Breakfast: 2 Scandinavian BranCrisps w/ 1Tbsp cream cheese (**realized no brancrisps should be eaten had a hankering for a crunch..putting these away!). Lunch: 1 cup plain shrimp 1 TBSP lo carb dip recipe from SFS: Honey Mustard Dressing 4 total carbs for entire recipe 3/4 cup mayonnaise ( I use 1/2c. only) ½ cup mustard (i do 1/4 cup dijon, 1/4 cup creamy but check carb counts on both types to make sure they're 0) ¼ tsp. red cayenne pepper ¼ tsp. garlic powder 3 packets Splenda (I only use 1 packet) Mix well & chill in refrigerator. Water: 32ounces so far

Continuing Induction Journal/History
I am a 30 yr old who completely advocates the low carb lifestyle. I was able to lose my post college weight with Atkins (was 148) and am reviving it to lose those last 10lbs.
I also recently quit smoking and am so thrilled I don't feel that tightness in my chest anymore! I'd rather be healthy working out than smokin and sittin on my butt. I suffered from severe migraines and was on heavy medicine for a long time. Unfortunately with the medicine came side effects. One was weight loss (awesome of course) but the others were: gastroenteritis, constipation, a chest cough, and the worst...anxiety attacks. I had my first anxiety attack on Superbowl Sunday. I had an amazing day hanging out with friends and not stuffing my face Then right before I fell asleep my arms and legs went completely numb..and my heart started racing. I quick ran to the bathroom and noticed how pale I was and how irregular my heartbeat seemed. I screamed for my husband to call 911. It was the scariest night of my life. 2 emergency room visits later I went back to my neurologist to get off this migraine medicine (topamax). Unfortunately the topamax triggered these attacks or 'sparked' something in my body to start having them (I'm a pretty uptight person that can't sit still to begin with). Since that day I vowed to get healthy both mentally and physically. No cigarettes, no migraine medicine, no more diet pills, no caffeine... Starting my low carb efforts a few weeks ago has erased my migranes and I couldn't be happier. I do everything day to day but cutting out the caffeine, sugar and junk have done wonders for my system. I hit up the gym 5-6 times a week, and am trying out yoga. Living clean is so important to me!! I am posting my daily journal to get input, exchange recipes or stories of success. Water: 32ounces so far Snack: Egg Muffin EGG "MUFFIN" 6 oz turkey 6 eggs (I think I only had 4 and I used mostly egg whites) 1/8 cup heavy cream 3 oz cheese (I forgot it said 3 and I used just 1 ounce!) OPTIONAL: salsa, bacon, onion Preheat oven 350. Spray 3 superlarge muffin tins with PAM. Put mostly cooked turkey in the bottom of each tin. Mix eggs and cream and salt & pepper. Pour some in each tin. Sprinkle with half the cheese. Pour remaining egg mixture in and sprinkle with rest of cheese. Bake about 20 min.(time may vary) til eggs are done and golden. Remove from oven and let sit few minutes. Use spoon to remove "muffins". Serves 3 @ 2.3 carbs, 0 fiber, 409 Calories, 32 fat, 22 protein W/O Sausage: 3 @ 1.6 carb, 0 fiber, 272 Calories, 21 fat, 17 protein |

Just got home, SO hungry!
Luckily I pre-made those egg 'muffins' I had one COLD. Kinda gross but better than grabbing something induction unfriendly. Headed out to walk my dog and pick up eggs, and cucumbers. Saving bigger shopping for Costco. This is what I'm making for dinner (DH won't even suspect it's low carb..mainly because he eats awesome bread with eeeevery meal). HOT OR COLD CHICKEN SALAD 8 oz chicken 3-4 T mayonnaise 1 c shredded Cheddar cheese 1 T dijon mustard 1 T ea chopped: onion, red pepper, parsley 4 slices bacon, cooked crisp, crumbled Mix all ingredients together. Place in refrigerator to cool or bake at 350 for 20 minutes til hot and bubbly. (Serves 2 @ 3 carbs, 0 fiber, 582 cal, 44 fat, 45 protein) **I'm going to make this hot and omit the bacon. Not a huge fan o bacon. But willing to change my tune if I ever crave it. |

Awesome, now I have leftovers for tomorrow/ lunch. Gym time
Heading to the gym in 10 minutes. Going to do an Elliptical workout
and signed up for a 12:15 vinyasa yoga class. Maybe the stretching will make my sore muscles feel better.Need to think of what I'm going to eat for lunch. Didn't enjoy last night's dinner so they leftovers aren't very appetizing as of now..... |

Lunch: Leftover chicken from last night (3CB) 1/2 cup Spinach: 1.0CB 16 ounces of water Chicken Dijon Ranch (3 CB) 12 oz chicken breasts 1/4 c ranch dressing 1 T dijon 2 t butter splash white wine Saute chicken in butter til done and remove from pan. Pour wine into skillet; cook over med high heat, scraping up browned bits. Mix dressing and dijon and whisk into wine in pan. Serve over chicken. Exhausted
It's rough right now. Had a serious anxiety attack at work and per my doctor's orders had to take a xanax. (I'm not big into medicine, like to work things out with exercise/relaxation techniques ...).
Feeling super hungry..and I know that's the meds. Tonight is going to be a big challenge and I just want my gym workouts and past few days to pay off! My boys make me happy..I'll play with Milo all night to keep me cheery. |
