Oh Laura, I have a way of cooking it guaranteed to make you love it.
Get a non-stick skillet and some bacon grease or olive oil. Cut up your fresh okra into rounds like in fried okra. Then sautee it over medium-high heat stirring frequently until all the "strings" are gone. Seriously. It takes maybe 15 minutes of sauteeing over med to med high heat and then all you will see is no strings, no goo, no slime, and some browning on the okra. The point isn't to brown it, it's to cook out the goo. Then sautee some onion, add a can of crushed tomatoes, some bacon, and granulated garlic powder, salt and pepper and if you want, you can add things like dried thyme, basil or oregano and let it cook for about an hour. Dear lord. I crave this stuff and okra is a complete protein I believe. It has all 9 essential amino acids.

Oh man, I'm not that, but the okra is the bomb. If you pre-cook it like this, it's so great in any kind of soup or gumbo!!!! Totally no goo, evah!!!!!! It's how we cooked it growing up!!!

Oh Pooti tell that to your followers. Your recipes are the bomb and the picture to go with them fantastic. Your not giving yourself enough credit. I was a wonderful cook when I cooked high carb country fare but alas not I'm just mediocre to say the least.

Laura, you can still make the country fare, but do it low carb. You just have to use the substituteskies out there. I guess that's kinda what keeps me going is the thrill of converting a recipe and knowing...ok, wow! Here's another keeper for the LC stash! You know? |

GOOOODNESSSS!!! WHO SAID OKRA!?!?! YES!! Fried is the BEST!! But PoOti is right about the fresh cut fried in bacon grease!!! In a cast iron skillet oooohmyyy!!! Okra and tomotes is so awesome. I never knew okra was full of amino acids!!!

I've had okra once at at southern bbq rib joint, and I wasn't impressed, it was just slimey. Cooking it like Pooti does sounds good, though-- POOTI, FUTURE OKRA BLOG, PLEASE!

Ok I had another appointment with the Endo today, she is beginning to wonder if I have Hypercalcemia, she seems to think it could be coming from my HBP meds so she has changed them. I have to go back in May for more blood work and another pee in the hat test. Only time will tell, I will keep you all informed. Here's me the at the beach last yr, I'm surprised I wasn't mistaken for a beached whale. ![]()

What a transformation. I think that was your mom, girl!!!! ![]() Yep, if okra's slimey, someone mistreated it. Cooked right, it's soooooo yummilicious! Laura, what are your symptoms of hyper cal? And what BP meds were you taking? Also, are you supplementing with D3? Cuz unless D3 is balanced with A and some K2, you can go hyper calc as well. Also, tumors on a parathyroid will cause it and also some thyroid probs can cause it... You should go read here on the thyroid board if you haven't already? hon and hope you feel better soon. |

Thanks so much girls, Pooti I take Maxzide for HBP, she has changed it to Lininopril 20 mg tabs daily. This what I was told, my blood work I had done showed elevated calcium, but my urine did not and IF I had Hypercalcemia both would show high calcium SOOOOOOOOOOO I have to do the 24 piss test again in May along with another blood test. Pooti what is D3? The surgeon I saw didn't see much on my Para-Thyroid that is why he has sent me back to the Endo for the test as she thinks it might possibly be caused by my HBP meds, so I have to stop the Maxzide and start the new one till I go in for the test the 5th of May. I have had 2 ultra-sounds of my PTG, a nuclear image of my PTG, a bone density scan, chest x-ray, pap, mamo, CT scan of my PTG, blood work and the 24 hr piss test since Jan. I am ready for it to be over.

Pooti, ok no I don't take D3...should I? I take Potassium and it is still low, Magnesium and Fish Oil. I eat ALOT of Romaine Lettuce salads, some times that is both of my meals with some protein thrown on top. They have checked every thing I think, I know last yr my kidneys were stress from taking 40 mg of Lasix daily, now I only take 20 every once and awhile.
