Low Carbing in Baguette Land

Hi! My name is Diane and I just started on the Atkins Diet. I am still in the induction phase. I lost quite a bit of weight on this diet about ten years ago and then gained it all back when I went through an emotional divorce, lost my mother, my house and several other devestating incidences all within a three year period. THe last one being something I didnt even realize until last year. My thyroid died. I moved here to France four years ago expecting the pounds to just drop off me, after all they dont eat a lot of processed food, blah blah blah. My head was full of it, problem was my body didn't cooperate.
The truth is I did change my diet quite a bit, my Frenchie likes to eat fresh food, nice meat and fresh veggies and LOTS of bread. It was a very healthy diet and one I wasnt used to but I didn't lose my weight. In fact I started suffering from insomnia, headaches, muscle cramps and lots of other unpleasantness. They discovered my thyroid had left the building. I am now on hormone therapy and thought the pounds would just drop off. Not.
Right before my thyroid problem was discovered I also fell on the ice, Dec 2009. I injured my neck, back and hip. The hip never healed. It just gradually got worse.I thought I needed to walk more but every time I did it got even worse. Doc finally sent me to a specialist who shot me full of cortisone. Twice. It didn't do a thing except cause a problem with my retina in my eye. Wow! I wasn't expecting that. Then she sent me to PT and they worked on me for two and a half months. NO improvement.
Now I sit at home, I am not allowed to walk anywhere, climb stairs or exercise. Also because of my eye I am not allowed to work. Enough is ENOUGH! Even though my hubby thinks I am crazy to do this diet that requires no bread...NO BREAD!!!! What am I crazy?!?!? Well even though....I am doing it! I can't take this any more. I need to get this weight off these poor bones. I need to be able to walk again. SO this is the beginning of my journey. It will be difficult. I don't have access to all the foods that are available in America, but I am determined and really want to make this a success.
My first goal is to get onto these feet and be fit to enjoy the vacation my hubby surprised me with. A four day visit to the Mediterranean in June.

good luck. sorry you have been through so much! *hugs* losing the weight should help some and make you feel better. it's really not that hard once you get into the swing of it, but unfortunately it probably means no bread ever. the maintenance part is harder than losing. I think you can do it!

Thank you ravenrose! I feel very positive about this. My hip is already feeling better than it has in a long time and I really believe that as the weight goes off the body will be breathing a big sigh of relief!

So today started out late! I slept till almost noon but I assume it was just recovering from yesterday. I had my IUD replaced with a new one with progesterone, hopefully it will treat me better. Seeing as I am on coumadin the first was probably not a good choice

After my procedure yesterday DOc gave me permission to stop by the shopping mall on my way home to do a short swing through, It's right next to the tram stop so I would have walked by it anyway. I went into Darty looking for a coffee grinder and of course failed. YOu would be amazed at the things I can't find easily here. Why don't the french have coffee mills right next to their expresso machines in the store

I also went to the grocery store there in the mall. I never shop there because it is a little pricey but it has different products than the other stores so I thought it would help with my low carb product search. In the vegetable department I saw the strangest big lompy potato looking veggie but had no idea what it was (remember all the veggies are in French and I had no translation) sure enough when I got home and looked it up I realized I could have used it. It was celeriac and I wouldn't mind trying it out. I did pick up some turnips to try with something. I have a lot of experimenting to do!
I found a great strawberry preserves. It has no suger and the fiber is as high as the carbs which I assume means this is a free food? If so WOOO-HOOO I bought some nice Black Forest Bacon and some shrimp to have wrapped shrimp. I love those! I also bought some flavored fizzy water with no carbs, coconut-lime, to try out. I am using a syrup made with stevia in my water right now Strawberry-Cranberry that is pretty good. It is very common here to buy syrups to add to your water. I was just very lucky to find one bottle that was made with Stevia!
SO my big shopping trip was a success but i probably overdid it as I had two bags packed to the gills and even the short walk to the tram and the short walk to the house from the tram about did me in. I was a lump all last night and thus...the 13 hours sleep :blush:
I want to be good like everyone else and write out my menus, etc. THe truth is I was a snacky ho yesterday and would be embarassed to write what I ate but I will try to do better and have beautiful menus that I would be proud to write down. RIght now though I am at that point where I walk in the kitchen and go "What on earth can I eat for lunch?" and then shrug and grab a slice of cheese and lunchmeat.

