So I just got back from running 1.25 miles (believe it! I am still shocked), and I'm eating leftover chicken from last night. It's AMAZING, so I am going to share the recipe with you. Warning: Skip this is you don't like it spicy!

Marinade (from memory so......disclaimer! Also, I'm not huge on measuring.)

Throw the following ingredients into a chopper or blender (I use my Ninja):

3 T of oil (I used coconut, but EVOO would work well, too)
2 chopped hot peppers (I used habanero, but scotch bonnet would be good. Take out the seeds if you're wimpy. )
About 1 T or so of soy sauce
a small piece of shredded fresh ginger
a few cranks of the sea salt grinder
a few shakes of cinnamon
2 cloves of garlic, crushed
1/2 small onion
a

I think that's all, but I'll double-check this weekend. Smear that on your chicken and let it sit overnight. Grill/cook as desired!

I'm eating the leftovers in a chicken salad and it's very tasty! I also made the pudding recipe that I found on this site; has anyone tried it? The instructions are for microwaving, but I use the stove top.

Warm Chocolate Pudding
Put 2 eggs in a blender, add 1 tsp. vanilla extract, 3 splenda, 1 tbsp. cocoa and blend. Meanwhile, put 2 tbsp. EVCO in bowl and nuke for 1 minute. Add to egg mixture and blend again for a minute. Transfer to mug/small bowl and nuke for abou 30 seconds, just enough to warm. It is incredible; thick, creamy, warm, just like homemade chocolate pudding right off the stove but better. It's the EVCO that does the trick.

Ohhhhh these recipes sound delish, can't wait to try them about 15-20 days. The warm Chocolate Pudding sounds yummy. I am drooling over my laptop.

Hi Christine! So happy to have you here again, it's like a breathe of fresh air. I know you'll get back to where you're comfortable before you know it. Determination and hard work will get you there again and you'll be sailing to goal. Starting over completely myself, and reading your journal gives me new motivation.

Have a great weekend lady!

You got it!

Do you know what's annoying? What's annoying is when you allow yourself to indulge and it's a disappointment! We went out for Mexican last night, and my plan was to stay under 100g carbs (which I did). I was so excited for chips and salsa, a chimi, and a few bites of fried ice cream. Well guess what? It was TERRIBLE!!! I was so disappointed. That's what I get for going to chain Mexican (but we've had good experiences there before). Next time, it's an independent restaurant, for sure!

Up 1 lb of water today for nothing. Oh well. I guess that'll teach me!

Doing well so far today, though. Trying to focus on IF the Bulletproof Executive way, eating between 2 and 8pm only. Coffee is allowed, though, so I've already had two cups. I also Hit the gym for some weightlifting at 6:30 am, which was great. I love when it's summer and light out so early. DS had an early game, so we left the house by 8:15 and just got back from our running around! Now he's playing with a friend while I start putting together some things for tomorrow. Found a great marinade recipe for chicken!

Thinking of putting some steaks on the grill for lunch, but we're going to a steakhouse for an early dinner with some friends (really early, like 4:30 early!), so maybe I'll skip that and take the steaks to my dad's tomorrow instead. I think I can probably hold out until dinner at 5, but we'll see! I'm not hungry in the least.

Enjoy the beautiful weekend!

I hate that too! I've allowed myself an indulgence that I planned for and looked forward to, only to be all blehhhhhh! Or not impressed. Sad....makes it easier to stay on plan though when I remind myself of it.

Hi Christine! Hope you're having a GREAT weekend!

I TOTALLY know what you mean about having an indulgence that is not so, how shall we say it, "good in quality." It's so disappointing. I'm fortunate that my last real carby treat meal on Mother's Day was spectacular. I relished every bite, let me tell you (bread, beignets, the whole bit). Here's to a better meal next time!

I hope your weekend is relaxing and fun. We are getting a break from the extremely hot weather here in AZ, so that's good. Hopefully I can get out for a nice walk at some point!

Talk to you later!

Maxi

I think I'm better today. I really need to focus on routine and not get side-tracked.

In other news, I could have run beyond my 1.25 miles today, except for this problem. I'm relieved to see that other people have this problem (even though it sucks!!). I was starting to wonder what was wrong with me because it has happened before.

Anyway, I'm glad I was able to get out for a run this morning; I'm hoping it will help keep me on track today!

I'm staying away from the scale until Friday, at least.

