down 4 lbs, currently at 244 NEED TO GET TO GYM! its not that i don't want to go its just SO HARD to find time with two kids and a full time job, eeek!!!!! Breakfast sausage links and jalapeno string cheese snack celery sticks/carrot sticks and ranch-w/ coke zero lunch either left over chicken stirfry with mashed cauli or left over broc alfredo casserole dinner either taco salad or creamy chicken... probably the creamy chicken CREAM CHEESE CLOUDS!!! |

Thursday 10/13/11
Got up at 5am for my workout, did the eliptical for 30 minutes, jogged on treadmill for one minute and walked for another 4. then did some leg weight machines. Felt great, hoping to go tomorrow, if i make it i plan to kill myself on the stair stepper, watch out! ![]() Breakfast scrambled eggs with sausage snack part of an atkins bar and carrots with celery lunch left over broc alfredo hamb casserole dinner taco salad |

Thanks it was awesome and it paid off, i went from 244 yesterday to 241 today, within two lbs of my lowest weight since i had my setback, yay! So basically it was like the last two weeks were stalled but thats ok
you gettin to the gym at all? I plan to kill myself on the stair stepper tomorrow since we wont be doing anything during the day but sitting around watching football |

Happy Tuesday!10/18/11
I got to the gym on Saturday and KILLED IT! Was going to go Sunday but then UGH got a stomach bug or something, was sick and then couldn't get off the couch. Spent most of yesterday recouperating too... The little carb whench was whispering in my ear on sunday/monday too. Im glad I didn't listen! I went to the gym this morning too. I feel so good when i work out, i want to keep this momentum up! I know that its necessary to get the kinda results i want to get so im going to keep at it! Can't wait until the new year, im so excited to see how im going to look/feel! I really want to get to 200 by the end of January! WEIGHT 237 today yea baby! Breakfast scrambled eggs and sausage patties snack string cheese and coke zero lunch left over pot roast with mashed cauli dinner philly steakums Desert Low carb pumpkin pie Forgot to mention I made a low carb pumpkin pie, it was yummy! I made the crust with raw almonds that i ground up in my coffee grinder. I will be ordering almond flour tho for the thanksgiving version. it was so good and totally took care of my carb craving! Its great to be able to eat that and NOT feel guilty!

OMG there is a delicious pumpkin roll recipe I made last year I have to find it, I cant bake so I got all the crazy LC stuff and had my aunt make it, it was almost as good as her regular version, best pumpkin roll I ever ate! I will dig it out for you if you want it |

Add almond flour and Splenda. Mix well. Press firmly into bottom and up sides of 8 or 9 inch pie plate and refrigerate until firm. Preheat oven to 350°F. In large bowl, mix all filling ingredients in the order given. Use your own judgement about spices some like a more cinnamon-y mix and others like less. This is your call, but amounts listed result in a rich, aromatic "classic" mix." Pour mixture into prepared pie shell and place in preheated oven until center tests done (about 45-55 minutes ovens vary.) Allow to cool completely before serving. This pie must be kept refrigerated (there's no sugar to act as a preservative), but this pie is amazingly delicious!! Top with artificially sweetened real whipped cream if you like (I do!) This pie is at its best the 2nd day! Makes 8 servings. 8 net carbs per serving. I didn't have the almond flour/meal so i ground up raw almonds myself in the coffee grinder haha. Its so yummy! |

Well my weight jumped up to 239, which is ok, glad i'm still under 240! Just gotta keep it moving! Breakfast sausage patties snack part of an atkins bar lunch left over pot roast/carrots/mashed cauli dinner prob casserole cheesey hamb desert mmmm pumpkin pie! Definitely NOT making another one for awhile! |

I know i hate it! I had a cheaper daycare but wasn't please so we had to switch, we went from paying $95.00/week to $150.00/week. Its infant only daycare and she only has four babies. its ideal but it HURTS! Plus i cut my hours back to be able to pick up my kindergartner after school so i'm not making as much money and we are spending more money then expected. BOO!!!

Did you know that pumpkin is a low-carb super-food? This low-carb pumpkin roll with cream cheese filling is a sugar-free and low-carb version of a traditional pumpkin roll. It freezes well, so you can pull it out for guests. I like serving it with whipped cream and a sprinkled of toasted chopped pecans. Yield: 15 1" slices Ingredients: 1 cup almond meal 1 teaspoon baking powder 2 teaspoons cinnamon 1 teaspoon ginger ½ teaspoon nutmeg ½ teaspoon allspice ¼ teaspoon salt 1 ½ teaspoon unflavored geletin powder Sugar substitue equal to ¾ cup sugar (liquid forms of sucralose or other zero-carb sweeteners preferred) 1 cup canned pumpkin 4 eggs ¼ cup oil ½ cup water Filling 1 8 oz package cream cheese, softened 1 teaspoon vanilla ¼ cup sugar-free maple syrup (see note with filling instructions below) Preparation: Preheat oven to 375° F. 1. Prepare pan - line 10X15 inch jelly roll pan (nonstick preferred) with parchment paper. I like to use butter under it, at least around the edges, to "glue" it down. Then butter the top of the paper as well. 2. Mix dry ingredients well. Add wet ingredients and beat for 2-3 minutes. Pour into prepared pan. 3. Reduce oven heat to 350° F. Bake for about 15-18 minutes, until toothpick comes out clean. Do not overbake - you don't want the top to be browned, or the cake will be too stiff to roll. 4. Cool in pan for about 5 minutes. Then, cover with a clean dish towel and flip the whole thing over. Carefully peel off the parchment paper. Now, roll the cake in the dish towel, starting with a long side (so the cake will be long and thin). Let cool for 10-15 minutes. 5. Meanwhile, mix up the cream cheese, vanilla, and syrup. Adjust to taste - if you want the filling sweeter, you can add a little more sweetener. Make sure you use a syrup that you really like - some of them are nasty. I like the ones made by Maple Grove the best - there are a number of brands including "Vermont Sugar-Free". 6. Unroll cake, but don't try to get it all the way flat or there is more of a danger of breaking. Spread filling on cake and roll the cake back up. Cool completely in refrigerator before serving. Nutritional Information: Each serving has 2.5 grams effective carbohydrate plus 1.5 grams fiber (4 grams total carbohydrate), 5 grams protein, and 151 calories.

Hun what powder are you using? Beverly international is very good and you can use almond milk and ice, very good and I am picky!!!! The Atkins Ready to drink shakes are good too I think. I get them at BJ's where they are a little cheaper, I use my blender at home and the Ready to drink here at work!
