This is day 2 of eating low carb. Actually, my goal is to be eating basically less processed and including more fresh fruits and veggies in my routine, but I know that carbs have been my downfall. I will wait and start adding fruits in after 2 weeks. My son is 22 and found out about a year ago that he has type 1 diabetes so I need to be cooking more along these lines for him anyway.
I have been contemplating lc eating for a while, but my daughter-in-law was trying to do weight watchers so I started that with her to give her a partner. I know that ww works, but I just slowly veered off path allowing myself a little extra one day after another. I am 46 and I have read numerous articles about how eating lc is actually better for "middle age" women. I knew I had put on a little weight, but yesterday morning I made myself step on the scales and realized that I had gained about 10 lbs since January. I weighed in at 202.2. Yesterday I ate: Bkfst - 2 scrambled eggs, 3 slices of bacon / Lunch - Cubed pork chop, salad / Supper - 1/4 c nuts, pork rinds / Water consumption: approx. 90oz. I know that supper wasn't nutritionally sound, but I had a meeting at church and didn't have much time to eat so I just grabbed something that was handy. It surprised me because I really wasn't that hungry anyway. So, this morning I stepped on the scales (I know they tell you not to weight eryday, but I have never been good at following instructions) *197.8 I know these results are not typical and the whole "it's just water weight" arguement, but WOO HOO!!! That's enough to encourage me to make it through another day or 2! Today I have eaten: Bkfst - 2 scrambled eggs, 4 slices bacon / Snack - Emerald Cocoa Roast Almonds / Lunch - Brocolli w/cheese sauce & grilled chicken / Snack - cubed sharp cheddar cheese / dinnner - TBD |
