Well girls, back to work today, ughghghhg I got my shakes in the car chillin overnight and will be restocking the fridge at work with meat and cheese and eggs, we are going to do this, guess its good I am going to work this being home I spent mor emoney shopping in the last 2 weeks than I earn in a a month, LOL Oh well its only money!

UGH! I'm so not ready to go back to work yet. I may go a few hours today, but my restart day is actually Wednesday. I cleaned out half my fridge and found 3 tons of cream cheese...LOL I see a recipe search in my near future....LOL

Make the cream cheese cheesecake muffins I swear they taste just like cheesecake and are like 1 carb! THe recipe is on here somewhere, I came back to gifts, a $25 gift card from one of the salesman that I have been helping with a project and my GF in here got me a boss voodoo doll, which is really funny since our boss is her brother, LOL

Ughghgh it sucks to be back!

Amber the cream cheese muffins are so yummy but I have to stay clear of them. I can't seem to enjoy just one or two of them at a time.

Once again, you have done an amazing job! The transformation just leaves me speechless. You should be so proud of your self. I am of you.

I love those little muffins. But the Splenda taste throws me. I have been looking at this vanilla liquid Stevia at the Wegmans but its $10.99 a bottle!!! I have gone down that aisle 5 times...LOL

Reva you are doing AWESOME!!!! I have read your journal but haven't seen you in a while! U inspire me as well.

Oh Martini...the cream cheese muffins. I have yet to make lc cheesecake cuz I have no doubts I would eat the whole blasted thing in one sitting. I will wait until I think I can control myself a little better with them. I only allow us to have 2 bricks of cream cheese in the house at a time for that very reason. hahaha!

My job sucks, I do lighting retrofits, so I am in plants, schools offices, counting the fixtures, measuring, and then doing the new design with more energy effecient lighting, really it isnt that bad, but I culd think of more exciting things, like a travel writer or being a nurse, I really wanted to be a nurse, I love people.

So showed little man the pictures after school he was like holy crap mom, you were really fat, you look good, but you know you still got more to lose, ever the realist! LOL I said I know but that is why I need you to help mom. He was shocked I joined a gym, he asked if Jillian was the trainer, I said no I think she is in LA, LOL Kids are so funny!

Yikes - I was only off for a few hours and there's so many new posts! Great to meet you CJ. Nashua isn't too far from me - about 90 mins - so if something is happening there I would definitely be interested!

Amber, you are too funny. Congrats on getting to the gym! Every time you go is a time you are not sitting on the couch, so that's a victory!!! We just had our office retrofitted for lighting last year, so I know exactly what you're talking about! It has saved us a ton of money in electricity, so just think about all the non-profits and small businesses and under-funded schools you are helping SO MUCH every time you do this for them. It's amazing!

I really need the recipe for the cream cheese muffins. I think I can stick to eating just one or two, but I guess we'll see :-) My big weakness are low carb bars. I don't eat them every day, but they are just too convenient sometimes if I get snacky! I don't care for the shakes so much, but the bars are just like candy! I had an Atkins Day Break Peanut Butter Fudge Crisp for afternoon snack today...yummmmmmy. I don't think they cause my blood sugar to spike, but who knows if they slow my weight loss down. If I'm still losing, I guess that's all that really matters. A few LC treats for all of us along the way are what keep us on plan right???

We all made it through Monday...well, almost!

Deb_ Yeah I never get the grateful non profits all the money grubbing big business that make me work my tail off, LOL

OK, here is the Cream Cheese Muffins, this is someone's recipe I don't know who to give the credit to but they are a genius!

2- 8 ounce packages of cream cheese, softened
1/2 C. Splenda granular
2 eggs
1/2 t. vanilla

Beat all in electric mixer.
Line muffin pan with foil liners and bake 20-25 minutes
Let cool on stove and refrigerate, trust me you must wait til morning! They are better once cold.

1 carb each, makes 1 dozen in average size muffin pans

I like to top with LC raspberry jelly,

Flax muffin
1/4 c flax
1/2 t baking powder
1 packet of splenda
1 t cinnamon
1 large egg
1 T butter, mush it all up in a coffee mug, and micro for 1 minute, be amazed at the tasty muffin sitting before you!

2.7 carbs

So we are getting ready to go look for shooting stars I will take the tripod to see if we can catch any, it was very clear here so I am hoping!

So meals today

B- shake
L- fresh mozzarella balls left over from Christmas,
D- a little more carby then I like but took 2 mama lupe tortillas and stuffed with the left over pork and cheese and enchilada sauce, delish but now I am so full 3 carbs in each tortilla I should have eaten one but was starving,

No exercise but did walk all over a school inside and out so that counts for a little, LOL

Watch Mike and Molly tonight it is so funny! It is about an overweight couple that meets at Overeaters Anonymous, too funny!

I love Mike n Molly!!! So cute. The mother and the friend have me in stitches!
My 6 shrimp were fried and carby but not to bad. You still did good! I see a porkshoulder in my near future. Pulled pork and coleslaw? I can handle the creamcheese muffins. Only 2 at the time. The Splenda taste may be helping me with portion control.

Your fiance sounds like an amazing man. Isn't it interesting how someone elses support and encouragement can make such a different (as evidenced by your rope thingy). So much easier when you have a cheering squad that belives in you.

Oh I love Mike n Molly! At first I didn't but now it's great! I agree, the friend and Mike's mom and also Molly's sister are crack-ups!!!

Amber you are gonna do so great with your trainer girl!!!!!! LOL at picturing him nekkid. Now that should get the engines running girl! Oh and thank you, I'm now sitting on my hands to keep from going in and baking the cheesecake muffins with the 2 bricks of cream cheese in my refrigerator right now. I can't wait till my sister is back low carbing after her holiday partying ways! See a resemblance by any chance? At least then, I can bake stuff like this and get to enjoy vicariously through her and her family over them!

Tiggy I so agree with you girl!!! Having encouragement sure helps doesn't it?! We are all so glad you're back honey!!!!!! Wooohoooooo!

Ok you dirty girls are assuming my trainer is a man, but it is a lady, LOL!!!! But oh well maybe I should still picture her naked, since I am betting she has a killer bod, LOL Wait til she gets a load of me and my talking tonight, she will be running scared, LOL

Thank you Anita, I sure hope I can look hot til then, LOL It is hard to feel hot in any way except the heat flashes, LOL

Amber it is normal to feel scared about trying new things - like a trainer at the gym. Once you go a few times though I reckon you will be feeling very comfortable about using this new tool to looking uber hawt! I always feel nervous when starting with a new trainer, thinking they are judging me and not wanting to work with a big fat girl! But, I have found in reality they love working with us larger types as the results come pretty quick, your cardio endurance and strength build up very fast and you both can celebrate the changes. Like having a personal arse kicking cheerleader. Once you build that rapport you will LOVE it.
