cane sugar-- so maybe 1.5 cups Ideal?

In a bowl, whisk cocoa powder, baking powder and baking soda

Add beans to creamed butter mixture, blend well, then add dry ingredients. Pour into prepared pan and bake.

Hi Seabreezes! I used coconut oil for a real carrot cake many years ago, and it totally ruined the cake, made it too flat, dense and greasy. I haven't used it for baked goods since-- too worried to ruin more expensive ingredients-- It could have been purely a mistake on my part (I make a lot of those while cooking-- and sewing lol--) and maybe someone else has had better luck. If a recipe calls for oil I use the Light Olive Oil I get at Costco. I always cook with this stuff-- rub it on meats, use it to fry stuff up if not using butter, etc. It bakes beautifully. Of course I use extra virgin on salads and raw stuff, but baking & cooking gets the light. The bean cake is totally bizarre! How liquified beans turn into cake I have no idea.

Yeah that bean cake was pretty darn good, even though I used splenda LOL I love splenda, the liquid stuff, 0 carbs!! Might have to defrost a piece now that I am looking at it, LOL

Steph- it really tastes like chocolate cake, I htink you had to let it get cold first? It didnt taste so good hot, not like a hot brownie,but cold it totally tastes chocolaty!

Didn't get it made...yet....Got side tracked and then had to run to the store. Thought I'd get the stevia...got Sweet Leaf packets...All Natural Stevia Plus....So will this work? Hmmmmm IDK, but will try it.

HOLD UP KITTY!!! Steviva Blend is not Stevia... Plain stevia is near impossible to bake with... or even use, for that matter. If you don't get it juuuuust right it just tastes gross... bitter. Stevia can be baked with, but it needs to be mixed with something, like erythritol (which is what the Steviva Blend is-- erythritol and stevia) or xylitol to make it a good cane sugar replacement. I see that what you got is mixed with inulin, that's a good thing... but using it alone for baking I don't know? I can't wait to hear if it worked or not, I've always been disappointed with plain stevia, but I have never had the brand you bought. What other sweeteners do you have? Can you mix them? I have always been disappointed using plain stevia in stuff. How about Truvia? That is like Steviva's less talented sister, similar, but just not quite as good tasting.

Now I want cake, too. CUPCAKES!

I would just use the Ideal-- I've had excellent turn outs with that stuff, the baked sweet doesn't taste weird at all. If you use too much you can taste the Splenda-- which I loathe-- but the right amount tastes very very nice.

Plus it's nice to work with because it measures cup for cup like cane sugar. Easy peasy.

Had a weird weight day-- weighed in at 248 mid-afternoon with all my clothes on after food and drink and everything. That's just weird! I was expecting the high 250's for sure. ha! ha! I've been eating like a low carb pig the past few days!! Dare I hope "just eat low carb" is working again?? I doubt it. I am not that lucky.

Everything is fine, mock up dress sent away, spent an hour in the pool with the family, now I'm going to go watch SYTYCD and hit the hay. Good night all!

Thanks sweet lady! I thought about that after I finished my last post, thinking that reading this stuff is not helping my situation! LOL
What aminos do you take and how long did it take to make a difference. I started taking tyrosine and 5-htp after reading the mood cure. Maybe I didn't take it long enough. I used to be so diligent about taking my supplements (maybe 15 a day) now I'm lucky to remember my vitamin c and b.....which reminds me...

I need to push past this feeling of being stuck in quicksand, get off my arse and do something physical, I managed to do my fast track for 5 minutes today, but started feeling it in my right foot so, got off and iced. I'm not giving up though. Will try it again tonight. Plan to start walking a few minutes in the park and work my way back up. Need to strengthen my feet so I can walk again for exercise...