Hi Christine! Happy Memorial Day to you!

Here's to staying away from the scale...I need to do the same thing. Just watching the ups and downs daily drives me nuts, so I try to do it once a week, but I don't always have the control. Oh well, I'll keep trying!

Have a beautiful day!

Back to the grind, ladies!! It's a good thing for me because it means back to structure!!

I got in a run last night, too, which means that I ran a total of 2.5 miles yesterday, a new record.

Swimming this morning, which was a welcome change from all of this HEAT. Ugh. I never complain about the cold because I really don't mind it; it's the heat that I can't stand. It just sucks the energy right out of a person. Anyway, glad to be back in the AC today!

Hope everyone has a great Tuesday!

I hate the heat myself Christine. I have been doing alot of walking with my hubby outdoors but the heat is starting to get to me so it will be back indoors on the treadmill with the A/C running. I need to get myself back to the gym soon to do some swimming as well, really love the water and it's easy on the joints as well. You are doing great, KUTGW!!

Supposed to cool down for a few days, thankfully! A wicked storm came through last night, and that definitely helped.

Twenty minutes of swimming today. Will try to get a run in later if the weather holds out. Looks like some t-storms early and late, so I'll try to get out in between.

One meeting on my schedule today but LOTS of work. Hope everyone has a great day!

Beautiful day today! Just swimming for me; had to attend a conference in the afternoon and couldn't fit in a workout. That's ok; after yesterday's terrible run, I am happy to take the day off.

So far today I've had 3 cups of coffee (2 iced, one hot with CO), two pork rinds, and a chicken breast slathered in mayo. I think I'll make some breaded chicken for dinner (with coconut flour and pork rinds) with a side of steamed broccoli.

Haven't been weighing lately because it's just too depressing right now.

I'm hoping that after TOM is gone (just started) and I've released some of this water weight, I'll be back in the 180s. Time will tell! Hope everyone is having a great day! FRiDAY TOMORROW!

Hi Christine!! Glad you had a beautiful day! It is hot as heck here (AZ), supposed to be about 107 degrees. But I must be getting used to it (after 10 years) because it doesn't FEEL that hot at all. I don't even notice it until it gets to be 110 degrees plus anymore...

Here's hoping that TOM will leave you well into the 180s! Have a great night, girlie!
Happy early weekend too!!

Late breaking news over here:

I am a genius.

I've was having some trouble with the pudding recipe because it kept coming out with the consistency of chocolate scrambled eggs (sounds gross, but didn't taste bad. Then again, I'd probably eat cocoa-flavored dirt), and I really wanted that pudding consistency. I thought that perhaps it was because I was cooking it on the stove top.

Cooked again this afternoon and simultaneously decided to whip up some cream to put on top, so after whipping up the eggs/vanilla (and a shot of coffee just because hey, why not?), I threw the HWC into my Ninja (perfect whipped cream, btw. Why didn't I think to use the Ninja before? I always drag out my mixer). As the pudding again cooked up to chocolate scrambled eggs, I wondered what might happen if I ran the mixture through the Ninja with the cream.

I will tell you what happened: Perfect pudding consistency. So now some is chilling in the refrigerator so that I can see if it'll firm up, and I'm eating some warm. Delicious, and I really feel no guilt. The cocoa is unsweetened and has 1 less gram of fiber than it does carbs. Eggs, vanilla, cream, coffee, and a tiny bit of xylitol? Nothing to worry about here, right?

And I was really craving something chocolate, too!

Let's not even talk about the weekend, ok? Let's talk about the fact that today is a brand new day one.

Here are my short-term, behavior-oriented, measurable, actionable goals:

1. Four weeks of clean eating
2. Four weeks of steady exercise of varying degrees of intensity
3. Daily water intake of 100 oz.

That's it. I can do that, right? Keep it simple, stupid.

Started this morning with some pool sprints and deep water running. Let me tell you something about DWR: It's tough!!! I can still feel it in my glutes and thighs as I sit here!

It's June. It's time.

I have been reading about DWR on another thread, I believe you when you say its' tough and you can feel it. I am waiting till July to get in on some laps in the pool at the gym, need to get motivated in that area. Hey Christine did you still want to get in on the Exercise Tag Game? If so we are starting it today. I just need to know that you are in and are ready to be tagged anytime soon? Just looking to have some fun while on this journey to getting healthy. If not, no problemo. Have a fun filled Monday!
