It is such a reflief to know what is wrong and have a proper treatment plan, sounds like you have a good doc who is on target with her medications! I recently started taking Vit D just one a day

Baking Experiment today: FAIL

I took a stab at making some muffins. I decided cocnut-banana-choc chip was just what I wanted. I mixed up my batter subbing 1/2 cup of the flour mix with coconut flour and also added 1/2 cup of banana syrup as part of the sweetener. Chopped up almost half my dark choc candy bar as chips and added unsweetened coconut to the batter also. I thought I had compensated enough for the liquids adding an extra egg and a little extra liquid but no...they came out dryand a bit crumbly and when you eat one it dries your whole mouth out. I tried making a cream cheese frosting to go on top to add a little moisture. It tastes great, doesn't help. In fact it all tastes great. I got that part down. Now if they were just nice and moist...

P.S. Frenchie thinks they are great.

Add beans! lol. That's what I'm goign to try. Beans FTW!!!

The Healthy Indulgeances site has a white bean cupcake thing, why not give that a go and add all the otheer flavors you like to it? She also has a coconut flour poundcake that looks moist. So much to expiriment with! So little time.

I really do need to go read her ingredients and proportions. Probably not a good idea for me to wing it when I am working with all new ingredients. I cant help but think if I had stuck with my bake mix I made it would have been fine. I am thrilled the flavors taste good. I so wanted to add some applesauce...you have NO IDEA how much I wanted to It is very hard to go against old habits. It was also strange to be making banana anything without smashing a banana!

Low carb baking is full of FAIL, this I know. The bean cake, though was perfect, with a capital P.

Hey, since you mentioned that you have inflamation going on, wheat may be a culrpit. May or may not be your case, of course, but it's something to investigate. Wheat does cause quite a bit of inflamation in lots of people.

I would consider that but my blood test was done BEFORE I made anything with the wheat flours so I had actually been without wheat for a month. So no telling what it is!

THanks for the suggestion though. I have never really been allergic to anything but one medication in my whole life, let's hope I dont start!

Good Morning Girls! I slept in
Last night I just couldn't sleep at all! It was still a success as it was day 2 of no pain pills at night. I am going to continue to try not to use them unless absolutely necessary. I have a sister that is addicted to pain medication and so I am very leery of it. I hope this doesn't interupt my sleep too much though. DOc insisted I take it before as the pain was keeping me up all night.
So today is my first day of my new meds. I took my iron pill last night before I went to bed and my thyroid meds this morning. So I guess it's time I got serious about my diet again! I have been very lax with my food. Although I have stayed low carb I have also been eating any and everything I want as long as it's low carb. I am thinking I need to go back on induction again and see if the new meds will make a difference. Its been an entire month with no weight loss at all.
I think I will do induction for a week and if no drop in weight I will go down to 10g and see what happens. Although I have read some people saying that I shouldn't go under 30g with the thyroid problems I have seen several people say that they simply didnt lose until they cut it that severely. So I will have to play around with it a bit to see what works for me.
I started out my morning with three mini muffins that I made yesterday. They still taste dry but the banana choc flavor is very nice and the cream cheese frosting is a nice touch. they came out to only 2g of carbs in each muffin. Not bad!
BTW~ The crackers I made the other day~the second batch ended up firming up a LOT. they are about the thickness of a graham cracker and I imagine if I had thinned them out they would be delightful. Right now they are making a wonderful plate for my pate but I really want to try those again rolled very thin. I wonder if I substituted some flax flour how they would be? I bet that would add a nice nutty flavor to them and I could even add some sesame seeds too. Hmmm, lots of possibilities. I would like to have that recipe perfected before we go on vacation as I will make up a box to go with me!
Today I am stitching. I really want to get this top finished before I go and I have a lot to do on it!

Good afternoon Diane I know what you mean about getting addicted to medication. I was addicted to xanax 8yrs ago and didnt even realise I was additced!! It was the hardst thing ever to come off them.

It could take a week or so for the new thyriod meds to work, well thats the way it goes for me anyway. So don't despair if things take a bit longer. Sounds like your having fun with the baking though, I wouldnt have the patience

Oh I love to play in the kitchen so it's not a problem for me, the only thing I hate is the clean up
I have actually been having second thoughts on starting my induction today because of what you said. I realized that it will probably take awhile to take affect so I might be wasting my time this week. I am actually thinking about being bad instead. My poor hubby has been wanting to go out and have some fun and I have been so down in the dumps. I might just take him out for a few beers anda tarte flambe tonight, that would be TOTALLY off low carb but I really dont think it's a big deal if you occasionally treat yourself as long as you can keep it to occasionally! (and not like right now it would make much difference)

Diane I can almost assure you 100% that as soon as you can get your Vitamin Level up your pain will significantly decrease. I know the pain you refer to and it's exhausting! Deep bone pain, almost as if your bones are cold, and muscle aches like you have the flu. And much of it is up in your upper body and extremeties, right?