Oh one thing I forgot...at the store I found all kinds of nuts! ALl the others carry the regular almonds, hazelnuts and walnuts. I found macadamia, brazil, cashew, sunflower AND pumpkin seeds too! That was a big score, expensive but wow am I happy!

SO today I will spend perusing recipes, trying to sort this new life into some semblance of order. I feel very lost without a nice pile of recipes to turn to and this forum seems to have a wealth of them!

Well I am not a happy camper right now. I went to do my daily weigh in and I had gained back the whole pound I lost yesterday. Poo!
Here I was all happy yesterday and patting myself on the back. Telling myself, "yeah, see you can do this, it is working."
Today I just want to tape my mouth shut! I KNOW I gianed because I grazed all day yesterday. I couldn't resist trying a few of every single nut I bought yesterday. Duh! It still is discouraging. I am going to try very hard today to not snack. I really need to get some meal plans together!

Thanks so much Laura, I really appreciate the support. It gets quite lonely here with no one to talk to and I hate to wear DH down with my woes. WHen he walks in the door from work I just want to make him feel loved and help him relax. He is so good to me and works so hard I hate to be all 'poor pitiful me' on him all the time

So I did pretty well yesterday I think besides the weigh in. I am not going to let a little weight fluctuating get me down for long!

I started my morning with a MIM which I found the recipe here on the boards. I only had almond flour to make it with as I am still waiting for my coffee grinder for the flax seed. I found it very satisfying and filling and I wasnt hungry all morning.

For lunch I cooked up some Mergrez sausages with onions and mushrooms then poured a carton of Velouté de potiron over the top to make a soup. I then added a sprinkling of stevia and another of cayenne. Sweet and spicy, YES! Velouté de potiron is just a nice soup with cream in it made with potiron which is very similar to pumpkin but its not. This one drove me crazy when I first moved here. I thought it was pumpkin but wasnt sure because it has very deep defined ridges so each section bulges out. Turns out its NOT a pumpkin, it's a squash. Pumpkin is called citrouille here. Anyway the carb count on this soup is about 14g for the whole carton of 500ml so I split the dish into three parts making my lunch around 6 carbs. Not bad and it was delicious! I popped one of the portioins into the freezer for later and one is for today for lunch

FOr dinner I stuck a chicken on the rotisserie with my special blend of spices, made the pan roasted garlic cauliflower and a small saled with spinach, mache, lettuce a few brocolli florets and one cherry tomato. Dinner was great too!

After dinner I had the most terrible craving for sweets. Worst I have had for awhile. I consoled myself with about 15 pumpkin seeds. Wasn't really what I wanted but it helped.

I also had three cups of coffee with two teaspoons of cream and 1/2 teaspoon of stevia in each through the day.

All in all I thought it was a good food day. No bad snacking. No out of control portions and I felt fairly satisfied all day. I felt much better yesterday than the day before. Not so weak and I think I am recovered from the procedure well. Hip didnt bother me at all and I went to bed with only one pain pill again. I did wake up this morning with pain but it's still much better than it was.

I am going to get my blood tested today. I have been on my new vitamins for five days now and my diet for two weeks. I need to make sure that my coumadin levels are good as I am sure this will fluctuate them some. I will probably have to get a test every week or two for awhile till I settle into a steady diet. Food seriously affects the clotting effect in your blood. If you eat a lot of spinach or other dark leafy greens they can make your blood clot quicker. VItamins also can have an effect.

So today I will try out a few stretching exercises and otherwise another long empty day of not being allowed to work much. I am afraid I have settled into this and dont even seem to want to do the things I know I am allowed to do. I must shake myself out of the slump. I might not be able to do up close work but I can still run a sewing machine!

