LUNCH

2 chicken roasted red pepper & spinach sausages cooked in bacon grease w/ 1 oz soy cheese that actually DOESN'T contain any milk! Now that's amazing, because even the dairy-free options usually contain casein (milk protein). I guess it's because most people who have milk problems don't have a problem w/ the casein.

I want some more food. It sure would be nice to have some coconut bark right now. Why didn't somebody make some for me? I have all of the ingredients. I like it w/ cocoa, sweetener, chopped roasted almonds, while still frozen. YUM!

Oo, and I have the ingredients for lc haupia!

Going back to bed. My throat and ears hurt, and I'm sniffley. I haven't been sick all winter! And now that I cut out dairy, I get sick? I thought that it would HELP my immune system. Maybe it's freaking out my body.

I'm down 2.5 lbs in 4 days. Yay! Keep going, weight! I want this to work, again, and I want to quickly get back to my "real" weight (154--the weight that I was before taking off December...which became 4 months! ).

Up .5 lb. Likely because I have lots of water retention because yesterday I ate:

bacon (not low-sodium like I usually have)
SPAM fried in olive oil w/ grilled onions
pork rinds
pepperoni
Russian sausage
salad w/ bottled Italian dressing
pork rinds w/ hummus

3 cups water
6 cups tea
1 bottle diet Mt. Dew (It sure tasted sweet! )


So, lots of sodium and not enough liquids to deal with it.

Coconut Bark recipe

2 c coconut oil
1/2 c cocoa
18 pkts (equivalent of 3/4 c sugar) sweetener
2/3 c toasted, chopped pecans
1 1/2 c unsweetened coconut flakes (not the shredded kind)

Lemon Marionberry One Minute Muffin recipe

1/2 cup almond meal
1/4 c flax seed meal
1 egg (duck)
1/2 tsp baking powder
1/8 tsp baking soda
pinch salt
1 TBSP coconut oil, melted
1 TBSP olive oil
3 pkt sweetener
1 oz (5-6) marionberries, chopped
6 drops lemon oil

Beat egg and oil. Add rest of ingredients and stir until thoroughly mixed. Cook in mug in microwave for 2 1/2 minutes (dependent upon microwave).

fat 80
carb 30 (15 net carbs)
protein 28.0

Hoping that I had a lot of sodium in that late dinner last night.

We went to an Indian restaurant and didn't get our meal until after 8 because they gave it to the wrong couple. The owner came and apologized, as did the waitress and the guy who delivered it to somebody else. We got a free meal! Yay! Now to get ride of it.

HOW can I have eaten 800 calories before lunch and still feel hungry?

Division of grams:
fat 74
carbs 11
protein 30

That's 80% of my calories from fat. Fat usually makes me feel full. I feel like I could still go to a buffet!

166.5 then 165 5 hrs later after sleeping more

I'm trying to not be frustrated. This is day 9, and I'm only down 1 pound. I am not drinking as much water as I need to not have water retention, but I usually lose weight anyway.

Today's food plan:
LOTS of water

lunch
chicken breast fried in bacon grease
coconut oil candy

snack
SPAM w/ onions
coconut oil candy

dinner
baked chicken
wilted lettuce salad

snack
coconut oil candy


No AS (other than in the salad) and no coconut milk replacement, just because.


That's not going to be enough food, but at least I have some ideas.

Thanks, you two! Most of the time I feel that it had so little to do with ME...more like I keep eating right (so I think) then my body finally just loses some weight. I think that what's been going on is that I've been doing the "a little bit of this won't hurt" thing. I haven't been eating off-plan foods, just foods that are too high in carbs for ME (hummus w/ lots of celery, a TON of coconut curry).

Yesterday I ate only meats, coconut candy, oils, and one wilted lettuce salad. Today's weight is

163.5!!

(I did weigh 3-4 hrs later than usual, though, so it might be up tomorrow.)
That's 1.5 lbs less than yesterday.

My stomach is still distended-looking. DH noticed it 2 nights ago. I might have another germ on top of this one, because I, including my stomach, have felt a little wrong.

It took me a while to figure out that eating on plan results in losses. Tweaking wasn't helping

My stomach is still sticking out way more than it had been in early December. I want this weight to go back down so that I can wear my clothes, again! They're almost all too tight!

Chocolate Gluten-Free Cakes

I made 3 different chocolate gluten-free cakes yesterday, and here are some opinions:

1. Betty Crocker gluten-free cake mix.
Didn't rise at all.
Dense texture was actually good!
Best taste! Two thumbs up. I will use this again if I don't find a homemade version that costs less.

2. Bob's Red Mill gluten-free mix.
Raised some.
Texture is good.
Had a slight aftertaste that let you know that it wasn't a regular cake, but it wasn't bad at all to 3 of us. The 3rd person made a face.

3. Betty Crocker recipe using Bob's Red Mill gluten-free flour as a substitute.
Rose the most.
Great texture.
Has an aftertaste of dried beans that aren't fully cooked! I'm going to tell people that they might not want to eat that cake.


I do want to find a recipe though, so that I can make it SF
