Reading through Wheat Belly, Dr. Davis mentions something about Milk having a profound insulin spike unaccounted by the protein and carb concentration. Looked into this further. Turns out it's Whey that does it; Casein spikes IGF-1, but not insulin while Whey spikes insulin, but not IGF-1. Taking whey protein as a supplement could be the dumbest thing for a low-carber to do.
Sounds like one of the biggest mistakes I made doing Atkins was to reintroduce milk, drinking it several times a day at home with meals. Milk's always been a mainstay of my diet, I gave it up for the initial few months of Atkins and brought it back thinking it was an innocent carb creeper. Looks like it's worth giving up for a few months to see what happens (along with wheat cheats). Cream sounds OK though, so cream with coffee and cream in recipes I'm keeping around. Cheese in moderation. |

FWIW, I made a point yesterday of eating a fair amount of butter, especially in he evening. This echoes some other anecdotes I've noticed where I've had a couple pads of butter before going to sleep and miraculously ended up lighter... Not sure if there's anything to it but I'm going to keep at this to see where it leads. |

Well, some time after eating a huge bolus of butter with some pumpkin lowcarb dessert thingamajig my wife made, my metabolism is ramping up all on its own and I feel slightly dizzy (often happens when my metabolism rises but I'm sitting/doing sedentary stuff, wonder why that happens) and I'm fidgety as hell. I'm guessing that's the rush of free fatty acids from the butter...