Here's hoping for another successful food day. I can do this!

Frenchie- I found you!! Now there are so many things I want to say I am going to forget!! LOL

First of all I have an IUD with the hormones in so no periods, until I started LC'ing and really lost a lot of weight quickly, I had tests to see if was slipping out of place, etc my GYN said it is from the weight loss so if you experience some bleeding it may be from that, since my weight loss has slowed a bit so has the bleeding, you will love it!

You have had many unfortunate incidents! I am so sorry but thank God for a supportive husband and hey you live in a great place!!! I know that doesn't help! But you can do this for you!!!!

The celeric I peel with a potato peeler and slice with a mandolin and deep fry like chips OMG you can also mash it!

White bread is evil let those skinny French girls eat it and wait to get fat, LOL

Watch your veggies with the coumadin my Gram is on that and she had to get checked often at first know she knows what effects it.

I would encourage you to keep a food journal even if just for you, and record what you are eating, sometimes this is helpful if youa re not losing to then post and see what is stalling you.

I go back and forth with ****** but prefer to just write it down in a book, then I can say well too many SF candies or whatever if I dont have a good week!

Drink your water that is huge! It flushes all those nasty fat cells!

Thanks so much Amber for stopping by, I really appreciate your encouragement. I hadn't considerd the weight loss as triggering bleeding but thanks for the heads up on that. I really wont mind though cause it will mean I am LOSING WEIGHT!
My life has been pretty crazy before I came here and even after I did with the health issues but I have to look at it this way: everything that has happened to me has made me the person that I am now. I am a much stronger person these days and also much more sympathetic to others. I try my hardest to be my best, to help whenever I can and just love people. There are certain things that when they happen to you they change you for life. I can't say that I would wish any of those things to happen to me again but they definitely made me a better person. Life now is just gravy though I'm not so sure I would have appreciated the gravy pre-pulminary embolism and other disasters KWIM?
THanks for the tips on the celeriac. I will definitely be back there to get some. They also had something I thought was a parsnip but they called it a carrote blanc so I have to look it up before I go
I had my blood test today and told the tech I will be coming back frequently for awhile till I am sure my dosage is correct for this. Last thing I need is to throw a clot again!
I plan on writing in this journal each day about what I eat so I can get an idea of whats working and what's not. Today I am stymied as I weighed myself at my regular time again and I didnt gain or lose anything. SO yesterday I gained a pound, stayed on track with food all day yesterday and today and didnt change today. I will be patient though...I realize this can take time. It certainly did to put it on!

Hi there nice to meet you. Sorry you have been through so much, you are a brave person. I would find it impossible to live in France and not eat bread so kudos to you! I also know how lonely it can be living in a place when you dont speak the language & not just that but the habits and things they see as normal and to you it's like huh...My husband is Dutch and I lived there for a while but now I know I can never live anywhere that doesnt speak english hehe. The few times i've been in France have been difficult becasue no one seems to speak english, even ordering food in the resturants and signs ect. & that was in Paris!

There a are some websites that deliver all over europe and I think it's called lowcarbmegastore.co.uk or something along thoes lines.

You are right, it is very difficult to live here as I don't pick up languages well. I have never been able to speak anything except english till now. I can speak french to a point, enough to ask for something at a store or have a simple conversation. Hubby says my vocabulary is great. My big problem is...I dont understand a damn word they say to me Seriously if they dont speak very slow and clearly I just stand there with a confused look on my face. LOL It's my own fault. I work at home so rarely rub elbows with anyone and hubby speaks english with me always. I know we should speak French but he is called upon to use his english at work so it is important that he keep his english skills polished. Since I get by ok I am not so worried about my French. They are still wonderful people and very freindly for the most part

Hi Diane! I'm so glad you started a journal! Sorry I'm so late to the party, lol. Journaling has really helped me, and I think it will really help you, too-- especially since you have no one to blabber with at home. (I know a husband can only take so much!) Just let it all out here, write and write and write and write and let it all out. It helps so much!

