Eating on plan--and doing great
It has been three days back on plan, and now I have NO desire to eat anything that's not on it. Last night, I thought about eating a biscuit, but it wasn't difficult to not eat it.
protein drink w/ milk, 1/2 banana, 1/2 or less cup of raspberries
cauliflower w/ water, HWC, butter, garlic salt, pepper--pureed in the food processor
cup of chai
protein drink w/ hemp milk and milk, 1/2 banana, 1/4 c raspberries

Elliptical--30 minutes of easy walking because I was so tired from being sick.
Had Indian food for dinner (okra, a little chicken, papadum, lots of water); 1/2 c (or less) Fentimans' Curiosity Cole--woke REALLY puffy.
Been eating OK foods, when I've eaten. Not much eating going on this week because of new wires and rubber bands.

Slow weight loss
I was reading here about a woman who last 100 pounds in the past year, 8 months on Atkins, and has another 100 to go. I started thinking...one year. I've been trying for most of the past 3 1/2 months, and I'm down 10 pounds. 10 pounds!
Yes, yes, I KNOW that's 10 pounds that I could still have, and I'd likely weigh even more than that if I hadn't been watching what I was eating during most of the season of holidays, but 10 pounds in 3 1/2 months is really discouraging to me!
Could I even lose what I want in one year? ... calculating ... NOPE! It would take 2 years.
So, after wondering and mentally whining to myself about how frustrated I am, I had an intelligent thought:

So...I went to the ND on Dec. 4 and I weighed 198.
I went back up to 204.5 in December--nice job.
Now I weigh 195.5. I was so excited about having lost 9 lbs, but according to the doctor's records, I've lost only 2.5.
STICK TO THE WOE!!!
It IS nice to know that it's not water-weight, though. I think that's a lot of where the change from 198 to 204.5 came...from going off Atkins induction-type eating to a different WOE. I do retain water, more than I did on Atkins. So, I guess in an odd reality, I really should have weighed more than 198 when I went to the doctor.

Back UP 4 pounds! I've been eating small amounts of things here and there...and potatoes and sprouted bread. Somehow I got off my One Month Challenge.
Why is losing weight so hard? I want to just want to lose weight and have it happen.

Sunflower Seed Waffles
For one recipe:

Sunflower Seed Waffles
2 1/2 c water
2 c rolled oats
1/2 c sunflower seeds
1/4 c ground sesame seeds (measure before grinding)
1/2 tsp. salt
Put all ingredients into blender and blend until smooth.
Bake in a medium hot waffle iron 8-10 minutes. Do not open waffle iron before time is up.

Back to counting calories...with more carbs
I realized something this morning--
I wasn't tired, lethargic nor unmotivated.
So, I thought...and realized that I've been feeling better the past few days. Has the switch in my thyroid medication finally caught up with me? But I'm back to the same dosage that I was on when this fatigue first started. I've been on low-carb (or lowish) the entire time that I have been fatigued--since November, at least. Started Atkins on Oct. 19(?).
What has changed with my diet:
I have been eating small amounts of white flour products for the past few to several days. I've been eating potatoes most days of the past week. I've had bits of fruit here and there. I even ate a normal size portion of triffle yesterday. I've eaten most of a loaf of sprouted bread (18 carbs/slice) in the past week and a half. I had rye bread croutons w/ my Beir Onion Soup for several days in a row.
So...is my body wanting more simple carbs? Is my body just wanting more carbs in general? I've never thought that simple carbs were a great, wonderful thing, but maybe I've been wrong.
But my weight has gone up, and I'm retaining water. Feeling good, but fatter.
Here's what I'm going to do:
*Enter food into ****** to ensure that I'm not eating too many calories (that could be why my weight has gone up, but it could just be water retention).
*Eat lower fat like my ND wants me to do.
*See if I can up my carb count. Should be easier to do if I'm eating less fat.
*Keep my veggies at just over half of what I'm eating.
So far today:
sprouted bread w/almond butter and butter (on different parts of the bread, not together)
choco nut green tea (Teavana)
287 calories, 18 g fat, 25 g carb, 10 g protein
stir-fried rice for the kids--I'll try to remember to have a protein drink instead
stir-fried vegetables w/ beef and pork
That falls short of 40% animal protein, but it's closer than yesterday's food!

