you hoo AMYB where are you? We are all waiting to here how your appointment went and how you did on day 2 of your new eating. That is usually the toughest day for folk cause the carb withdrawals kick in and the body is usually slow to kick in the fatty acid metabolic furnances so energy levels drop too.

Okay..thing are not going great . I need to be honest here and put this out here. As much as I want to say the whole kimkins diet thing is behind me..it is not ..and I wonder if it ever will be...That being said...I am going to have to not only retrain my body but even harder my mind...damn Kimkins.con and damn me for ever thinking that I had found the quick fix ...cause the quick fix has set me back....


My appts have been hard this week and I have two more days of hard appts. The lab called for more blood work and I have a scan and a MRI this week. And some medical stuff for Philip...so that leads me to this...

I am a control freak..did anyone of you know that? And I feel like I have lost complete control of many things in my life. I have come to believe I am a tad crazy lately.

Something entered my mind today and has been nagging at me..I had planned to put it here but I think I will save that for my blog...

So back to my diet,, I am trying. I am. MOMTOE is trying my nerves..love you but you are. Making my bible apart of my obsession is plan down right cruel and brilliant , Let me tell you what this wonderful pain my my butt special friend said today..ready?

She feels like maybe the not eating a lot COULD be a trigger from my KK days vs me having a hard time eating alot due to my meds. So she wants me to not weigh...and not only that but she pulled the put your bible on there so I will not sneak and weigh...as if I would..ha. Please MOMTOE STOP being so sneaky and smart.

So 2big..I can not do anything at all..No lifting anything over 5 pounds , no stretching, no bending, no dishes, no laundry..NADA. I would love to try to get the Juliane Wii balance board thing ...but I will wait..

I know without a doubt that I need to eat and get strong and healthy to help my body heal. I am trying. But it is hard right now with the whole no kitchen and the swelling in my neck and the stomach issues with my neck. So take all of that ..and it is hard. Then I will admit that it hurts my heart to know I was over 160 and I use to be at 136..ouch.

Balance... I need a balance.

I did try WW before I had my operation. Oh those appts were hard for me. I thought I could use that as a maintenance. But of course I never got to goal...and WW was a trigger for me to over eat on legal carbs.

So with all this being said...I need a plan of action.

I think chicken salad and egg salad from the deli is the way to go...with some lunch meat . Gotta come up with some veggies...to go with them..with no kicten.

Know what I want...a recipie for a LC chicken soup filled with veggies that I can eat a lot of ...that would feel good on my throat and be good for me. Maybe by this weekend I will have water and a stove and counters and well a kitchen.

I have more to say..but I am super sore and tired and well I feel sick tonight...so let me end it with this and I will come back to say more...and check in with all of you.

2big..should I come live with you and your ROLL TIDE mom?

Oh Amy...I'm sorry you're feeling so sick, and sore and tired tonight. Are you too sore for a great big {{{Hug}}}? If I lived close I would make you a big pot of low carb chicken soup and bring it to your house for you. Of course I would run the recipe by 2big first to make sure it was the healthiest possible low carb soup...LOL. You and your family are in my prayers.

well you can come but then I'd have to worry did you or Mother eat it as anything that looks like food she eats and if hers is empty then the empty container was yours and your food is hers.

Okay easy soup
do you like pumpkin? curry?
you need one box chicken stock we because of food allergies use Images organic low sodium chicken stock in a box. you can use whatever you want.

then get a can of pumpkin and some onion flaked since cooking is nada at your house.
mix the pumpkin the onion flakes and the stock together.

now if you like curry use 3T curry paste or however little you need to suit your tastes. I like it hot.

Now you got the soup base.
you can pour some of it over a can of chicken ( this would be the easiest swallowing chicken) and heat in your microwave. besure you use a container with a lid so you don't got to clean it off the roof of your microwave.

then just before you serve it ad 2-3 T of cream and you got protein fat and veggies all in one. when you feel better you can use sausage instead of chicken. and it works with pulled nonbbqedpork too.

Microwave soup is so easy. again buy a box of stock in your favorite flavor beef chicken or veggie.
buy a bag of frozen veggies in a combo you like the taste ands smell of. they even have soup begininings but most have corn in them. then in a microwave covered dish heat the veggies with about 1/4 c of the stock. when the veggies are almost cooked add the rest of the stock and nuke to a boil. then you decide if it needs more flavor or not and can add herbs and spices of your choice.

then when you are ready to consume you add your protein and your fat be it some sesame seed oil, even coconut oil, cream, or butter and heat again. you can use cheese, chicken, ground beef, pork or turkey and change the flavor of the soup each time you have a bowl.

I'd suggesst you get a friend family member or neighbor to cook a bunch of pork hamberger and or ground chicken or turnkey for you and then bag it in single serving containers and freeze. you can go 2 weeks easy on that pulling out what you need and nuking the soup base.

or you could get a low carb buddy who lives near by to cook you a pot of soup and sote it in your fridge ready to go when you are but you need to let folk know what you like and don't like cause Mother loves liver but I puke at the idae of eating it when I see it raw so I would not like anything liver including pate!

oh and if you really love pumpkin Vickie has a recipe for pumpkin mush that you could add some cream cheese or cream too and enjoy an easy to swallow filling low carb dish for OWL if that is where you are eating your Atkins.

oh and our local subway said in 2004 that their tuna salad was just mayo and tuna so you might be able to get some of that brought home for you.

do you have a blender? cream of soups are microwave easy if you got one.

oh and not to be nitpicky but since you use your bible daily how is putting it on the sclaes supposed to keep you away from the scales?

I'm sure the docs are weighing the heck out of you at each appointment so be sure to stick your fingers in your ears close your eyes and sign lalalalalalalalalalalalala until they are done and the number has vaporized.