As far as living with a non-low carber who eats bread-- DON'T SWEAT IT! I have two in the house and it's no big deal. I used to be the biggest bread ho you could ever imagine, and I broke free. It can be done! My husband and son eat bread and cereal and pancakes and rice and so on-- AND I DON'T CARE. It took a while to get here, and I used substitutes for a while to get me through (Like Julian Bread) but I haven't had any bread in months and I'm still fine. Have you tried the Revolution rolls, yet? Since you are a baker, you need to perfect them. When they are made properly, they are very very bread like! They remind me of a mcdonald's hamburger bun half. The ones I make really do have a bready texture-- but to keep them bready and not grotesquely eggy you have to refridgerate them overnight and eat them COLD-- never ever warm. If they are warmed at all, they get that gross slimy eggy feel-- but cold they are like cheap white bread, perfect for a sandwich! I don't know why this is, but it has been the case with the ones I've been making.

Pooti makes them on her blog-- Fluffy Chix Cook and they can be used savory or sweet. I've been known to load a cold one with butter and cinnamon "sugar" when I was desperate for a sweet.

Also, Cleochatra makes what she calls "oopsies" and it is also an excellent recipe. Your Lighter Side...: The Sailor Scouts make my Revol-oopsie rolls! Her whole wesbite there has some great recipes that don't really need special stuff to make.

You are going to be fine! Stay here with us and we will all get through it together! You already have your fabulous yummy French husband and live in a land of castles (sheesh!!) and now you have us. Let's get to feeling better!

Another thing you need to watch out for is the carb count on European labels-- THEY ALMOST ALWAYS DEDUCT THE FIBER ALREADY. So, the carb count on the label IS the net carb count. Maybe call the company to confirm this so you won't be eating more carbs than you think you are!

Angela~ THank you for the great advice, I definitely plan on doing some writing. I don't really think I could do this alone. I see myself giving up in no time at all if I did.

So far I have done well without the bread and I have made the RR several times, each time they seem to turn out different I also made the MIM twice now though I feel like I might be cheating since they use almond flour. If I dont start going down again in my weight I might have to reconsider those!

I had no idea they already subtract the fiber from the carbs here. So far I have only used a few products that are ready made, the soup only had 1 gr of fiber so it wouldnt mess up the count to much anyway but the jam I bought says 15g of carbs and 15 grams of fiber. If what you say is true thats 30g of carbs which is ouch! (although still not as bad as regular jam) This brand is Glucoregul for diabetics and I couldnt find any info on wether they subtracted the fiber or not. I would call the company but wouldnt understand a word they said Not like I HAVE to have jam though...

The jelly is probably low carb if it is for diabetics. MIM I can tell you I love those freaking things but too much flax and almond flour stalls me so I quit making them although sometimes for a treat they rock!! I like the one with PB in it which is not the best either!! But sometimes on a cold day here they were just good in the morning! For jelly might be best to take some fresh berries and splenda or stevia and see if you heat it if it thickens! I saw Paula Dean today making brown sugar bars I am thinking of trying them with the Ideal Brown Sugar I got although I am a baking disaster!

Hello Amber I do like the MIM, they have been a nice breakfast addition. I have a hard time with eggs sometimes. I am a very moody eater. Lately eggs just haven't been on my list of wants. It would help if getting decent sausage was easier. They dont have breakfast links here at all. I normally get my groceries delivered and I ordered ground sausage. I was going to season it and make patties to put in the freezer. Of course when I got it, it wasnt plain sausage. They have this mix here that is very popular, they use it to make a certain dish and it has all the herbs mixed in to make it. For some reason they think if you order ground sausage that it doesn't matter if they send you that stuff instead because thats what everyone here uses it for. So I need to go to the store and buy some regular sausage to make patties. Maybe if I have them I will be more interested i eggs. Either that or make a quiche, although I'm a bit burned out on quiche.

