I'm over it...this time I mean it

Ok, started AGAIN today. Scale said 237.8 GRRRRRR.
Bfast
2 scrambled eggs w/cheese
2 cups coffee
2 sausage patties
1/2 banana (I know this was the only source of natural sugar in the house)

Lunch
1 spoon of chicken salad
1 spoon tuna salad
1 spoon egg salad
greens with ranch dressing
4 cubes of watermellon
Iced Tea

Dinner
Parmesan Crusted Talapia
Brocolli Salad
1 slice cantelope
2 strawberries
Iced Tea

So my plan is to focus on Lower Carb Meals, I am adding a small amount of fruit (natural sugar) to each meal to help alleviate the massive headaches I usually get in the first week or so of changing to low carb. I struggle with water intake but will make an effort to drink some. I want to do the treadmill at least 3 times a week.

Now I am off to change my signature.....sigh

Then off to the treadmill.....sigh

Last night I was only able to do 1/2 mile on the treadmill....will have to improve from there...at least it was something.

Bfast

3 bacon
1 piece cantelope

Lunch
Greens with Ranch
Spoon of egg tuna and chicken salad
4 cubes of watermellon

Snack
1/4 stalk celery with penut butter

Will have to try to drink H20 today....no iced tea at work, I am bringing 1 Coke Zero to have with lunch...

Jumped out of bed ready to start the day.... glad that the bit of natural sugar I added has kept the headache at bay. I feel so much better and full of energy.

Well I see I made a typo in my weight on the 24th it should have been 234.4... but anyway.

Today was a great day, I handled all of the stress of the day well and I wasnt tired at all. I am down 5 lbs and I can feel a diffence.

We are having a goulash type dish for dinner, it contains hot sausage, ground beef, some veggies a bit of dreamfields elbows and a tomato base. Its very yummy.

So I have stuck to plan all day and feel really good about myself.
My husband and my oldest son are doing it with me so that makes a big difference when we all are eating the same thing. It really helps packing food the night before so that I dont have to pick something up on the fly.

Skipped treadmill last night, had to go shopping, this diet is a lot of work, between shopping and prepreparing...I didnt sit down until 930 last night...
Off to work, feel a little fuzzy this morning, but I forced myself back to sleep at 3 when I woke up for my potty run.

Ive lost around 5 lbs since monday.... I have to add the fruit for the first 4 or 5 days or I get massive headaches. I only eat a small amount just to get a little natural sugar in my system. I only had a couple pieces of watermellon yesterday and today I have had no fruit. So I am sure I could have lost more if I had not eaten any fruit, but I just cant handle the headache.

To much salt yesterday I am guessing. So I will have 1 cup of coffee this morning and then start on water.
Feels like the headache is in the background of my brain...feel a little fuzzy.
Can feel the effects of the treadmill in my muscles....(good thing)

I think for bfast I will skip meat and just have 3 eggs with cheese.

I am not expecting this to be an overnight weight loss, I have to expect bumps along the way. I am hoping to lose 10 lbs per month, sometimes it will happen sometimes it wont. But I think that is a pretty fair goal for myself.

I can do this!!!!!!!!!!!!!!!!!!!!!

TOM suprised me.... so maybe that had a little to do with the bouncing scale numbers. (I hope so because I have been able to eat gyro meat in the past *SIGH*)

Changed my mind on Bfast, had 1 hard boiled egg with pepper instead
Had my coffee
And 2 bottles of water.
Out to clean the garage and get some laundry going..... gotta keep moving!!!!

Lunch taco salad-spiced it up a bit by adding a can of rotel to the meat while it was cooking...it was very spicy and yummy

beef with rotel and taco season
cheese
lettuce
sour cream
taco sauce
another bottle of water

I have decided to make a spread sheet of meals for the week. It will include what we are having each night and the ingredients needed. That way when I go to the store I can get everything I need and wont be running back and forth...I think I was in the grocery 4 nights out of the 5 this week....I need to be more organized or I will struggle.
OK off to fill my 4th bottle of water and take a shower....
(PS I feel great today concidering TOM is here!!!!)

Having coffee then hoping to go and get another couple hours sleep....it will be a hectic week at work with month end and a 4 day week. But on the plus side it is a 5 day weekend for me taking vaca days mon and tues.

To be honest it was hard to choke it all down, I think as of tomorrow I am going to cut my portion a little, I am thinking of trying to make 3 eggs with meat, veggie and cheese and cut it in half and eat it for lunch or the next dayfor bfast.
Had 1 cup coffee and started on bottle #1 of water.
Never made it back to bed ....so I think I'll try again after my son comes home for his break @1030 (gotta feed him!!)

Lunch was leftover spianch salad with bacon dressing from last night...this stuff is really yummy, not quite as good as it was fresh but it will do for a snack or lunch.

I can really feel myself getting fuller faster...I think thats a good thing!!!!!!!!

Hey popping in to your journal - you are doing great! Mind sharing the recipe for the bacon dressing? What is the carb count?

I am thinking about making a quiche to bring to work for breakfast this week. Ham and spinach sounds good to me! Or maybe sausage. Or maybe I will cook the sausage for the pizza toppings? I am lazy today, just thinking out loud!

The spinach with bacon dressing is from Lindas Low Carb Menus & Recipes website, if you haven't looked at it you should, it has lots of yummy ideas, a lot of which the whole family would love...

This was very good

WILTED SPINACH SALAD WITH WARM BACON DRESSING
6 ounces fresh baby spinach
3 tablespoons cider vinegar
1 tablespoon granular Splenda or equivalent liquid Splenda
1/4 teaspoon pepper
Pinch salt
6 slices thick bacon, cut in 1/2" pieces
1/2 medium red onion, sliced thin, 2 ounces
1 clove garlic, minced
3 hard boiled eggs, quartered

Place the spinach in a large bowl. In a small bowl, combine the vinegar, Splenda, pepper and salt; set aside. Fry the bacon until crisp. With a slotted spoon, remove the bacon to a paper towel lined plate. Measure out 3 tablespoons bacon grease and discard the rest.

Heat the bacon grease and sauté the onion 3 minutes. Add the garlic and cook 15 seconds. Add the vinegar mixture to the skillet and remove from the heat. Working quickly, scrape the brown bits off the bottom with a wooden spoon.

Pour the hot dressing over the spinach; add the bacon. Toss gently until spinach is slightly wilted. Divide among 4-6 salad plates and arrange eggs on the salads. Serve at once.

The carb count depends on how many servings 4 servings is 4 gr 6 servings is 2 gr.

So I'm only on my third bottle of h20... but the tea kinda made up for it Having hot sausage with onions, peppers and mushrooms for din din. Smells Delish if hubby would just get home from work so I can enjoy it!!!

Dinner was great, the sausage was so hot I was able to choke down 2 more bottles of water just during dinner.....me likes it spicy!!!!!!!!

So I'm off to the shower, stepkids should get here between 11 and 12 so I will be in bed late... so I hope to be able to get back on and surf.....

Well that makes me feel great concidering I picked TOM week to start...

Its hell week at work but I have a lot to look forward to come Friday!!!!!
