No thunderstorms, as it turns out. Have a lovely time at my dad's, and didn't eat any cake. In fact, I didn't eat any dinner. Went for a run; it was hard today, but manageable. I think I'm picking up the pace. I did 1.25 miles in about 16 minutes, which is pretty good for me.

Food ended up being as follows:

B: Coffee with cream
L: Salad with 2 hb eggs and Caesar dressing; iced coffee; maybe 2 t of cream cheese frosting as I was making it for DH's cake

713 (cal) 21 (carbs) 59 (fat) 22 (protein)

It's after 10pm, and I'm not even hungry. My dad's wife put out vegetables with dip while we were there, and I didn't even eat that. I asked myself, "Am I really hungry, or will I eat it just because it's there and LC?" Since the honest answer was the latter, I skipped it.

I'm thinking coconut flour pancakes tomorrow morning, with bacon AND eggs!

Hi Christine!

Glad to hear that you had a great time at the party. Good for you also for not eating when you aren't hungry. That's a great question that you asked yourself, if you would simply eat it because it is LC, or if you were hungry, I should think that way more. Sometimes I eat out of reflex or "because it's that time of day."

Good morning! Weight lifting finished for the day. We'll be installing our a/c today, which is so much fun.

I'm still seriously thinking about coconut flour pancakes, and I'll probably start the bacon as soon as my coffee is finished brewing. I'm the only one up, so I'm not sure what the troops will want to eat today.

I realized that I shouldn't be too excited about finishing up this weekend on plan. When I said that weekends were my weakness, I failed to realize that weekends that DS IS AWAY are my weakness. When he's at his dad's and it's just DH and me, we end up going to amazing restaurants and events (grown-up stuff that DS wouldn't enjoy), and THAT is when I eat off plan.

So this weekend.....no big accomplishment. Next weekend? Now THAT will be a big accomplishment. But by then I'll be two weeks into clean eating, and I hope I'll be less likely to want to ruin the streak.

I also have three days off this week (W-F), which presents its own unique challenges. But I'm hoping to stay busy, so we'll see how that goes!

Glad you did well at the party the weather turned out to be nice, my son had a baseball game from 7:30-10 pm, OMG one more game LOL These are my favorite, low carb high protein pancakes, they are sooooo good!!!

Protein Pancakes

2 eggs
½ c cottage cheese
2T almond or skim milk
2 packets of splenda or your choice of sweetener
2 t. baking powder
¼ C vanilla protein powder
¼ C Jay Robb vanilla egg white powder

Whirl in blender and let stand for 3 minutes, pour and make like traditional pancakes.

A/C is great, and as it turns out, I didn't make the pancakes! Just had a few strips of bacon, if I recall correctly.

Tonight I made salmon patties, which turned out fairly decent.

Been a busy week around here! Looking forward to a hair appt tomorrow and a half day off. Then off Thursday and Friday! YAY!

Been running about 1.5 miles, which is good progress! Debating about going tomorrow; not sure if I should take the day off or not. Probably not.

Hey, do you mind telling me how you make your salmon patties? I am very much a "novice" cook and always like to learn something new. I don't think I've ever made them before. I do adore salmon though. Thanks.

You take the bones out?? That's my favorite part Plus, they are really good for you.

My brothers used to pick their's out and give them to me. Yes, I was a weird child. I always loved Alka Selzter too(still do.)

Hey Christine,

A huge THANKS for your salmon recipe! It sounds so good. I am always trying to get more fish in my diet. But unlike cfine, I HATE the bones. When I get fresh salmon, I freak out if I see one bone. It sounds crazy, but rather than just picking it out, I have to fight the urge to chuck the whole thing in the trash. However, I've never actually tried canned salmon before; I'll see how it is with the salmon cake recipe.

I do. If we're talking about thin, transparent bones, no. But these had little round bones that almost looked like human teeth with a hole in the middle. I can't imagine how one would eat those; are those the bones you mean? You're a stronger person than I!

