Cindi's Ramblings...
Well...I will attempt to have a journal yet again. Please feel free to post in here if you wish!
I am Cindi, 38. I have been married to Dave, 39, for over 18 years. We have one son, Shane, who just turned 18 in June. We also have a black lab mix, Jake, 5 to round out our family. I work as an analyst for a defense contractor. Hubby is a youth minister and is also in school. We absolutely love working with the youth...they are awesome and keep us young! I have tried low carb in the past, but I was not able to give up the carbs and over time, ended up gaining back what I had lost and more. I began low carbing in January, when I found out my sugar level was a bit too high. I have had a few day since then where I have chosen to eat a bit of bread or a piece of lasagna (we were at a wedding rehearsal) but I can count those times on my hand. The last time was at the end of May...and boy did I pay. I struggle with IBS and it seems that white flour and sugar really trigger it. I TRY to eat mostly whole foods. I'd love to eat organic everything but just cannot afford it. I feel so much better on low carb. It seems to get easier to pass up on the high carby junk as the weeks go on. I have always been a slow loser...like at a snail's pace. But, I am down 27 lbs since January...and figure if I keep it up...by December I should be down another 27 ish pounds. I'd love to lose it quickly...but I refuse to get discouraged. It WILL come off.

Hey Sandy! Thanks for the note in my journal. I am not following any plan per se...I cut out grain carbs, refined flour, and sugar. I do have fruit...mainly strawberries, blueberies, cherries, and apples (but not too much). Mostly eat eggs/bacon in butter for breakfast; some type of salad or meat/cheese roll ups for lunch; nuts, cheese, full fat plain yogurt w/fruit, kalamata olives, or pepperoni for snacks; and some type of meat and veggie combo for dinner. I also have heavy whipping cream in my coffee. I am trying to eat more whole foods and would love to eat organic everything, but can't due to cost.

Eats today: Breakfast - Starbucks coffee w/half & half Snack - handful cashews Lunch - grilled chicken salad from Zaxby's Snack - more cashews, pizza cheese, couple of kalamata olives Dinner - something w/ground beef...maybe quesadilla on sprouted grain tortilla --------------- |

You've had great success this year. I'm a slow loser also, so I can relate. ![]() How neat that your DH is a youth pastor. I have three teens and their Youth Pastor is an important part of their lives. I grew up in a minister's home. My dad was a pastor then we went on the missionfield when I was 5. They retired a few years ago. What a great life it was. |

Hey Sue! Thanks for stopping by. Youth are VERY fun to work with...but ohhh the drama!
We have a great group of kids. --------------- 22 July 2008 Breakfast - 3 eggs, 3 pieces bacon, coffee w/HWC Lunch - leftover ground beef and eggplant casserole Snack - cashews Dinner - crockpot chicken breasts w/green tomatillo sauce and pepperjack cheese Snack - Starbucks Tall SF Vanilla Latte ------------------ Yesterday at Starbucks, they charged me an extra $0.55. When I pointed it out, the guy gave me a free coupon. Seems like the only time I lose weight is during the week before or a few days prior to TOM (which I feel is coming soon). I am trying to push water today...Last week the evil scale was up to 210ish and today it was 209.2. Hopefully this means I will drop a few more lbs and go below 208! |

Thanks for the note in my journal. I think your plan is great. Like you I need to avoid grain carbs, but still eat some. I eat lots of organic, but haven't managed to go 100% either, also due to cost. I'm really interested in at least switching all my meat to grass fed 'organic', naturally raised, but the cost is prohibitive! You're doing great! sandy |

Well...before when I tried adding EVCO, it made me nauseous (or so I thought). I quit taking it for a couple of months and started adding it back in (slowly this time). I really love the taste of it in my coffee. Need to update for Wed and Thurs (thought I did
)----------------------- Wed 23 July 2008 ----------------------- Breakfast - 3 eggs, 3 bacon, coffee w/HWC and 1 tsp coconut oil Lunch - Zaxby's house salad with/ tuscan italian dressing Snack - cashews Dinner - leftover chicken w/tomatillo sauce and jalapeno-jack cheese Snack - homemade latte w/leftover coffee, HWC, and SF vanilla ----------------------- Thrs 24 July 2008 ----------------------- Breakfast - 3 eggs, 3 bacon, coffee w/HWC and 1 1/2 tsp coconut oil Lunch - leftover Linda Sue's hotdog chili w/2 nitrate/nitrite free hotdogs, cheddar cheese Snack - handful cashews Dinner - bacon cheeseburger on a sprouted wheat bun (ezechiel bread) and 2 dill pickle spears Snack - pizza cheese ---------------------------------------------------------- I am so glad it it Friday. Food for Friday, 25 July 2008
--------------------- Breakfast - 3 eggs scrambled w/1 tbsp butter, 3 bacons, coffee w/HWC and 1 1/2 tsp EVCO Lunch - hot wings Snack - hand ful cashews, homemade iced SF vanilla coffee Dinner - roast beef w/pepperonicni and mozzerella Snack - pizza cheese ---------------------- Well, just realized that my meals lately have been much about protein and fat and not much about veges. Need to find a way to incorporate more veges. Started incorporating EVCO several days ago...I stay full longer and it is helping curb my appetite. Plus, I love the taste... Helped some friends pack up their moving van this morning...and passed up on pizza served at lunch. Several months ago, I would not have been able to do that ![]() Need to get to Lowes for parts for the lawn mower and I need a storage box for my counseling books/tapes so I can store them for my library at a later date. |

Wow...can't believe its been a month since I have blogged. I am really struggling with losing weight...I don't have a problem staying on plan, but the weight is coming off rrreeeaaallllyyyyy slowy...Sometimes, I want to give up...but I know if I do, I will be right back where I started from...which I DON'T want. Why o why can't this weight just fall off like other peoples???
I am also getting bored with food choices, so I am searching for new recipes. I need to try Cleo's chips and other stuff.Thursday we will start a new Ladie's bible study. Not sure yet what we are going to do. Also, need to begin to really focus and plan for our mission trip coming up next summer to Haiti. Today: Breakfast 3 scrambled eggs, 2 bacon, 1 tbsp butter, coffee/w HWC Lunch salad w/romaine and tomato homemade meatballs Snack iced coffee w/HWC and SF vanilla Dinner not yet sure |

I just wanted to stop by and say ![]() I want to encourage you to not give up. My weight struggles have been loooong too. I lose it, I gain it back....rinse, repeat.
