i am eating a small sandwich! i found the bread recipe here on lcf ths morning from http: //247lowcarbdiner.blogspot.com/2011/03/mr-peanut-sandwich-bread.html
and HAD to try it for my gluten free peanut butter addicted grandsons...delicious taste and great texture. i'm going to try it with almond butter because i'm not as fond of pb as those little cuties are. but...a sandwich?? and, btw, my jeans are super tight. I KNOW what to do about it...sigh... on my way to a nice bike ride in a few minutes!!! |

i do bake with all kinds of gluten free flours, but this recipe has no flour at all! amazing. it's so simple...like the flourless pb cookie and the flourless pb/chocolate brownie recipes. i use honey as a sweetener for the little guys but i know that others use sugarfree sweeteners.

Hi All! I am actually doing good....on everything BUT dieting!
It is on my mind...as I munch. I have to tell you tho, that except for my clothes being too tight, I don't care. I'm tired. I have been letting life's little irritations pile up. And, I have gained a lot of weight. I will deal with it later. Last night, I relaxed enough to cook myself a real meal - steak and artichoke - lovely!Tomorrow, I'm going out of town for three days and expect that the change in scenery will rejuvenate me! For you California folks, I'm going to Mt. Shasta. We will play in the snow and take walks near the river...with three small boys! My middle grandson is just 5 and will score somewhere on the autism spectrum. I am just now acknowledging that and his parents have not yet heard it. He has a preK first special education evaluation next week. He's delightful, charming, difficult, incredibly fun, amazingly bright and so high energy that he can "use up" adults quickly. I love him so much! I am so blessed. |

Jan, have fun at Mt. Shasta! As for "diet" you'll arrive when you're ready and you'll mean business. I'm glad that you are relaxing and letting things take their course.

vacation's over, it was wonderful
weight is up quite a bit (I earned every pound) i'm on day 2 of strict dieting...blah ![]() all of this is pretty old stuff. so, what's new? i got some amazingly awesome news tonight about a new job for me, something i have worked long and hard for. the contract will be completed in the next few weeks for a July 15ish start date. i am too excited to sleep...which is going to suck big time in about 4 hours! and, in a related story, i'll be in court tomorrow afternoon for what i hope is the final episode of a 3 year saga. a man is being sentenced for crimes against a school district. money that could/should have been used for the children was wasted. |

thank you so much. the journey has been very stressful...but, you know, i attribute a huge part of my quest for health (which 1000% involves losing weight tho other things are in there too) to me trying for some control in a "beyond my control" world. so...i win. win.
and, i didn't fall off the world but i did once fall down the mountain. and decided that sledding is for kids...but i loved hiking in the woods, in snow, in a huge cave, on train tracks to a stunning waterfall (none of which i could do safely or comfortably at almost 300 pounds). and i loved sharing my room with three small boys, fires and coffee in the mornings, games and giggles in the evenings...this was my first vacation in years, and coming home was good too (except that all the broken thing still are ) i'm also enjoying the children that i teach more because i'm rested. they are very sweet.Last edited by JK130; 04-20-2011 at 06:41 AM.. |

note to self...extra weight, even a little, makes me feels like moving less, makes me feel uncomfortable, less flexible, more tired with daily routine movements...no wonder i avoided moving when i was so heavy.
i also have a little less joint pain today after a few days of detox from vacation eating. i am going to experiment a little when i get these extra pounds off. i have never had food intolerances or inflammatory responses to foods...but maybe i just never knew? for now, i'm going to tell myself that not only do carbs make me fat but they make me hurt. |

what works for me...i do know (i just don't like it that much!
)i have coffee w/hwc in the morning most days i have a prepared shake at noonish i eat meat and veges in the evening - chicken and fish work best. i have added lettuce and cabbage in larger amounts which accounts for the increase in carbs lately to get more full and aid in digestive...um...regulation. off to work. thanks for visiting ladies! i'll check back with you later ![]() |

i'm doing well this week...down 5 pounds in 5 days. i'm feeling less bloated but still 17 pounds from where i feel best. my clothes are still tight, but i'm moving a little better. it's interesting that i am more flexible with only a 5 pound difference. but i am definitely less flexible with the current 17 pound excess. it's uncomfortable...so, hopefully, totally motivating! i need new clothes, but think i will wait a few weeks.
i also need a bunch of maintenance work done...hair, nails etc. but so far i'm being lazy (beauty rest, right ) and will most likely put on jeans and go outside soon. i do not feel pampered by shopping or beauty appointments. i feel totally bored and hate to sit still or concentrate on finding the right clothes. i have a draft of my new contract (i can't even believe that i'm writing that!!!) and i'm so excited...but still holding my breath until it's signed (ya know? ) ...and i absolutely will be purchasing a fabulous (and expensive) suit (several!!). i don't know what size it/they will be (because i haven't bought any expensive clothing during dieting) BUT...BUT...whatever size the new clothes are (the job starts in July so i have time to make some flab disappear) i AM going to fit them well...for a long time. Talk about motivation for maintaining! Clothes that you don't want to...um...outgrow! OK ladies, i need you to put the pressure on me to get trim again. i have had the "holding on hard carb/calorie creep" thing, the "binge" thing and the "don't give a dayum" thing going on for the last three months - triple threats to maintaining a slim body. I'll have to get some expensive jeans too ![]() ![]() ![]() |

I like the "cycling" idea, which I never knew about til I came back to LCF.
I've been kind of doing it myself, almost unconsciously, so that it seems like a normal way of eating. You go Jan!! Yes, nothing like new clothes to keep us motivated. Have a good weekend ![]() |

Glad to hear your getting back to it Jan! Just focus us on how good you will look and feel when you get back to your goal. Summer approaching, helps me just for the sheer fact that I don't want to be any more uncomfortable than need be. Plus, we gotta keep up with those little guys.
