Fresh Collard Greens: First you need to pick some good bunches. The ones that are pretty, green, and full.

You want to pick em half way up the stem, break em', cut em' into ribbon size pieces. (Roll em up together and slice). Wash, wash, wash, let them sit in sink, sprinkle with salt while in sink, slat carries grit and dirt to bottom of sink. Wash at least 3 times.

If you like meat in them (good for flavor) I use smoked turkey or hog mogs. Boil meat for an hour or so. Add Green after to meat after hour. Water should cover green. Boil for another hour and a half. The meat is usually enough salt but I add black pepper and garlic, sometimes jalepeno' peppers also. Start early in the day. Boil last 30 mins with lid half off to boil off some water. That's it! Low Carb, unless you add cornbread and fried chicken!

I read Cass's journal! Thats crazy! Thank the lord I'm not the woman I use to be! I had a very low tolerance for BS! That girl would've been Jacked the H**L UP!

Yes what he said.^^ If I'm feeling lazy... I buy the prewashed grren in the bag (still wash em') and add a can or two of the Glory Green in the can. Or somtimes I fry some cabbage in bacon and drippings with chopped onion and add a can of Glory greens or leftover fresh green together for a whole new meal. Yummy!

Actually hog mogs are what I mix with chitterlings about twicw a year, Sorry! Ham Hocks are smoked. They're found in the meat dept near the fat back.

They were plain. That's why I had to throw them away. I would have kept eating the peanut ones because peanuts are low carb.

Cannot argue with Amy's logic regarding peanut m&m's! I'd have used the same logic too I'm sure. Which is why they're not allowed in this house!