When my D3 was 9, I would just cry by the end of the day. Getting out in the noonday sun for 20-30 minutes per day is really good for raising your D levels!!!

Also, ground chia (grind yourself) and glucomannan make baked goods moist like muffins and cakes! Also extra eggs help.

Oh definitely Pooti, deep bone pain and my hands are always cold and I cant get warm even on warm days it seems (though a lot of that is thyroid I think)
My D is at 5! SO very low, I look forward to regaining my strength!

Thanks for the hints for the moisture. I am not sure that I can get ahold of either of those items though. It is difficult to find any specialy items at all over here. Only the ones carried by the lowcarbmegastore in England and the $25 shipping on every order HURTS!

Doc said lots of oily fish will help with the Vit D too so I picked up several cans of mackerel in different sauces. They are only around 1-2carbs per serving. I found basil tomato, citron, some tomato sauce I cant remember the name and a white wine one. Something that will be nice for lunches I think. I also definitely plan on getting some sun! I want to feel better!!

No wonder the cats love laying in the sun it is good for ya, that is why I tan in the winter I think I get that seasonal disorder no sun so gloomy tanning makes me feel better, bodies are complex machines, one thing off messes you up!

GO have funa nd get right back on it, I am worried I think the bean cake is making me gain!

Diane go enjoy yourself a break with refresh you and it's a once off so it wont matter! I've never had my vitD checked but I know when my tyriod is low becasue I feel like I'm sinking when I sit down and my hips get unbelievable cold especially if I'm tired. I really hate being cold

YAY for getting some help on feeling better. I can't imagine what you are going through but it sounds sucky!

Online grocery shopping is awesome. The only bit is you can miss the sales. BUT then again you don't impulse buy so much and end up saving money in the end. I miss having grocery delivery. We had it in Sydney and it was sooo handy since I didn't drive in that mess and worked till 6pm.

Your dye job looks lovely. Looks bloody tricky too I reckon. Talented woman.

Izzysdream~ So glad you dropped in! Thank you so much, it really was a dream getting married in a castle, albeit a small one Frenchie is a doll definitely, I am quite a lucky girl. I met him online through a friend. We hit it off immediately and met in real life 6 months later. We knew the minute we saw each other that this was it. I absolutely adore him!

You are right about missing the sales with the online grocery shopping but I agree that not impulse shopping makes up for it. I usually wait till after they are delivered, see what is missing that month (they are always out of something) and then go the next week to the BIG store and finish my shopping. That way I dont have to get that much and can put it in my cart, and I get a chance to see whats on sale, etc.

Thank you, I do love my dyeing. My main love is art and creating my own stitching designs but started dyeing to make special threads and materials for my work. I discovered that I love doing it also so do it as much as my stitching!

So I went out last night and had a blast. We had Tarte Flambe and I also had one Dorelei and one Fruit Rouge Bierre. Hubby remarked as we tore into the 1st tarte flambe that he didnt think it could be that high carb as they roll the crust paper thin. He is right about that, its not like eating deep dish pizza! They cook these in a wood fire stove and the edges come out black! The toppings are creme fraiche, onions, lardon and different cheeses. Creme fraiche is like a cross between thick fresh cream and sour cream. Lardon is like a cross between ham and thick cut bacon. SO yeah, all the toppings were low carb. My only cheats were the crust and the beers. I ADORE Dorelei beer and their new fruit beer. they are both so tasty. Last night in the middle of the night I woke up though with my stomach growling and grumpling and generally feeling ick. This morning it is still not real happy, I feel full up to the top of my throat but I only gained .1 kilo! I guess my body is not real happy about the carbs but I'm still glad I did it, it's our favorite place and it was nice to see the tension leaving hubby's face and him have some fun for awhile. HE works too hard!!!
I was going to go to Kehl to buy a pair of birkenstocks today but I think I will stay home and sew instead. That was enough activity for me right now

Oh that dinner sounds yummy I was stuffed on Mexican last night, LOL But it was worth it, man I have not had a real tortilla in 7 months, so I enjoyed every bite, LOL
