Good morning Bekki..

Last night I had baked chicken breast and my own style of green bean casserole...its all in my post.. but I think I forgot to add those onion things in it.. I mean.. I had some on top.. I don't think I added it to my post.... it was delish...

I have made the meat balls... very tasty.. I need to make them again.. I get to where I repeat things and forget others....lol

House.. I've watched it.. his roll is to cocky for my taste..lol..I'll watch it if there is nothing else on... but the episode where he challenged God made me upset.. so.


and yes, Bekki.. the home made over is for needy people.. I love to see the bedrooms they make for kids.. too cool.. last night they redid this house where the lady ran a day care.. I used to be a day care director.. it was my fav job ever.. so I loved seeing that.. ..

ok gonna get..hope you have a great day..

oh.. my work is open as well.. just happens to be my day off..

Hi friends. I had a wonderful day.
My BF stayed over last night and this morning we woke up early. Habit I guess since I usually have a 6:30 meeting mondays.
I made a pot of coffee and eggs and bacon for breakfast. Then we watched the news.
I have been wanting new counter tops since I bought this house 5 years ago so we went to HomeDepot just to look. I Picked out a style I like and they are coming to measure this week!!! My BF, dad and I will be installing them in 3 weeks! I also picked out my floor for the kitchen. All for $1200. Including new sink and faucet! I am excited>

I have not ate anything but breakfast and a Cherry Coke Zero. For dinner I will have left over chicken thighs, avocado, and mayo. Maybe some radishes.

What a great day off. Next weekend we are doing a full day of yard work and a dump run. So I have alot to do in the next three days. I want to have the load ready to load Saturday. Recycling and dump.

Sorry to ramble but I am on a personal high! Did not even weigh in today!

wOW $1200 FOR ALL THAT.. you did good girly....I would love new counter tops..we had new flooring up in about 4 years ago.. now its siding and windows.... it will look so much better..

Hi Bekki! I'm a poster, fairly new, and you left a post on my thread called "freewilly's crazy maze away from home"...and I just found my thread! I get lost something fierce on this website! Hi friends. I took a few days off. I actually did not open my computer. I have not ate on plan for a few days but have been working like a mad dog outside since the weather is beautiful. I have not gained as of a few minutes ago. I will get back on track.

I got my tax return today. I treated myself to Jillian Michaels Fitness Ultimatum 2009. I am excited to do this. I ran into someone I have not seen since October. She said looks like you have lost alot of weight. Not alot but yes I have, thanks for noticing. Felt great.

Hiya.. its good to hear from you.. we get worried when your not here.. but its understandable to take a few days off.. .. let me know about your new work out video.. I have the biggest looser on with Bob.. .. haven't done it in a long while.. but I will ..Is Jillian mean on there?.. my friend thinks I should try to get on there.. I told her know.. I would end up with Jillian and cry all the time.... honestly its prolly what I need.. but not for the world to see.. I wouldn't wanna scare anyone in my tube top and tight shorts....

I walk alot but use to run. My BF got me a pai of really great running shoes for Christmas that I want to use to start running. I have been doing the Wii Fit and just bought Jillian Michaels Wii training.

My BF came over last night sick. Slept all night so I doubt we will do yard work and a dump run today. Rats,,,and the next week will be nothing but rain. Oh weel, maybe a day of meal planning and grocery shpooing and internet and movies On Demand. I need to eat on plan and get back in the swing of things.

I am bending over, can someone kick me in the *@$ to get me motivated and back on lc track?

Went on the dump run, at least that got done. I felt bad because DBF looked like he was going to die the whole time. I know he loves me because it took all his strength to help load the truck and even asked me to drive, having to catch his breath the entire time.

Now he is back to sleeping in my bed and I am watching tv and playing on the internet.
I have a turkey thawing. 20 lbs. I hope to cook it tomorrow....if it thaws Should be great eats for the week. Got it on sale for $.59lb.

Rambling I know. Bored!!! Very bored!

I think I will BBQ some steaks tonight and asparagus.

What a crap weekend. BF came over Friday sick and has been in my bed since with the exception of our dump run. I slept on the couch both nights so he could sleep and so I would not catch it. Now I have a sore throat.
I am still in the same sweats I put on Friday night. So lazy.
I am going to get some coffee going and then get in the shower.
Its raining outside so no yard work. I can get a few loads of laundry done, tuna salad made, and work out on the Wii Fit and Jillian Wii game.
I can not wait to sleep in my bed!!!

Now to sit on my butt again. BF moved to the couch so I guess I wont work out. Maybe make tuna salad.

Phl, no I did not search for recipes but I will be now. Rainy outside, and house did not get dirty this weekend.

I know a thing or two about fattie's. Here is a post I made about them awhile ago. Read this and you will know how to make them.


Here is how I made mine. I copied and pasted from this from a friends journal. Any questions...just give me a yell.

take a one pound tube of thawed sausage and put it in a one gallon ziploc bag. Smash the meat down with your hands then pick up the husband beater, i mear rolling pin and roll it out so it's the same thicknes in the baggie. Open the baggie and cut the seams on either side of the mouth of the bag down to the bottom seam. Do not cut the bottom seam. Peel the top part of the baggie off the meat and flip it over so the outside end is now laying on the counter and sausage is exposed. Put whatever filling in it that you want. Make a pizza, make a taco, I seen people put pankakes and bluebarries in them before. Now comes the fun part. You take the sausage by the end and start rolling it up into itself covering all the goodies that you put into it. Once it is rolled up, fold the ends of the fattie to seal everything up.

Not done yet.....

To make the bacon weave you start with 1 slice of bacon laid length ways across the fattie. Ya know what? A picuture is worth a thousand words. I hope I don't get in trouble for this but it's just eaiser this way. If the link has to be pulled, thats fine. I will take pices of the next one I do. Anyway, here is a link to how to do the bacon weave

I smoked mine in a bradley digital smoker for about 3 1/2 hrs using mesquite smoke. You can pop it in an oven but make sure you have a drip tray underneith if it. I would place fattie on a drying rack and the drying rack on a cookie sheet. I had it in untill the inside temp was 165 degrees. Pull it out, let it sit and cool for about 20 minutes so the cheese and all the other goodies don't come oozing out. Enjoy!


one more thing....
After you have the bacon weave done wrap the whole thing up in plastic wrap. Grab the plastic wrap close to the ends of the fattie on either side of it, lift and place it as far away on the counter as you can reach. Now pull it back to you, rolling the fattie in the plastic wrap on the counter. Keep your grip on the ends. Do this several times. You will see it getting shorter and fatter the more you do this. This tightens up the bacon and helps keep the fattie from having a blow out. put it on the rack and let it cook.

Let's see....I've made a couple with egg and cheese, a couple with pizza sauce cheese and pepperoni, one with medium black bean and corn salsa mixed with shredded taco cheese and one that was bacon cheese burger. I used beef instead of sausage and filled the inside with bacon and Velveda cheese. Wrapped them all with a bacon weave. If I make 2 of them at a time I can eat on them for a week.

Just make sure that you cook untill the inside temp is between 160 and 165 degrees.