I feel like I am failing miserably and was very disappointed with myself yesterday. I keep eating foods that arent allowed on induction, and though I have been on induction for two weeks I dont feel I should be moving out of it yet. I think I need to reread the book a bit. I am getting lost on where I should be!

Snack: around 15 pumpkin seeds
Supper: Crab Salad made with 2c Napa Cabbage, 1 can crab, 1/2 red pepper
sauce: mayonaisse, white wine vinegar, stevia, garlic, salt, pepper, lemon juice, worcestershire sauce, hot pepper sauce.
snack: 2 cheese crackers and 1 snicker doodle

So I did very well all day. Didnt have any hunger as breakfast and lunch were both quite satisfying. I did my errands and had my blood test (all the places i needed to go are within two blocks of my house so I am allowed to walk there, I live in a tiny village) After getting home I was too sore to try any exercise. My hip is acting back up. It still isn't as bad as it was two weeks ago. Maybe I irritated it carrying groceries home the other day.

I didn't start having trouble till evening. I went and made the crab salad and put it in the fridge to chill till DH got home. I was already hungry and the one bite I took of it when making it had set me off. I wanted to eat right then! DH works fairly late most nights and it's not rare to see him coming in at 8. I went ahead and ate the few sunflower seeds to help and it did for awhile. By the time he got home I was starving! I had my salad but I was still hungry. I decided to go ahead and bake up some RR and some cheese crackers so I would have some for the weekend. Well my first batch of crackers went to the cracker monster...my dear Frenchie! He doesnt care if something is low carb, high carb of deep fried in fat...that man will eat anything I think. So he devoured my first pan of crackers LOL. I went ahead and made another pan and had a few crackers myself. Then I made a big batch of RR, long skinny ones for hot dogs (they have the best hotdogs here!) and regular bun rolls for breakfast. That's when my sweet tooth kicked in. I decided to try my hand at a low carb cookie. Well they went together easy, they smelled fantastic and they cooked up like a dream. Perfect little snicker doodles. OMG! THen I ate one. IT was so sweet it was awful! I guess I should be thankful it was so sweet. IF it hadnt have been I probably would have had more. *sigh* I have such a sweet tooth. I really need to find an induction friendly dessert because if I can't have a sweet every day I am pretty sure I will fail this diet. I knew I was being bad when I started making them and I made them anyway. Sometimes I am my own worst enemy

Diane- I eat at like 4:30 me and my son, poor Tony gets the heated up microwave plate, LOL I am too hungry and I like to eat before the gym I would never last til 8 pm. Snickerdoodles OMG that sounds good!!!!!!!! THe crab salad sounds good!

We have been making a savoy cabbage slaw that i love, rice wine viengar a little splenda a little sesame oil and some green onions and toasted sesame seeds, I love cabbage but get sick of having it the same way!

That is cool you are close to Germany, there is another girl on here she is living in England, she is American her husband has one more year and they are moving to Germany next month, she is from Philadelphia and here now, maybe you 2 will hook up when she gets her butt back on here!

Can you get SF candy anywhere there? I would die wihout my SF candies the malitol helps keep me regular, LOL As you saw I have a large bowl and a stockpile in case I can never find it again!!! LOL

The snicker Doodles are Low Carb, made with almond flour and they would be good if not so sweet...I think

I havent found any SF candy yet but then I am not supposed to be doing anything really so only buying online, or what I found at that one store on the way home from the docs. I did find a 'bio' store in Strasbourg that I want to visit. Hopefully they will have more there but I know for a fact there are not a lot of low carbers over here. It hasnt caught on as much.

I would LOVE to have some malitol right now :blush:

Diane make you a Photobucket account if you don't already have one. Upload the pictures from your computer to the site. After they are uploaded click onto Share, then the get link button at the top. Next is to put a check into the the section that has IMG for Bulletin Boards & Forums. I do the full size pics. Left click onto the code and scroll your mouse over it to highlight it, now copy it and past it in your post....It works better for me if I have 2 windows open, LCF"s and Photobucket at the same time. I hope this helps.
