Well, my weight this morning wasn't as bad as expected after yesterday's extras (132.6). It might be that I waited until now (12:00) to weigh and then eat. I got up several times last night so I was so tired this morning. I just kept getting back in the bed and going back to sleep. DD was sleeping with me so I didn't have to worry about her being up. I am sure that if I had weighed early this morning it would've been probably 133. I gave my body a little more time to burn some fat.

I don't know what time my brother and DH got in last night. I woke up when he kissed me goodbye this morning. He said it would be another long day. I know this is all a part of the process to getting us where we need to be down the road with our business. He's only having to go out because we have an enormous amount of work coming in. I do miss him.

I still haven't finished packing up all the Christmas decorations. It's all piled up in the dining room. At least I have it all in one place. I don't feel like doing it today but I guess I really need to get it up. I need to go shopping for some black pants today or otherwise I won't be able to get them back from alterations before my reunion. I have to alter all my pants (except in the summer when crop pants are in style).

I was doing good with my food up until the afternoon. I think it was due to all the stress of taking her to the doctor's and then running an hour to go pick up the boys from practice. I was hoping that DH would be able to have dinner with us but he couldn't. I was just tired and upset. Kids were on my last nerve! They really know how to show out at the right times don't they. At least mine do.


Menu from yesterday:

L~1 package of light tuna(1), salad(2), bacon ranch (1)=4
S~Nuts(2), 2 Lindt squares(2.5), 1 T. pb(2)=6.5

S~1 1/2 Atkins bars(4), coffee w/ H&H(.5) & splenda(2), 1/2 cup CCD milk(1.5)=8

Water intake yesterday: maybe 32oz...bad
Exercise yesterday: none
Water %: 46.5 (down from yesterday)

My weight stayed the same today....132.6. I am happy about it. I had a little LC ice cream temptation last night that I gave into. I guess I was still pouting about DH being gone. I am feeling a little bit better today.....little bit more energetic. Maybe all this extra rest is finally helping me. I think that bug that has been attacking everyone else was working on me too. I was just a little bit more immune to it.

We are going out tonight with my family for DH's birthday. His birthday isn't until Wednesday but my brother flies out Wednesday so we won't be able to get together then. We are eating at Outback. One of my favorites! You can totally eat legal at Outbacks!

Menu from yesterday:

B~None...still sleeping
L~Flax seed muffin(2.6) with cream cheese(1), 1 cup CCD milk(3)=6.6
D~Sirloin steak with seasoning(1), salad(4), ranch(2), lemon water w/ splenda(1)=8
S~1/2 cup LC chocolate ice cream(4), some nuts(2)=6

Glad you are feeling a bit better! It'll be nice to be with family tonight. Wish I were going to Outback with you tonight! A filet w/blue cheese and big salad sounds perfect right about now!

Good morning Beth. How was dinner out last night? We went out also. I had chicken breast smothered in swiss cheese and mushrooms, which was yummy, and a salad.

Hope that DH's schedule is back to normal, but I guess business wise, it's great for the family. I know it's hard to deal with all the schedules and kids when your DH is gone so much. Hope this is a better week for you, health wise and schedule wise.

Weight is looking good!

I am trying real hard to not let my weight effect my mood this morning but it has been hard. My weight jumped up almost a pound (133.4) and I really don't know why. I would have said that it was probably water weight but it isn't showing that on the scales either. It says my fat is up. Maybe my Atkins bars and ice cream are just now showing up. Maybe it's because I had to weigh earlier this morning. It's just hard to see the scales going in the other direction. I have been trying so hard to get the scales to go as low as they can before this Saturday (my reunion). I know it sounds silly....like how would anyone know if I am a couple of pounds lighter. I just have issues I know.

I have to take DS#3 to the eye doctor this morning. Then we have to get the older boys to their ballgame this afternoon. It will be a busy day. They all start school again tomorrow so I will be running up and down the roads again. I am not looking forward to it.

We did have a good time last night. I was good but boy to the carbs add up for one meal. I came home and got on the treadmill. So far I have only had 2 days off this year.


Menu from yesterday:

L~3 eggs(1.8) scrambled with sausage(0) & cheese(1), coffee w/ HC(1), splenda(1.5)=5.3

Beth, I'm sorry your weight is up this morning, but one pound is really nothing. I don't know how accurate those scales are for measuring body fat and water, but I'm sure it's water weight. You didn't eat enough to gain a pound.

Your dinner from last night looks good.

Think of your busy day and a way to stay away from the snack cravings. Maybe that will help.

Stopping by to report that I'm on Day 7 of Induction. Boy does time fly. I hope that scale starts moving in your favor soon . The batteries in my scale are dead, so I guess it's a good thing for me to wait after Induction and weigh again. Hope your day is going well otherwise.

