Glad you all enjoyed the pictures. Angela...old enough to know better, young enough to do it anyway

SO I did ok on the diet yesterday, had a shake for breakfast, two strasbourg sausages fro lunch and beef roast for dinner, afterwards I whipped up some cream and had it over about 5 or 6 sliced strawberries. My body was craving fruit so much and it was just WONDERFUL. Today I plan on making a huge salad and really look forward to that. My meals have been quite boring without veggies in the house. I am still disappointed in myself for forgetting the mozzarella. I wanted to try Pooti's recipe for RR. wonder if I could use brie instead

I also did good with work yesterday. I got several things listed in my shop which have been sitting here waiting for a LONG time. My business really has been suffering from all this and I hope to bring it back to life

Oops, I forgot to say that I had a few of my brownie bites with coffee for snack yesterday

THanks Majella, I can't wait to go there again, it was so beautiful and I had such a good tijme. I really want to be in good enough shape to enjoy it and I can't wait to go on nice walks on the beach with him again

Yes Amber she is even taller than my sister! I don't know too many who top 6 foot.

He actually is younger than my oldest son but not by much. Too tell you the truth though, he doesnt act it at all, I never really even think of him as being young. My kids..well they are kids to me and the maturity level here in europe is way different than in the states. I definitely feel younger than him on a regular basis but then...I never did grow up :P He can be Mr. Serious and already has risen far in his company and has a lot of responsibility. All I know is it works. We have been together almost five years now and still are just as crazy about each other as when we met. That's what matters!

Diane you look so beautiful My hubby is Dutch and we met online 10yrs ago when I was 18 anyway he moved over and it's been a mad rollercoaster since! He really does adore me and never expects or wants anything back! Irish men are not like that at all & I had no intention of being a good housewife slave lol Err I had a point there somewhere....European men are well trained I mean raised hehe no seriously he not macho and he is nice and sentisive and sounds like your frenchie to me

Good Morning Pooti! I havent tried the foccaccia, I am leaning towards tomato soup and toasted cheese this afternoon if I can figure out how to use these, did you slice them? I did have two of the slider buns last night and really indulged in a wonderful hamburger with Linda's Even better than Heinz Ketchup and Sweet Potato Fries! Such a bad girl and sooooo good! I realize the sweet potatoes are kinda hefty in the carbs but I didn't over eat them and they were delicious. Even hubby liked them. I will limit them to treats though

Majella~ I met my hubs online too. He was coming to the US and a friend introduced us as he thought I could give him good advice. I have travelled extensively in the US. I started chatting to him and we hit it off immediately. so much so that when he flew to the US, he flew straight to Seattle. The minute we met IRL I think we both knew it was meant to be. It took a lot of work to pull it off and a lot of major life changes but we were married 13 months later in a chateau in Bordeaux and it was the happiest day of my life! Your hubby sounds like a sweetheart too. What is it about these European boys?

Girls if you need a magic jacket just grab your hubbys old hooded zip up jacket and wrap it round your waist and tie with the arms...there ya go

Diane, I sliced the focaccia into quarters.

Then I sliced each quarter in half horizontally so you have 2 pieces of bread-sized focaccia (4.5" x 4.5").

Then I flipped the slices inside out so that the sliced part is the outside part and put the cheese in the middle. I have pictures of that on the fluffychixcook(. blogspot.com) site if that will help!

On the slider rolls, I actually split those the same kinda way cuz if I eat two whole rolls it's sometimes just too much for me and I like the thinner bread cuz it's not so dry. But it's your preference. They are certainly low carb enough to have two and not that many calories either!

I don't worry about the sweet potatoes either! I just eat 'em! (portion control is a must with them or they make my blood sugar kookoo.) I like to mix them with ugly green beans. Perfect ketchup delivery system.

Laura no plans for us except Frenchie is watching the play offs.

Pooti- Thanks for the tips, I'm not so sure I made it thick enough to slice but I will see. I put it in the jelly roll pan instead, wasn't paying attention...also forgot the rosemary I dont mind the thicker ones for hamburgers but I could see them working sliced too with the buns.
I LOVE the sweet potatoes and anything that works as a good ketchup delivery system is ok in my book

Hubby is in computer programming and such. He is the guy that tests high security programs to make sure that they WONT crash after they are implemented. Think...bank software, air traffic control, satellite systems, and other governments type software. HE builds big replicas of the systems and runs series of tests on them to try and make them crash. From what I understand he is pretty good at his job and he is also very good at coordinating people so he is sorta the go between for several teams that work in different citys. I don't even begin to understand it all...

Diane ok, well you can't slice them. I would just cut it in 8 or 12 squares, depending how big your pan is. I would use those for "buns" and breads. Don't know that I would toast them cuz I think they will taste too eggy. The reason the grilled cheese works is cuz you grill the inside part of the roll - the side that isn't already brown. If you overbrown this stuff it goes massively eggy. But you be the judge!

Yeah, if you split the recipe, you should do the focaccia in a 9x9 pan or an 8x8 pan. IF you do the whole recipe as focaccia you can put it in a jelly roll pan perfectly. Make sense?

You should really try the ugly green beans. I like brown food, so maybe that's why I love em so! LOL. But they are a great kds!

Wow on your hubby's job! Goodness gracious sakes alive! That's an important job! Denny's in computers also. He provides tech support and systems support for companies and individuals and also does a lot of FileMaker Pro Database development work. He has his own company.

...oh, and he is a techie, too! Some kind of hardware motherboard test engineer something or other. I love nerds!! They're the best.

I get what you mean about the toasting Pooti. I will check these and see if they are slicable but I think not. Looks like they are sandwich material for now and I will have to make another batch for the toasted cheese. Boo!

How funny my hubby is a geek too!! He's a lab tech but his real passion is computers he's now obsessed with Linux and talks my head off about it lol his biggest regret is that he didnt switch courses when he was in college to computer science. Whats a jelly roll pan? I missed something somewhere! I need to get into making things becasue I get bored easily but I'm a lazy sod I like things made already hehe. Heya Majella~ A jelly roll pan is just a bigger rectangular pan. People use them to make a thin sponge cake that they then put a filling on and roll. Like the yule cakes here that have that wonderful cream icing that goes in a swirl in the middle.
D made me use linex for the longest time when I first came here but I couldn't play my computer games on it so he put it back to windows. It is a great operating system, too bad a lot of software wont run on it.

So I havent been doing ANYTHING. I think I might be sick but I'm not even sure about that. The one thing I am sure of is...I feel like CRAP. Yesterday I had my shake for breakfast and then experimented on making different shakes so had another for lunch. Not sure if I can afford to have the shakes shipped here often and the lowcarb megastore is out of stock! I really like a shake for breakfast, I have never been a breakfast eater so they are perfect for me but I have no idea how to copy one. For dinner I had a wonderful chef salad with homemade ranch dressing. It was yummi.
I have had non stop headaches, stomach problems and just general ickiness. I have no energy, I dont want to do anything. yesterday I ended up taking a pain pill in the middle of the day and today I took one before I got out of bed. I normally only need them at night to sleep. I really hope this is just a passing flu because if not, I can't go on like this much longer. My weight has not fluctuated at all for three days, exactly the same. I have settled at right below 110kg after a week and a half of waffling back and forth. So here I sit. Sick, fat and tired. BLAH!
