Jan's Weightloss Journal

It's been a long time since I've been here. I have realized that this is the WOE that was intended for me. I've been back and forth on several other diet plans trying to find what fits me. Knowing in the back of my mind that LCing is what fits. I ran across a book call the "Blood Type Diet" and for my blood type I should be eating.............A LOW CARB DIET!!!!!
I have learned that I have to eat what's right for my body and not join the crowd.
Last night I had friends and family over and they baked cookies, had chips, dip, hotdogs, punch etc.
I made my cheese chips, ate hotdogs with chili and cheese only, had hotwings, sf punch, red peppers for my ranch dip and did not miss any of the food they were having.
In fact they were eating my Cheese chips, red pepper slices and sf punch after stating that I must be crazy.

To all my fellow LCarbers, Keep up the good work!

Today has been a busy one. I have staye don track.
Menu
B- 1 minute muffin
Coffee with cream/splenda

L-salmon
crystal lite

snack- pecans (handful)
diet coke

Dinner
2 hotdogs with cheese
Jalapeno poppers about 6
diet coke


I know I over did it with the poppers
I have faith that the CO will kick in when I weight in next week.
Just taking one day at a time.

Today i'm pretty tired. I've been in church most of the day. regular services from 10am-1pm, came home for a quick lunch and back at 2pm for our choirs musical. I just fixed a quick dinner which was tilapia and made a quick bowl of broccolli slaw.
Breakfast was the 1 minute muffin and coffee
Lunch was 2 jalapeno poppers and a plain hotdog.
I hope everyone else ate healthier than I did today.

I will rest and maybe fix me some green tea.

Looking for a great week.

Hello......
Today I will have a great attitude. I feel great. I started with coffee, cream and splenda this morning, followed by egg beater southwestern omelet with water. Took my vitamins then off to work.
I hope this energy last all day long.
For lunch I will have;
Tilapia and a salad with ranch dressing.

Dinner chicken greast and stringbeans
Snack- nuts
only one diet pepsis today with the rest water only.
Maybe a glass of crystal lite

I hope every one is getting off to a great day.

I just ate lunch and feel stuffed. I only ate the talipia and small salad but dranked (2) 12 oz glass of H20. I wll have some walnuts later.

Today I feel lousy, dragging this morning for some reason.
I'm going to eat some nuts, hopefully they will give me some energy.

Breakfast-egg beaters(south western flavor) with mushrooms and cheese
Lunch- tilapia with salad
dinner_ chicken breast with spinach
snack- water, nuts, diet cola, cheese

This morning I am ready to go. I'm trying eat only poultry and fish for 2 months, including eggs. I feel very good about this. I bought a huge bag of boneless skinless chicken breast, and a variety of fish this weekend to prepare for the week. I have fallen in love with the one minute muffin made with the flaxseed meal.
Exercise is a must when trying to lose weight.
I have to get back into it.
I lost the bulk of my weight exercising at least 4-5 times a week. Using the walk away the pounds videos and pilates home dvds.
I want to lose at least another 40 pounds and I know I can do it.
I will do it.

Hi Janice! I have fallen off the exercise wagon but I am preparing to get back on and take the ride again. I find that I do best if I do 4-5 days a week too. It's hard though...but worth it!

Hi Jan,

I'm a newbie too!! But it sounds like you are determined to beat this weight thing, too. Coming from the South doesn't help any but WE can do it. I'm from Charleston and we eat rice with EVERYTHING; hence the WEIGHT!!! Your journal is very inspirational and motivational. I too would love to lose 40 pounds. I guess I better jump on the band wagon with a journal as well. I will be peeking regularly. Talk at you later.

Got 1 hour of cardio in yesterday evening! I feel great today.
I did not eat the 1 minute muffin this morning and I can feel the difference. I'm a little hungry and I'll eat a piece of cheese for a snack.

B- 1/4 cup of egg beaters Southwestern flavor with cheese.
L- chicken breast with spinach
D- Chicken with stirfry veggies
S- a few nuts cheese
Water, Water, Water

Here goes: What is the suggested amount of carbs for weight loss? I'm also trying to do high protein. I just read about the 1 minute muffin. Is it filling?