Monet~Thank you for your encouragement and sympathy. It means a lot to me.

Sue~You been with me in the journey now for a while. You never seem to tire of me and my pettiness over one pound. Thanks for putting up with me. I think you were foreseeing some things yesterday with me having snack cravings.

godsbeloved~I am so proud of you for the way you have stuck to induction. That is NO easy task. I can't wait to find out what the scales say with you are finished!


I had just a horrible day yesterday. My cravings were through the roof and my mood/hormones were raging. It didn't hit me until this morning that I am PMS'ing! Duh it is around the 7th of the month. When I got on the scales and saw 133.8 (I also saw 134 but I am taking the first one), it was confirmed. It's that time of the month for me. I ALWAYS hit around 134 when it is my time. I actually feel better since I figured it out. Hopefully by the weekend it will be over and my weight will drop back down again. IT HAD BETTER!!!

So, my menu for yesterday was good up until the afternoon. I had lunch with a friend after taking DS to the doctor. She told me about the "Magical Peanut butter cookies" and I hate her for it (just kidding). I will not be allowed to make those anymore!!! Beware!!! I will post my menu now but I don't really know for sure if the counts are right but nevertheless get ready it is high!


B~Protein shake=5
L~Greek Zorba grilled chicken salad w/ some Greek and ranch mixed for dressing=5
S~3 Peanut butter cookies=9
D~Wild Wings-wings, celery w/ ranch, tea w/ splenda=13?
S~Another peanut butter cookie=3

T~35.5(probably higher!)

Peanut Butter Cookies

Here is the recipe for the Peanut Butter Cookies. It came from Paula Deen on the Food Network. I warn you that they are excellent!

Peanut Butter Cookies

1 cup peanut butter, creamy or crunchy (lowest carb count you can find)
1 1/3 cups baking sugar replacement (recommended: Splenda)
1 egg
1 teaspoon vanilla extract


How To Prepare: Preheat the oven to 350 degrees F. Grease a large baking sheet. In a mixing bowl, combine the peanut butter, 1 cup sugar replacement, the egg, and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet. With a fork, dipped in sugar replacement to prevent sticking, press a crisscross design on each cookie. Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining sugar replacement. Cool slightly before removing from pan.



Some notes:

If you use the Splenda Quick packs you can cut carbs since they are equivalent to 1 cup of sugar and only 3.3 carbs per pack. You can also use only 1 tsp of splenda to shake on top of the cookies.

They do not spread out when baking, so flatten them and don't worry about putting them close together. Some one's calculations put one cookie at 3.5g of Carb (18 cookies)-24g in 1C splenda and 40g in 1C peanut butter. To give you an idea to compare your counts. Another lady came up with these counts: 94 calories, 7.4 fat grams and 3.2 carbs

Another lady had this suggestion: "I took what others had said they tried, and so I made this recipe, adding 1 extra egg, and 1 Tablespoon of butter as well. I baked them longer than the 12 minutes, as I like crispy, crunchy cookies better than soft ones. I didn't make the criss-cross marks with a fork, rather, I just put a heaping Tablespoon of dough on some non-stick aluminum foil."

One lady only made three at a time and here is her calculations: I only bake a few at a time using 2 tbs of crunchy peanut butter, 4 packets of splenda, 1 tbs of egg sub, and 1/4 tsp vanilla. This yields 3 perfect cookies.


Here is another version:

Peanut Butter Cookies

1 cup chunky Peanut Butter
2 eggs
1 t vanilla
2/3 c splenda
1/4 c coconut flour
1/4 c flax meal


Beat eggs with vanilla pour over Peanut Butter in a mixing bowl
blend till smooth
Add dry ingred. again blend till smooth by hand.


You get 14 nice cookies I rolled mine 1 inch size balls pressed w fork.
baked 12 min in a 350 oven. Cool before eating

Is Paula Deen the lady from Georgia? I saw her Thanksgiving show while at my folks and realized that BETH HAS A SOUTHERN ACCENT LIKE PAULA! I love accents as I don't have one.

Yes, she is. I went to both of her restaurants while visiting Savannah. Very good but not low carb! I don't think that I have that bad of an accent but I am sure you would definitely call me a southern girl. When I lived up near DC for a couple of years I could really hear the accent when I would go home. My accent changed while living in DC but quickly came back when I moved back to GA. I didn't know I sounded like that. What can I do though....I have lived here practically my whole life.

Accents are so interesting. When we were visiting South Carolina a few years ago we were at a "fast food" restaurant. (I put that in quotes because it's an oxymoron in SC, IMO.) We were with my sister and family and the people told us to have a good visit. I asked my sis how they knew we were visiting and she said our "accent." I don't have an accent.
