Doc just called hubby ( I can't understand her on the phone )
My coumadin is way low
My Vit D is way low
My lyvothyrox is low
she wants me to go see an endocrinologist about the Thyroid. I wish I knew what the numbers were...still waiting for my copy of the tests.
Hubby is a sweety though and knows how much I am worried about all this. He made a new appt with the doc for THursday so I can discuss all the results.
NO WONDER I'M SUCH A SLUG!

Here's hoping. I feel more encouraged today then I have for awhile. You have no idea how different thngs have been for me lately with al the restricted activity and my body just not feeling right in ANY way. I just want to go back to normal please?

Diane how great now you know whats wrong so you can only get better from here! I love the yarns esp the second last one Getting grocerys delivered here is normal it's great for old people becasue they can do a lot of shopping that they wouldnt be able to carry home but they do go to the supermarket and pick it all out. You dont even have to go to the store here, they have everything online. Not the entire inventory of the store but they do seem to have about 75% of it, with pics and info about each item. So it's pretty good.

I am quite excited to get my treatment straightened out, I need to start feeling good!

I think having some validation as to why I am feeling so bad is a big help.

If I had noticed the eggs werent there when he was still here I might have done just that Angela
I knew he was beign sneaky when he distracted me with his broken credit card machine story. He just wanted me to busy myself writing a check so I wouldn't have time to check the bags while he was here. Yeah...that's it!

SO yesterday was another day where I was so hungry all day. I will be glad when TOM takes a hike. I never really noticed how much I eat! I am glad though that I am not having trouble staying low carb.
I am thinking about making some crackers today. I ordered that yummi mousse de canard and I really cant let that go to waste can I? I want to mix up some of that bake mix...I actually have two candidates to try out. I want to see how they work.
I am pulled though. I just started a new project, a top I am making for vacation and I am embroidering the front. I want to do that too, so not sure if I will try and divide my day up or just concentrate on one of them. Decisions, decisions...

I went ahead and mixed up that bake mix. Its 26.5g carb per cup. I made the parmesan herb cracker recipe with it. THey turned out pretty good. A bit too sweet for what they are supposed to be, I would back off on the sweetener next tijme. ALso I added the italian seasoning because it called for it. My original intent though was to make a cracker for the pate. I went ahead and had a few crackers with the pate and they werent bad as the italina seasoning is not that noticable but next time I would forego the italina seasoning and keep it simple. It's mainly a dish for the pate. Actually now that I think about it, I may just keep this as a snack cracker. They come out at 2g a cracker so ti would have to be a small snack, but maybe cheese and cracker snack would work? I would love to make a nice flat bread for pate...and still want to try pootis crackers she suggested. THey would probably be perfect.
I am very interested in trying this bake mix with a few of my favorite recipes and try to adapt them. A little at a time! I feel so busy right now. I finished up my dye batch today so I have to wrap those, and fix dinner which Im planing on making pootis cauliflower rice and a thai salmon curry to pour over it. THen I want to stitch on my yoke of my top. Maybe I will bake tomorrow but I doubt it, I have a doc appt tomorrow.

Even though I told myself I was too busy, well I just couldn't stop myself. I had to try this other recipe I had in mind. It has been my go to cracker recipe for years now and I was curious how it would turn out. I wanted it plain as its really just a plate for the pate, but I decided at the last minute to just snip some little bits of dried cranberry in it. I only used about 10. They came out just right! Not super crisp but they are still fresh out of the oven. They are somewhat crispy though and I didnt roll them real thin. As a cracker for pate...parfait!


I imagine they would be quite good with parmesan, cheddar, italian seasonings or the such on them. I used to make these with pizza sauce and parmesan on them and they made wonderful pizza crackers. These are thicker and bigger so a few more carbs, but wonderful when you want a REAL cracker snack!

Wondering how these would be with a partial sub of coconut flour...

Well the flour is the mix I made. I mixed up six cups
3c carbalose
1 1/2 c almond flour
1 c whole wheat flour
1/2 c vital wheat gluten
it comes out to 26.5 g of carbs a cup so kinda high but it really seems to act like flour. I havent tried it for anything but the crackers but both had a cracker feel and I dont taste the carbalose either!
I would be interested in trying this mix with a little coconut flour, maybe backing down a bit on the WW flour and the carbalose and adding it in. I might experiment later

The recipe is SO easy

1 1/2 c flour mix
1/2 t salt
1/2 c warm water
3 T olive oil

I put the dough in a cookie pan on a piece of parchment paper, placed another sheet on top and rolled away. The next time I would split the dough in half and do it on two sheets because I filled the pan and they were still about 3/8" thick I think they would be nicer a bit thinner. After you roll them you can sprinkle with your choice of cheeses or spices and like I said before, the pizza sauce and parmesan was always a good cracker. I spread it thin and it would dry on top of the cracker. I would also sprinkle italian seasoning on them with the sauce.
you then bake at 450 degree oven about 15 min...time will vary on thickness. I was right there cutting cauliflower so I watched them close. I pulled them when the edges started to brown.

you know I recalculated this recipe and it really is only about 1.5 carbs a cracker...that's not bad! THose aren't tiny crackers, they are a good 1 1/2" square.

So today I go to the doc and find out what all these numbers mean. She did several tests I didnt realize she was doing and I dont understand them at all but since the lab includes the accepted range next to the results I can tell that most of the numbers came out ok. Here's hoping to good results and that she at least agrees to up my lyvothyrox now even if she does want me to go to an endocrinologist. I want to start feeling better right away and not wait to see a specialist. It can sometimes take quite awhile to get into them.
I might do some more baking this morning if I finish getting this floss wrapped. I meant to do it all last night but I started stitching on my top and I was having such a good time I got distracted

Just got back from the Doc's and the pharmacy. She prescribed Vitamin D in ampules, I take one every two weeks. It's like a sweet oil. Also said my iron was low so go back on my iron pills AND she said she wants me to eat lots of fish and bloody meat! I had to giggle at that
I told her good, that means I can ask for a grocery budget raise since the fish and beef are so damn expensive here. She said tell him it's prescribed
She also raised my lyvothyrox by 12.5mg and wants to retest in a month but also said I really need to see the endo because she knows how to treat this better. She said my antibodies are definitely still attacking my thyroid.
It's amazing that I have the energy to walk across the room with low Vit D, low iron and low thyroid meds. She also said that for some reason I have a general over-all inflammation. She said often when those numbers are a little higher it means pnuemonia but they arent high enough for that. SO yeah...I'm inflammed
But now I have a bag full of meds that will hopefully combat this. Cant wait till they start working!
