Woa, Beth, your journal is busy this morning! Sorry about the gain. If it makes you feel any better, I'm in the same boat. Patience is the key here! At least that's what I keep telling myself

Your recipes look fantastic! I might have to try some! You know, your parmesan chicken recipe is how I make the chicken for my chicken parmesan. The only thing I do different is lay the parmesan fried chicken ( I use chicken breast cutlets, but I'm sure the strips would work, too) on top of some low carb marinara sauce in a baking dish. Then lay a slice of mozzarella on top of each piece of chicken and broil until the cheese is golden and melted. Its so good, and "fancy" enough for a nice dinner. I make it a lot of Sundays served with some sauteed zuchinni and a italian style or ceasar salad. Just thought I would pass the idea along!

Honestly, I don't see anything wrong with your menu. Your body may just be adapting to your weight right now. Eventually you WILL drop. It's inevitable. JUst hang in there, friend!

This sounds really delicious. Does the parm stay on okay? How long do you cook them? I usually bake my breasts so I don't know how long it would take in a pan. Thanks!!

Dixie~the parm. stayed on fine. I had no problems. I would think that you could bake these as well. I just cooked them until they were brown on the outside and done in the middle. Did you see Krysta's recipe for chicken parmesan up above you? That sounds good too!

Krysta~you're a great friend. I can always count on you to cheer me up!

I wouldn't say it is all that difficult. She has several on there. I was a little winded today but I kept up. It is mostly walking with burst of activity in between. I just love her encouragement!

Hello Beth. I hope you had a good day. I looked over your menu. I don't see any problems. I do agree with Sue though. Dr. Atkins did say it would be slower when you added carbs back in. I wonder if that's why many stay in induction for the allowed 6 months ? Congrats on the exercise. My knee and back have been bothering me lately, so I have NOT been doing anything.

It's Ok. You have to do what you can do. You don't want to do any harm to either body part! I bet your fingers are getting awfully skinny though! I know mine get lots of exercise on here!

After all the exercise yesterday, I stayed the same this morning....137.2. It is really OK with me. I was concerned and fully prepared to go up. My leg muscles are a little sore this morning. I thought they may decide to hold water...and maybe they did....maybe I lost but the stay is water. At least that is what I am telling myself.

I think the thing that puzzles me the most is that my ketone stick only showed a trace this morning! It is always darker in the morning. Don't understand that one. Does that mean that I am at the top of what I can eat in carbs?

Menu from yesterday:

Breakfast: Atkins Shake(1N/5F)=1/5
Lunch: Rest of Cobb Salad: 2 cups of Romaine(.8N/2.6F), 2 T. bleu cheese(.4), chicken(0), cheddar(1), ranch(2), had eaten all the egg & bacon 1st time=4.2N/6F
Snack: 1/2 Atkins Advantage choc./pb bar(1N/7.5F), 1 cup CC milk(3)=4/10.5
Dinner: Chopped Sirloin steak(0), Salad(4), ranch(2)=6

Total: 15.2N/27.5F

I have a question about the Atkins Bar I ate. I was figuring out the net/full carbs on it. I don't understand where they got the 2 net carbs. The bar has 15 total carbs, 7 fiber, 1 sugar, 1 sugar alcohol. So, with just that it should be 6 net carbs from what they have taught us. Now the protein is 11g. Would they be figuring some of that? I don't understand. I may email someone about it. And yes I know I shouldn't eat those bars. I was craving some choc./pb yesterday and that is what I had. I started out by cutting the bar in little pieces to freeze and then ended up eating half of it. I hope I am not fixing to go through my chocolate craving week!I am recording in my notebook how I am feeling to try to pinpoint my "TOM" time since I don't have anymore TOM.

Now off to fix my breakfast. I bought some Eggland Best eggs yesterday. I wonder if they are going to taste as great as everyone says they do.

Good morning Beth. Glad you had a loss yesterday

Have you ever made the chocolate coconut bark for choc cravings? It's very simple to make, low in carbs and delicious. Then you wouldn't wonder how many carbs are really in it.

My recipe for it is 3 T coconut oil, melted, 1 T cocoa powder and 1 T Torani's choc syrup. Mix together, then on a baking sheet with parchment paper or wax paper on top, pour the bark onto the baking sheet. Freeze for about 10-15 minutes and you have a wonderful chocolate treat.

first off, Yay for going down! I told you all the exercise would make the scales move!

Also, on the Atkins Bars, the reason they count it as 1 carb is because they don't count the glycerine. It's technically not a sugar alcohol, and it's not a fiber, so I guess they don't list it as either of those on the package, but it is not digestable, so they minus it from the total. I think they use it to give the bars their chewiness, and as a sweetener, but I'm not sure about that last part.

No, I haven't made the chocolate bark. I have everything except the chocolate syrup. Is there something else that can go in there? How many carbs are there? I want to try it.

Krysta~ So, with 15 total carbs and 9 fiber/sugars it would be really 6 of those glycerine type carbs. Would that mean that I would count the total carb count as 9 or just stay with the 15 as the total? Either way it isn't that great if I am counting total carbs. I should have had a shake or the bark.

I just count them as 1 carb. I've never had a problem with them, even in induction, so for my body, they obviously don't affect me. But if you are counting total carbs, you're right, I guess you would count it as 15. The shakes are definitely a lower carb snack. However...when you are craving chocolate...

Krysta:I ate a lot of them when I started Atkins (every day). I still lost. I don't know if they really effect me now. I would eat them every day probably...they are so good! I know they are not the best food out there. I would think they are much better than SF chocolate pudding (which I used to eat in the beginning but have since learned better). I have wanted to try that Stalone pudding or some other powder protein mix for a substitute. Have you tried that? I definitely see that there are times of the month that I crave chocolate and times I don't. It must be TOM related.
I am waiting on your post to find out how you are doing!??

I guess you could use Splenda and you'd have to figure out how much to put in it to get the taste you like.

Do you have any of the SF Vanilla syrup? That would work also. I get mine at Walmart and use vanilla, chocolate and strawberry in baking and adding to SF drinks.

I'm not an expert when it comes to using the sweeteners. I have found that when I make flax brownies for DH and DD, I need to use the syrups and Splenda to get it sweet enough for their taste.