No time to proofread...
I'm to another "I don't know what I'm doing" point. I took ONE day off weeks ago to see a friend who needed to not have me add more stress to her day by dictating what we ate, and I decided to do that for her. It was my decision, and I was OK with it. Well, since then, I've had many days of eating a little bit of this or that. Yesterday morning, I decided to cut dairy from my diet to see if it really is still bothering me, but by the afternoon, I caved. For dinner...I made crepes. Whole wheat crepes, but crepes, nonetheless. With Wilderness brand canned pie filling on them, and some powdered sugar. See...I don't know what I'm doing.
Weight is still up from my Week of No Scale (It deserves a title, I think). But I haven't done anything to get it down.
I've exercised twice in the past 3 weeks because of illnesses that were contagious. NO, I couldn't have done any exercise at HOME...Oh, yeah, I could have.
So...I'm up on weight, not losing much before that anyway, don't feel well, it might be from dairy (one of my favorite things. I CRAVE HWC!), am out of the exercise habit, don't know if I should try low-fat like my ND suggested, don't know if I CAN do low-fat...I'm just not sure what will work for me long-term.
Wow! I may have just had a revelation. I like variety. As in, I am the most varietyish (I know that's not a word) person I know. I can't eat the same thing more than a couple of times a month without getting sick of it unless it's something that I LOVE. We eat foods from a variety of countries, and I try new recipes all the time. So...what made me think that I can stick to ONE diet for months and months and months at a time? I never have. NEVER.
As a teen, I lowered my intake, but at what I wanted still. I lost weight by being active, being young, and being hungry a lot of the time. I ate when I was hungry, but not much.
After baby #1, I lost over 70 lbs by eating less. Then by cutting wheat and dairy (excluding pizza once/week) for a while. Then I did a few of those one-week diets. I lost a lot of weight in 15 months.
Other times that I've lost 20-30 lbs was on Atkins Induction, low, low carbs, over 2-3 months, with little bites of this or that once in a while.
Now, I've been trying to change my WOE, BUT I'm not really able to stick to it 100% of the time. A couple of women were talking with me yesterday at the Y, when a light bulb went on for me. I was talking about not knowing if I want to stick with high-fat or do low-fat, when they both (one is low-carb and has lost 120 lbs, the other is low-fat and is skinny) said that I have to find what works for me--that is key.

GGC's HWC has 50 calories per Tablespoon. There are 16 Tbsp. in 1 cup. 1 cup of HWC is 800 calories--about 2/3 of a day's calories.
Maybe THAT'S why I gained 6 pounds over a week or so.

Nov 8--tired, but ran errands; felt pretty good otherwise; sore throat evening

I have been very tired. I didn't get up Monday and today when my alarm went off. Yesterday, I went back to bed and got up late. I took a nap this afternoon. I've been basically sitting around wishing that I had some gumption to do something. It's wearing on my mood. I was starting to feel depressed this afternoon--I haven't been getting up with my husband, I haven't been getting any housework done, I haven't been doing the schoolwork with my kids that I want to do, I haven't been able to get to the store to buy eggs... I was not at all happy with myself today.
Nov 13--202.5...stayed awake all day today
Nov 17--198.5...Health--I feel a lot better. Taking potassium to counteract fatigue. Emotionally good. Added veggies w/ dinner.
Nov 20--197...really tired and just sitting around not wanting to do anything. (Well, mentally I want to do a lot of things, but physically, I'm very lethargic.)
Nov 22--I've been very lethargic and sleepy. Most of the time I could easily go back to sleep. Most of the time I don't want to do ANYTHING. This isn't ME, so it's getting frustrating.
Nov 26--the fact that I'm so tired that once I sit down I don't want to get up has me concerned. Atkins hasn't made me feel this way before, so I don't know what's going on.
Nov 27--Thanksgiving--ate off plan: Calories 2088, Fat 132 g, Carbs 176 g, Protein 60 g
Nov 28--200-201...bad water retention, puffy face--which makes it wrinkly, too! dark circles that make my regular circles look like NOTHING, blurry vision, red eyes, throat hurts, ears feel stuffy and slightly painful
Dec 2--200...back to meat, fat and vegetables
Dec 10--stuck to WOE
Dec 18--started WOE--lasted 2 days
Dec 28--Lunch: large salad w/ lots of shrimp, cucumbers, daikon, tomatoes, green onions, avocado, topped with balsamic vinegar and freshly-round pepper
Fell asleep after lunch. I've noticed a couple of times that my heart races after eating a lot of simple carbs--like after lunch. I fell asleep, then tested my heart rate. It was 118 or so. It went down to 93 after a few/several minutes. This morning, it was 73.
Dec 29--204.5...Start WOE
Since Christmas, when I eat sugar, I fall asleep--most of the time.
I still feel tired and like I want to do NOTHING today. I hope to feel better tomorrow. I was going to clean the house, and I have a lot of housework that I had planned to do this week. Instead I'm sitting around thinking about going to bed.

Counting calories since my "you're full" switch doesn't work unless I've consumed around 2000 calories/day:
This morning I had 566 calories for breakfast.
I would've had around 400, but I had already made the protein drink and I didn't want to throw it into the garbage. Now that I know how many calories are in it, I'll be more careful about the amount that I make, and won't just chug the rest of it because it's there. I didn't think it would make that much of a difference! Then again, I didn't feel hungry, so I should've had one glass and dumped the rest, even though it's a waste of money and (organic!) food.

* shopping in Portland with a friend of mine--I have to choose a weight or size for this one. She's really good at getting me to try on things that I wouldn't try if I were alone.
* hiking with DH--Hmm...that could be a goal for...say...June?
* walk a 5K race with the kids
* Oo! A new movie for the iPod for every 12 miles on the elliptical.
