Ok so... My time with Atkins dieting I think has come to an end, as recent experimentation has taught me that I actually can & do lose weight while eating rice, potatoes, etc. I feel better too. As long as you can satisfy your appetite with fat & protein, the carbs don't hurt but rev you up instead.

I think the best thing I've learned from low-carbing is that fat+protein should be the minimum nutrient composition of my diet (the true "bottom" of the proverbial food pyramid), additional stuff like carbs should be considered garnish & filler. Going ketogenic once in a while is good for my metabolism & controlling carbs is good ideally to keep my liver glycogen stores partially depleted all the time (maybe avoid the liver's urge to perform de-novo-lipogenesis out of the carbs by storing them as glycogen instead), but in the end my metabolism runs better with a bolus of starch from time to time.

The amount of carbs you get in a decent-sized meal of sushi, maybe that amount twice a day seems to be good for me.
But no processed carbs, no processed flour & starch-based cereals or whatever. Rice, potato. Like what some paleo proponents call "cellular carbohydrates."

Still no wheat for me due to past sensitivity issues and GI problems, maybe someday I'll try alternative grains like einkorn or spelt or whatever; hopefully it's only a problem with modern Dwarf Wheat and not all forms of wheat.
