Chantyl it Like it is

Chantyl it like it is became my nickname in college because i was soo honest and blunt with everyone. I think its an apt name for a journal because I need to be honest with myself about my weight loss journey. I will primarily post my menus and exercise for each day, and whatever else tickles my fancy. So here I go:

B: pumpkin custard
L: spinach dip with fried LC tortillas
D: spinach dip over chicken breast

(also had a few sunflower seeds and sliced pickles for snacks)

about 64 oz water.

exercise: 40 min walk

Onto life: I had a pretty crazy day yesterday, and today was no different. Today, my dream job called. I sent my resume this morning and by 2 we set up an interview! Unfortunately, my car won't start, so i don't know how i'm getting there. But i'm getting there!

So that's where I am today. This morning i weighed: 205.0. My official weigh in days is Wednesdays. This is due to my Thanksgiving challenge on a different board. By Thanksgiving my goal is to be 195.

Ok, that's the beginning, I hope i can enjoy the ride.

Somewhere on here I was reading about emotional eating and I said something or the other about support (not gonna look it up).

Well let me tell you. For as long as I can remember, my crazy older sister has been the least supportive person I know. Its not her fault, its who she is. She tells me the way i eat is unhealthy (but the way she eats is nothing but fast food and fried foods). I think a part of her hates to see me succeed. Even as a child, when i did something good, she would underscore it by trying to get me in trouble or minimizing my efforts. I called home today, with all my emotional stress and of course (she knew what was going on), it was the first thing she mentioned. And i can't help but wonder, why not just be happy. I have supported her through all her health stuff, helped her with school, been a cheerleader for her and she can never just say, "good job." She even told me that if i got a cat, she would never come visit me. LOL. I just wonder sometimes, why are people wired that way? surely its not a good way to live?!!?

On the other hand, I have an incredibly supportive boyfriend. He's always encouraging me and very supportive of my choice for my WOE. More than that though, he's just a positive force. He always tells me how good i'm doing, and always tells me the brighter side. He has been so good to me, I thank God everyday for him.

I really think my sister's bitter about her health these days. Although she's not willing to do much outside the medical establishment to help herself. So, as my boyfriend says "why stress about things you can't change?" And you know what, he's right.

OT: I saw the cat that i'm going to get when i move into a new place! She is so beautiful to me (although not the typical pretty). She'll be mine by Christmas and I'm so very happy about it!!

Oh Marie, my love, thanks! lol

What a night! I had the most intense dream. I dreamt that 3 of my uncles passed away in 3 days! I literally couldn't breathe, i was so numb. I woke up crying. Craziness. I never want to experience a dream so painful again....

Plans for today: Eat on plan, get some exercise in, and go to my interview. The bf's gonna drive me there and wait in the car till i'm done. I gotta do some preparation, but i am pretty excited about this one. Will post meals later!

I forgot, I wanted to make a note that fried green beans are my new french fry substitute. Made burgers last night, and the bf had fries. So i made myself some fried green beans and couldn't believe how yummy they were. They are my perfect fry substitute, even ate them with LC ketchup (which was really weird, cuz it tastes just like regular ketchup). What a fabulous meal i had. So fabulous, in fact, that i may have it for dinner tonight.

ETA: Planned PH called today for a second interview! Yippee! I have to do a presentation for the boss and one of the educators, next thursday. I cannot wait till they email me the topic because I really would love to work for them. In fact, it would be my dream job, and they'd have me forever and ever. I'd love to eventually be one of the policy analysts in Austin. A girl can dream! Well, i have to wow them on thursday! Now i'm done until meal posting time! I think i like this journaling business!

ETAA: I did some oil pulling this morning. My teeth had been hurting so much, and since i dont have insurance, i figured i'd give it a go! Teeth and gums feel better, and look so much better. This LCing is truly an adventure!

Well, i am saddened to learn that Jennifer Hudson has lost both her mom and her brother to a "domestic situation." (some sort of shooting earlier today). I know losing a parent is hard, but i cannot imagine what it is like to lose two people close to you and be in the public eye. I said a little prayer for her tonight, as she will need them. Its a shame that we live in such a violent world these days. I don't know the specifics but i can say from my work with domestic violence victims, "domestic situations" often end this way. Lord, give Jennifer some peace in this trying time.

What a boring day! I have started planning my presentation for my interview. On monday, i will walk to school and see if i can't type up the lesson plans and get as much research done as possible. I am gonna do some pilates tonight... have been putting it off all day, but i'll get it done for sure. Tried the fried gbs in the micro, didn't love it as much as in the oven, so i'll stick to the oven, for sure. Made some "chips" today. Chopped up two LC tortillas dipped in oil salted and baked in the oven...it was quite delicious with my spinach dip! anyway...will post meals and exercise as soon as i'm done with pilates.

Chanty, at least the walking is a bit more exercise for you. I remember one time along time ago I had to walk to work for a long time. One of my DD remembers seeing me from the school window and feeling sad for me, she said she would never forget how much I did for the family all her life but especially then...

yea, its a good thing. I get an extra 40 mins of walking now by walking to class. Its only 2 days a week. But added to the pilates, its pretty good. we're gonna tow my car to dallas next week, so my bf's mechanic can put in my new fuel pump and check everything else out. So hopefully i won't have to walk much longer LOL... in the mean time, this is me

OMG! Stepped on the scale this morning and WHOA! I cannot wait to weigh in on wednesday!

Didn't wake up early enough for real breakfast. Had an egg cream this morning. This one was much better than usual (2 eggs, coconut milk, cocoa powder, ice, VCO, and a splash of ACV)...

Sweety, where'd you get your coconut milk? Does it have any carbs? Is there a coconut cream?
How about Stevia, is it in the baking section at Walmart like Splenda is?
Are you using fresh, frozen, or canned green beans?

I got my coconut milk from kroger (walmart sells it too though). Its in the aisle with thai food. I use thai kitchen brand. Its high fat, low carb, but yes it does have carbs. Ok i got a can, here are the nutrition facts:

serv size: 1/3 cup
cals: 120
fat: 11g
Carbs: 2 g
Protein: 1 g

I didn't look for coconut cream, but kroger had a lot of coconut items so i'm sure they prolly have some.

i don't have stevia, i have sacchrin liquid sweetner. Got it at walmart, but i was looking for a stevia product. So i dunno about that one.

I use frozen green beans!! yummy...but i'm out now..

I spoke to one of my friends who i accidentally convinced to lower her carbs lol...she has stopped all white (sugar, bread, rice, pasta) and although it was hard at first, she is doing great. She's so committed to her health, and i'm so proud of her. I'm so used to ppl questioning my WOE, that i never thought that just a casual facebook message could snowball. LOL. So i have another reason to stay accountable, since we've agree to unvail our success to date over christmas holiday! Now, to get my family to start eating well and for their health... i will try to lead by example...maybe cook a few meals!

Oh dear,

this presentation is alot more than i realized. As of now, my fact sheet is way too much info. I'm not sure how i'm going to condense it, as of yet!!! But the general flow of my presentation seems to be good. I am gonna start typing up the lesson plan now! YIKES, this is tougher than i realized. I hope my lack of knowledge doesn't show too much! LOL... i wish i had a photographicly precise memory. I don't! LOL...back to work!

Hey Marlette,

Green Beans (i used frozen)
Oil
Salt/Seasonings to taste

Direction:

Place green beans in zip lock bag. Toss in some oil and salt/seasoning to taste and shake to coat. Bake in oven at 400 for 35 mins (they will brown alot on the ends). dip in LC ketchup! So tasty!