I love fresh salmon, canned ughgh it gags me and reminds me of cat food, tuna is the same I eat it but I hate it, man this day was great the stinking AC is off now thank goodness I hate that!!!! It was almost cold at the pool today the air was cool!

I definitely prefer fresh, too, and you're right: It did look like cat food! I loved the weather today; DH and I took a walk tonight, and I could've used a jacket!

Managed to hit the weights this morning, and DH and I walked this evening. It was a great night for a walk in the park! Busy day: Hair appt and brow wax....finally! DH said, "It looks like you've lost weight." I think it's the hair!!!

B: 3-egg omelet with salmon pattie and chive cream cheese, coffee
L: iced coffee w/ HB egg
D: Bass with garlic and butter, broccoli

Pretty sure I'm going to make this tomorrow. I don't have MCT, so I'll try it without. I also need to pick up more butter (I use Kerrygold, which is awesome). The recipe is from the Bulletproof Executive. He calls is Coconut "Get Some" Ice Cream. I also don't own an ice cream maker, so I'm thinking I'll make it as a shake:

Ingredients (everything copied from his website)

4 whole eggs (pastured of course)
4 yolks (in addition to the whole eggs above)
2 tsp vanilla (I use Bulletproof Vanilla, which I will be shipping soon…)
1 gram vitamin C (ascorbic acid) or 10 drops apple cider vinegar or lime juice to taste.
100 grams (7 tbs) grass-fed butter
100 grams (7tbs) coconut oil
50 grams (3tbs + 2tsp) MCT oil (important for consistency)
80 grams (5.5tbs) xylitol or erythritol (or more to taste – you can add up to 160 grams if you want)
~100 grams water or ice (just under 1/2 cup; add less than you think you need, then increase the amount).

Methods

Blend everything but the water/ice in blender. It takes a while to get the butter blended into perfect creaminess.
Add water or ice and blend some more until well blended. Ideally, you want a yogurt-like consistency for creamy ice cream, or add more water for a firmer, icier texture
Pour the mixture into an ice cream maker and turn it on.

So I made the coconut shake, and omg. I love it. It's probably not for everyone, though. Remember my high tolerance for weirdness.

My version was this:

7 T Kerrygold butter
4 eggs
4 egg yolks
2 t vanilla
1/2 t apple cider vinegar
probably about 4 T xylitol
Maybe 8 T of CO
1/2 blender of ice

Put everything in the blender and mix it up. I drank about 8 oz and am totally full.

412 (cal) 2 (carb) 41 (Fat) 9 (protein)

I put the rest in the freezer and imagine it might thicken up like ice cream. I really liked it! I could totally eat it for breakfast.

Taking a day off from the workouts today. My right knee was nagging at me a bit today, so I'll get back to it tomorrow. Off from work today; been running around. Grandmother in hospice, FIL needed some shopping done, DH needed meds picked up, and I cleaned the bathroom and office, moving some furniture around as well. I think that's exercise enough, no?

Tomorrow I'll tackle the downstairs.

Boy, you did have a busy day, even without the "formal exercise." My knees have been bothering me too lately. I have been doing my exercise DVDs (Jillian Michaels and The Biggest Loser series) faithfully, but I have had to take some time off because my knees are sore. I think it's from all of the lunges.

Let me know if you make it/tweak it and how you like it. I'm all for trying new and different things, so if you find a combo you like, please let me know.

Running this morning........sucked.

Some days it's good, some days it's bad, and today it's just done. I couldn't wait to be finished. I'm trying up push up my distance, and it's an annoying process. I'm not a natural runner, so every step is a job.

Anyway, whatever. I'm pleased with the results I'm seeing, though. I know I said I wasn't going to weigh in until after my four weeks clean, but I took a peek and all I can say is THANK GOODNESS. I have undone the damage of my early summer free-for-alls.

I will officially weigh-in in another 2 weeks, and I am hoping to be deep in the 180s by then.

I'm about to go cook some breakfast. I'm thinking eggs and bacon today, plus coffee, which I haven't had yet.
