Good Morning Lovely Lady Friends!

It's a beautiful morning and I don't have to work today!! Yipppeeeee!!! Wahoooo!

I really needed a break from the office. I asked my Dad on Wednesday, (note: Just because I work for my dad, I still ASK him if I could take the day off. I didn't TELL him. He is still my boss!) if I could take Friday off, and he asked me if I was getting burned out because of things that were going on at work and with the company.

I tried to be brave and say, no! I just want a day off! Well, I couldn't fool him so I he said yes you can have the day off. I normally get off at noon of Fridays but it's not the same as having a whole day off.

So that's what I'm grateful for today! That I got the day off!!! Whoohoo!!!

I'm going to things at home such as clean, do some laundry, make more rev rolls, and make those meringue cookies with sf chocolate chips!!!

That's my mystery cookies!! I saw this cookie on my local news. They were talking about a bakery in Scottsdale, it's called SugarBakers, or something like that.

They had brought over a cookie that this particular bakery calls, Angel cookie. It's made with meringue, chocolate chips, sugar, vanilla and walnuts. It looked absolutely divine! I could picture the way it tasted and thought I could do that in lc.

So I searched the internet for a meringue cookie recipe and the only one I found that was baked or made close those this cookie was from 2 different recipes.
I'm going to try a small batch today to see if I can make them like this bakery. I'll used granular splenda, the sf chocolate chips that I bought. Oh this sf cc are so good!!! I love them!!!! Unfortunatley I cannot give the name on here or the website, and I can't even pm anyone with the name.

I did try these cookies on Monday, but the recipe I used, called out to bake the cookies at a shorter bake time. Meringue is supposed to bake slow and low. But, they way they turned wasn't half bad! I can get the concept of these cookies, so it's not bad!

Anyway, I'll post what I did after I bake them and take pics and let you know how they turn out.

The mock mac and cheese, I should have said is not made with a cauliflower, although you could sustitute cauliflower. I'm using tofu. I tried it before and it's very good and low in carbs. I'm going to throw some chopped chicken and frozen broccoli in this.


But I may make this instead and add the chicken and just omit the goat cheese, since I don't have any:

Cauliflower-Goat Cheese Gratin
Recipe courtesy Bobby Flay

1 head cauliflower, cut into florets
2 cups heavy cream
1/2 pound Monterey Jack cheese, coarsely grated
2 cups grated Parmesan
6 ounces goat cheese, cut into small pieces
Salt and freshly ground pepper
Preheat oven to 400 degrees F.
Layer the cauliflower, heavy cream, and the 3 cheeses in a medium casserole dish. Season with salt and pepper. Roast for 20 to 30 minutes or until the cauliflower is soft and the sauce has thickened slightly. Remove from the oven and let rest for 10 minutes before serving.
Cook's Note: Recipe can be doubled and made in a roasting pan.



Here's the Mock mac and cheese:

Tecnokitty's tofu Mac-n-cheese

2 containers extra firm tofu, drained (to drain, take out of package and wrap in 3 layers of paper towels. Put a heavy plate on top of it and let sit for a minimum of 10 minutes)
Cut into small peices about the size of macaroni
2 - 3 cups grated Cheddar
3 eggs, beaten
1/2 cup sour cream
4 tablespoons butter
Olive oil
1/2 teaspoon salt
1/2 cup heavy cream

Preheat oven to 350 degrees F.
drain and brown tofu in olive oil on high with 4 tbs butter and salt. Pour tofu, melted butter & olive oil in a large bowl and while still hot add the cheddar cheese and mix.
Then add the remaining ingredients and add to the mixture except the eggs. Beat eggs then pour in and mix well. Pour everything into a casserole dish
and bake for 30 to 35 minutes.
Top with additional cheese if desired and bake till melted. Let sit for about 5 -10 minutes to cool before serving.

Ahh not for awhile, actually not until DH and I get the tile work done in our family room and living room. And until we got our front yard taken care of too!

Where do you get your sf chocolate chips? Or do you chop up a sf bar?

I think I need to make some rev rolls to take to work with me tonight and tomorrow. I'm thinking a batch of reg ones and a batch of sweet w/raspberry davinci for treats.

Darn! You've given me the baking bug again!

BTW, I stopped at a b-day party for a friend yesterday, who is diabetic. She paid $60.00 for a stevia cake! You NEED to go into business, sister. You could probably make a MUCH better product for so much less!

Chocolate chip meringue cookies

I saw these cookies on my local news and thought I'd try to make them low carb. I got help from other recipes and combined them and got this recipe.

3 large egg whites
1/4 tsp cream of tarter
3/4 granular Splenda
1 cup sf chocolate chips
1 cup chopped walnuts, optional

Bake at 200 degrees for 1 1/2 hrs or 1 3/4 hrs. Put baking rack in the middle part of the oven.

Beat egg whites on low to medium speed until foamy. Add the cream of tartar and continu to beat until the meringue holds very stiff peaks.
Add the Splenda a little at a time and continue to beat until the meringue holds very stiff peaks. Carefully fold in the sf chocolate chips and walnuts.
(you can test it by putting some meringue between your thumb and index finger togther, stiff peaks will form)

You can use either a piping bag or a medium size ice cream scooper. (That's what I used) and place them on a cookie sheet lined with parchment paper.
You can also put them close to each other, they don't spread.

Bake per the above time and temp. The meringues are done when they are pale in color and fairly crisp. Turn off oven and open the door a crack and let them dry in the oven, either over night of if you're impatient like I am, pop one in your mouth!!

They are very light and airy!

Makes about 10 to 12 cookies

I doubled my recipe and about 2 dozen

Only thing is, I can't figure out the carb count. I have Mastercook ver 9, but don't know how to use it.

I have never had meringue cookies before, so this is new to me. But they are light, crisp and airy and it seriously, I can only eat about 1 or 2. Very rich!

Hi Sue!
I hope you enjoy them! I just had some that were broken, nice and sweet. But I can still taste a little egg. I wondef if that's common or if I need to add more splenda?
I forgot to mention how to store the cookies. I left them out over night and when I went to put them away, some crumbled on me. So as they dry, I guess cover them up in a container.

I really don't know how to store them, but I would think a container is fine.

Well off to do house work!!

I made the cookies and they turned out good. DH really likes them. I only used half the Splenda, though, and they are still sweet. I made a double batch, and after putting in 3/4 C Splenda, I tasted the meringue and though it was sweet enough.
