I used only the Steviva Blend and nothing else, I put in just under 3/4 cup-- it was what was left of a bag-- and it worked perfectly.

For the cake I would just use Ideal or Steviva, or a mix of both. I'm not a big fan of stevia at all-- the little bitty bit in the Steviva I don't taste, so it doesn't bother me. I've never used the drops you mentioned-- I imagine it would work?

Amber, you can't have Sting because he is mine. Please don't make me fight you to the death for him. LOL! Supplements taken

Food today:
B: scrambled eggs, bacon… and cake.
L: leftover sirloin patty w/ Dijon, daikon
S: cheddar cheese, mixed nuts, cucumbers w/ Boursin cheese
D: cheesy hamburger onion cauliflower slop

Gym report: yep, I went, despite my day being totally upside down and I didn’t get in there until 11:20. I just didn’t feel like doing the elliptical—the one I like was occupied so I just decided to bag it and go home. In retrospect it was silly, but I guess I just wasn’t feeling it being all off my schedule and stuff. But, I did make a little harder effort in the weight room and used a few extra machines, does that make up for it?

While I was in there I came up with a FRAKKING BRILLIANT IDEA! When I was a kid we had a family friend who made the most dynamite cupcakes I’ve ever had—so fantastic, I am still raving about them 30 years later. They were a rich moist fudgy brownie cupcake thing with a dollop of cheesecake in the middle. So. Damn. Good. I think over the years I’ve tried the Hershey’s Cocoa Cook Book version (not anywhere near as good) and the San Francisco Junior League Cook Book’s “Killer Cupcakes,” which weren’t so killer. I’m thinking I can make a low carb version! Of course I can. Still won’t be the ones from my childhood, but they won’t make me fat! Leave it to me to be dreaming of cupcakes while I’m in the gym. It was probably just a stupid Betty Crocker Mix or something our friend used, and all these years I’ve been thinking it was some unattainable super secret made from scratch heirloom recipe. LOL.

Oh, dammit! I just chucked my cupcake pans!

My positive for the day: I got flirted with! I was at Fred Meyer before the gym, dragging a giant outdoor nursery cart to the car with my new deck storage box on it, and one of the guys unloading plants from the nursery truck was all like “how YOU doin?” Joey Tribbiani style. I had no idea why until I got to the gym and saw that my nipples were poking right through all my gym clothes. HE-LLO! I guess men can appreciate that no matter how fat and old the girl is!

Success today. On to day 239!

You really got my mind swirling wiith the white bean idea. Black beans are extremely hard to find here and then only dried ones if at all. But white beans...I gots some white beans (some I've never seen before)

I also had an insane creaving for salted butter caramel ice cream..oh boy, can you imagine trying to decarb something like that?

I can't have a tattoo, with the coumadin it would bleed out so bad that most of the ink would dissapate and it would look like a ghost. Living in Seattle most of my friends had gorgeous tattoos and I used to envy them SO much. I did manage to get my nose pierced and still can't figure out how the guy missed it when I wrote about the coumadin on the form. A friend of mine went with me and after he stuck the needle in my nose and pulled it back out she was all excited and said "OH wow Diane I can't believe you aren't bleeding all over the place being on coumadin" I thought his eyes would pop out of his head...he said he wouldnt have done it if he had seen that

OH I WALKED YESTERDAY!!! Me and the admin. We walked around the building and the one next to ours. Where we saw a scary racoon dumpster diving!!! Now I haven't ran full speed in years. But if that little bugger would have jumped off of that thing and headed for me I would have made the news!!!

I got my exercise in too. Not the full time, reps, but I did it! Have to make it a daily habit!

Angela, I did use canellini beans to make a white bean cake. It left something to be desired though and could use some tweaking ... that's where you come in!

Janet and Diane-- Lauren has a white bean cupcake thing on her blog-- I'll try that. Maybe for mothers day strawberry shortcakes?

Ice cream is easy to make low carb-- I'm sure the caramel one couldn't be too hard? Do you have an ice cream maker? It may have to be vanilla ice cream with caramel sauce and a sprinkle of the salt on top, but that may work?

Have a good day at work, Kitty! I don't know what my exercise day will be today-- supposed to be swimming, but my husband is home with a headcold and my grandma (last minute, of course) asked me to take her to some eye treatment thing today. So, I may just have to go later, and not at my ususal time. I'm not liking being off schedule! Oh well, as long as I get it in, I'll just keep on keeping on!

Ang- I know the cream cheese ones of which you speak, OMG they are so good, we had them chocolate cupcakes with cream cheese in the middle and chocolate chips, yummy!!! I found this bakery in Las Vegas that makes all these funky flavored cupcakes, I am thinking of doing that instead of a wedding cake, flavors like:
They make a fancy little display and can even decorate it, the restaurant we are going to makes a great dessert as part of the meal, so I thought maybe get little boxes and people can take these back to their room for breakfast in the morning? What do you think? They are closed on Sunday so I have to get them Saturday anyway so might as well keep them sealed and get little decorative boxes, which flavors sound good?
