Also, consider me on board with Peter of Hyperlipid's preference of using Butter as the preferred fat, rather than liquids like olive oil or polyunsaturated fats. Saturated fats are the foundation of a good WOE, imo. Just keep the bad stuff like sugar and processed carbs made of powdered starch out of there so you don't hurt your arteries with their volatile effects.

Well that lasted a few months, now after eating too much sugar I seem to be in a vicious cycle where the weight doesn't come off even without sugar.... That and my doctor wants to see more weight coming off.

So, back to low-carb.

Definitely on the chicken broth bandwagon now... Not making my own yet, but, buying cases of the stuff (Chicken Stock, not broth, their broth has sugar in it) at Costco. Brought one with me to work and wow, what a treat! I've noticed the past few days if I've felt antsy or jittery at the end of the day when I'm hungry, the chicken stock clears that right up before dinner...

Weight this morning was 235.0.

I made Phinney & Volek's Maple Walnut Ice Cream tonight. It seems my ice cream maker freezer bucket wasn't actually cold enough (seemed like it was; the fluid inside wasn't sloshing around anymore) so the cream mixture started to solidify and then eventually warmed up a bit, so I've been "manually churning" it in a pyrex container in the freezer once an hour or 2. It's finally to a consistency where you can spoon it out, although it drizzles off the spoon easily, but I had a half cup and was blown away!

Can't wait to try the blueberry cheesecake recipe, got a pack of gelatin for that...

I think diet soda stalls me pretty badly, but after getting back into ketosis I tried a bunch of the xylitol maple walnut ice cream last night, and it doesn't. So the ice cream seems to be a good source of extra fat, diet soda is not worth the bother.

Also had the LC ice cream every day for several days, sometimes twice a day, doesn't seem to hurt the results...
Made a chocolate version-
2/3c dutched cocoa powder, 3/4c water, heat & whisk those in a skillet, add 2oz ghirardelli unsweetened baking chocolate, whisk until it's a coherent paste, let cool on the counter a while and add to the basic heavy cream + xylitol + EZ-Sweetz + vanilla recipe and make ice cream
It is a bit brittle/hard to scoop, but delicious!

Then last night made a "very berry" ice cream-
1c frozen mixed berries from costco, microwaved for 1 minute and left to chill in the fridge (so they're not rock-hard frozen and give shape a little when churned)
Churn the basic heavy cream + xylitol + EZ-Sweetz + vanilla recipe, then 20min in add the berries through the top of the ice cream maker.

So now I got 2 big 7-cup pyrex dishes full of ice cream in the freezer, in a few days (I like to give the ice cream maker's freezer bowl 2 days to freeze) I'm gonna make a batch of the maple-walnut ice cream so I'm fully stocked ;-)


The basic ice cream recipe FWIW is just the formula used in Art & Science of Low-Carbohydrate Living for the maple-walnut ice cream, mainly:
2/3c xylitol
8 packets of splenda ( = 16 drops of EZ-Sweetz, which is what I use)
1qt heavy whipping cream
vanilla or imitation maple flavoring to flavor

Hit 229.4 last week! Down another belt loop too. Seems like the weight loss sure is working, just takes time. Maybe 3-4lbs/month on average. Keeping the LC ice cream in my diet, and I have to strictly limit it to 1 cup at a time, preferably no more than 2 cups in a day, else the ... whoosh comes by. I suspect the extra fat is somehow helping me though, as I feel quite "normal" and not weak/tired/sickly like I used to get when I wouldn't eat enough fat. Probably there is an optimal caloric intake for the long-term weight loss and it's not in "deep calorie deficit" territory if you know what I mean. And with LC, naturally, fat is how we get there.