Now see Amy...I told you to listen to 2big. I love that pumpkin curry soup! You should definitely try THAT!

Ummm...sorry, I can't help you with MOMTOE...you're on your own there...LOL. But I do agree you need to say off the scale. Did you know I don't have a scale?...well, I don't...I can get all weird about numbers on a scale...so I threw the darned thing away. Now I have to weigh myself at my mom's house...and she keeps the scale tucked away under the microwave cart in the back room. I have to pull it out and dust all the dust and cat hair off of it and carry it to a room with a hard floor....which, of course, draws the attention of everyone in the house...and then i can weigh on it...LOL. So...if putting your bible on the scale doesn't do the job you could always throw it away and weigh at my mom's house

Make the pumpkin soup and feel better my friend.

2Big, I didn't say she couldn't be in the same room with her scale, she just needs to stay off of it The whole reason I told her to put her Bible there is I KNOW she won't break her word when she walks in there and see her Bible staring her in the face. She just would not be able to. Desparate times call for desparate measures

Oh, and those soup ideas are GREAT, 2Big. I'm going to be using some of them right here at my house for sure!

hey AMYB do you have a chain resturant called the Soup Kitchen in your area? they deliver steaming hot soups for lunch in our area they also have sandwiches and other non low carb stuff, and everything is home made so you could ask about some tuna and chicken salad without nuts or crunchie stuff in it cause of your swallowing issues.

I take Mother there cause her garden club loves it and they spoil her rotten fixing special nonallergic plates for her. Cause she is allergic to their breads they don't just do sandwich minus bread, they supplement the sandwich with extra fresh veggies and more of the meat cause they feel bad charging her full price for that scrawny little pile. Of course it is more then she can eat when they get done but she feels good and they do too.

Maybe you could ask some of the folk in your bible study group to fix soup made with just what you want in it. Tell them you got swallowing issues and tummy upset issues and they should be very willing to help make just what you ask for.

If you like cauliflower the cream of cauliflower is just like cream of potato soup. I don't think cream of broccoli would be a good ides right now as the gas issue might upset your tummy even more.

yogurt ful fat should be a good pick and if you like flax cream of flax cereal goes doen real easy. Just heat 2-3T ground flax seeds with 1/4 c water and some sweetner of choi8ce and cinanmon or a davinci flavor if you do those. I don't recomend using extract as the aclohol bit will still be there. then nuke a minute stif gentley as the more you stir the more the eggwhite factor will develope. add 1-2 T cream and you got a nice breackfast cereal that is legal and healthy. if you use protein powders you can add a scoop before you nuke and skip the flavoring as the PP will be flavored. when you can swallow better you can over nuke the cereal and get muffins or even chips if you use less water.

Oh and if you got PP you can do a PP hot choclate. 1 scoop PP, 1-2T cocoa powder dark or regular, and 1 cup water mix and heat like coffee in the microwave add 2T cream and sweetner of choice and enjoy. If you are using a potassium supplement like Nu salt then you could add some to this and not taste it.

hey there where is your menu from yesterday of what you had?
where is that food likes and dislikes
and where is the extra nutrtion needs your healing body needs your docs have recommneded?

Oh and I had a great idea since you want soups, maybe the LCFs living near you could have a soup party at your house and each bring a pot of soup for you that is induction or OWL friendly and flavored like you enjoy and all you would need to do is put it in your bowl and nuke when ready to eat?
Oh and we all need to send you paper plates and soup bowls until your kitchen gets fixed or your kitchen will lokk like MrsM's sink as the dishes pile up.

I am more of a reader than poster, but I have read all about you and your wonderful family in your blog.
Just a couple of tips. If you have trouble swallowing, try the egg creams. Lots of recipes on the boards. Fawn is a wealth of knowledge about all kinds of healthy stuff- supplements, healthy fats, etc
Focus on eating healthy, not your scale!

Hey 2big..
This has been a rough end of the week and weekend. I have had appts everyday and Friday had a big appt with Philip. So I just have not been up to being online too much. Yesterday I had my first dose of meds and broke out with a beat red swollen face...so I came home and slept all day..
But here I am today.
My kitchen should be done in a few days and I will make some soups and LC foods to grab and eat.
Until then I have gotten some Chicken salad and some egg salad from the store.. Also some pre pack salads...My scale is up and down and then back up. I know it has to be with the meds because my fingers are really swollen..so my goal is to not weigh..
I know it does me no good...No good to weigh..someone come take my scale..

Glad you are still here.
Chicken salad and egg slad are excellent choiices. Ask DH to help you with the scales and take them away somewhere and only allow you to have them on certain days unless somebody else in the house needs them.

I hear you on that beet red face and next day body swelling. Happens to me every time I get something with soy in it. Hope yours doesn't last too long or they can adjust the meds to keep it from happening each time.

Well on the bright side you didn't post about cravings for cake break pasta or fruit, nor about induction flu symptoms so your Atkins induction must be going well.
Can't wait to see how well you did on day 15.

woo hoo keep shrinking. yep strange as it may seem eating actualy stimulated our metabolism to help get the body ready to burn off the food.

When you get back we want detail like what veggies did you have with those protein salads, the chicken and egg?

I've been around. I just couldn't find ya'll. Seems like everyone is scattered. I do see a lot of old friends hanging our here in your journal.

By the way, I'll hold your hand on the weight thing. I'm feeling sort of out of control. I'm thinking KK's has a lot to do with it -- or at least that's what I'm going to blame it on. You seem to be doing pretty good going from 160 to 150. I bet a lot of yours right now has to do with the operation, medications, etc.

I'll be with you in spirit during you appointments this week.