Atkins 72 (the original version, the plan I'm following) says 0 carbs the first 14 days... The New Diet Revolution says 20 grams of carbs for the first 14 days and then add back in good carbs in 5 increments. Most people stay on Induction until they reach goal, then switch to OWL, then maintenance.

I tried the 1 min muffin this week and didn't like it . One of my LCF buddies each them every morning. She makes her's with almond flour. I used flax meal.

I have used almond flour and flax meal.
I use mostly flax meal now because I can get it in Walmart for less than 2 bucks.
I do not follow the original recipe version. I did not like it much.
I tweaked the recipe for my own taste.
I've added peanut butter, Cocoa powder, cream cheese, extra splenda, different flavoring etc.
Experiment with it.
Last night I added the unsweetened cocoa powder, sour cream, extra splenda, and before i put it in the microwave i put a few SF chocolate chips on top. Nuked it for about 50 seconds and it was great.
Don't be afraid to experiment.
I have to change thing for my taste.
My little girl ate most of the muffin before I could eat any.

I usually save my almond flour for almond thins. I found the recipe here on LCF last year. I make them around the holidays.

I will try the 1 minute muffin with pumpkin this week.

I agree with Meekness regarding carb amount.
Sometimes I go over 20 carbs and somedays I'm way under. How many carbs you usually eat a day?

I have actually been trying to keep my carbs to 20 or less. So I'm sort of on track with that. I am going to try the 1 minute muffin for breakfast or maybe even as a snack at times. I've been snacking on peanuts, beef jerky or the beef jerky and cheese combination. I want to ENLARGE my low carb/hogh protein menu.

I did pretty well with my water intake so far today (40oz already).

I tell you what , 0 carbs for 14 days would make a great personal challenge for me. It would also make an impact on my weight loss.


Meekness, did you say cheesecake cookies? And did Janice say almond thins? I say show me the recipe!!

I have the recipe at home but I found these two online.
Just do a search for almond thins.
Hope you enjoy!

[COLOR=black]Almond Thins[/COLOR]

1 cup almond flour
1 packet of Splenda
1 egg white
pinch of salt, garlic powder, & onion powder

Preheat oven 325. Mix ingredients well. Place mixture onto a well greased piece of tin foil. Spray a piece of wax paper with cooking spray and lay over top of mixture. Use a rolling pin to roll out to a cracker thickness. Gently remove wax paper. Sprinkle more salt on top if desired and press lightly into dough. Score with knife or pizza cutter into squares. Lay tin foil on rack in oven. Bake until golden brown about 10 minutes. Makes around 50 crackers.

Carb count is about 13 for the whole batch. You can also vary the flavor-use ranch powder, ground bacon bits, season salt...


CINNAMON THINS
3 ounces almond flour, 3/4 cup
4 teaspoons granular Splenda (try 8 teaspoons)
1 egg white
Pinch salt (try 1/8 teaspoon)
1/4 teaspoon cinnamon (try 1/2 teaspoon)
1/8 teaspoon vanilla

Topping:
1 teaspoon granular Splenda
1/8 teaspoon cinnamon

Make the same as for the Almond Thins, but sprinkle the topping over the dough before baking. Spread the topping evening over the dough with your hand.

Makes about 48-64 crackers

Per batch: 532 Calories; 43g Fat; 21g Protein; 23g Carbohydrate; 11g Dietary Fiber; 12g Net Carbs
Per 8 crackers: 67 Calories; 5g Fat; 3g Protein; 3g Carbohydrate; 1g Dietary Fiber; 2g Net Carbs

I did what I said! Exercised, ate chicken stir fry which was delish. I did not try the cheesecake cookie recipe tonight because I was out of cream cheese, well I got 1/2 block and it was not enough.

I just realized that you're a nurse. My hubbies sister is an RN at Forest General Hospital in Mississippi. Hubbies a lab technician at Cedar Sinai.
