Too much because of the carbs? I love cocoa recipes and really have to limit them to keep down my cravings. It is such a good food, so full of good nutrients, and look forward to using it more during maintenance. |

Went for a walk this morning with DH. It felt good to get out in the fresh air. I am going to really get going on the exercise in hopes of losing a little faster.

Sue, I am finally back on here! I have missed you! It is so good to see that you are still on track and losing! I am so proud of you! Measuring is the way to go most definitely. I think that it would have really helped me this week when every thing was going crazy! Hope you have had a wonderful weekend! It is so good to have friends like you!

What a fun weekend we had with opening ceremonies for Little League, working around the house, making a cake for DS's party, having his B'day party and helping DD with her graduation announcements. Actually that is a sad part because my dear daughter will be leaving me soon.
Yesterday's menu: B~coffee and cream 1.5 eggs with sausage 1.2 B~caulirice 6 coconut curry chicken 2 S~chocolate coconut flax cake 10 D~shrimp dipped in garlic butter caulirice 5 water~60 oz Total~25.7 |

We were suppose to measure this morning but forgot until DH was out the door. I bought a measuring tape yesterday. I am eager to see how it shows. A half inch in your waist....fantastic!
I have to have that coconut curry chicken recipe please. I love Thai food and haven't been able to eat it. How are the portions on this one? It is hard when something is really good and you can only have a little. ![]() |

Beth~the recipe is very easy. I just put it all in the crockpot before church and had a treat afterwards!
4 chicken breasts, cut into pieces and browned in coconut oil 1 can full fat coconut milk 2 large stalks celery, cut into small pieces garlic powder to taste curry powder to taste dehydrated onions to taste (I was out of fresh onions) salt to taste Mix all together and and cook until done, whether on stove top or crockpot. I cooked two 20 oz bags of frozen cauliflower, mashed with a potato masher, added 4 oz cream cheese, 1/4 C butter and salt. Put the chicken over the cauliflower and it was great. I was very satisfied after lunch!

You carb count was 2 for chicken and 6 for cauliflower. How much chicken/cauliflower did you eat for that count? I am going to fix this soon. I love crock pot recipes. Did you make it up or get it in the recipe room?

I made it up. I'm really not sure what the carb count was for the chicken, but I had about a half a cup of it, and the recipe made maybe 3 cups? I had about a half a cup of the cauliflower mix.

OK, here is what I found on the recipe....
Coconut Milk~1 cup= 6.3 carbs Celery stalk~2 large= 3 Garlic powder~1 T=6, 1 tsp.=2 Curry powder~1 T=3.6, 1 tsp.=1.2 Onion flakes~1 T=4.2, 1/4 cup=11.6 Raw onions~1 T=.9, 1 cup=14.9 If you use real onions and go with the tablespoon counts it would be 19.8 for the whole recipe. If you got 3 cups out of it, then 1 cup would be 6.9 carbs. Your 1/2 cup would have been like 3.3 carbs. It could be more depending on how much coconut milk was in the can. Whatcha think about these measurements....did you use more?

Those counts look good. Using those carb counts and what I used, I think my serving was 3 carbs, not 2. The "2" was a guesstimation because I was in a hurry to get the party ready. Thanks Beth.

I have exercised for the past two days in a row! Also Saturday. Is this a record for this year? Also worked in the yard yesterday. Was tired last night, but it was a good tired.
I am seeing my body shape change before my eyes. I wonder if the scale not moving might have something to do with this? Whatever it is, I don't mind because I know that things are changing. I'm not going to weigh again until the end of the month and know that whatever the scale says, I'm not going to get discouraged! |

I hear such joy in your voice. I think holding off on the scales may really be helping you with the ups and downs of this process. It is amazing how we let the scales dictate our emotions. I am very proud of you for being so disciplined in this area.
I am also proud of you for exercising. This has been a continual battle for me. I will win it though. Isn't great to look in the mirror and like what you see. I still get caught off guard sometimes when I get a glimpse of myself and expect the fat me to pop up. I have to make sure no one is looking because I can stand in front of the mirror now and smile. We started our measurement this morning. I am anxious to see what they say. I think we will do it every week on the same day. I would really hate to know what the numbers were to begin with! Great job Sue! KUTGW! It will pay off in the end. Plus you are receiving great health in the process!! |

Wow, I get home from my volunteer job and three dear friends have dropped by. You ladies are awesome!
Hilary~I used to exercise 5-6 days a week and loved it/looked forward to it. I've let that slide in the last 2-3 years, which is why I think I put on so much weight again. It's hard right now and I feel worn out afterwards, but hopefully in a few weeks I'll feel stronger. Beth~Good job measuring. It will pay off for you, especially if you start exercising and the scale really stalls. I had to laugh about the mirror. When I lost 55 pounds 8 years ago I spent A LOT of time in front of the mirror. Just couldn't get over the change. I felt like a different person. Candy~You're right. It's faith. I'd never though about it that way. ![]() |

Faith is believing without seeing. I have faith I am losing, because it sure isn't showing on the scale.
It's a good morning here in Washington State because it's not raining! ![]() Looking forward to grocery shopping this morning. I love shopping days because it's a great outlet to spend money. I was so stuffed yesterday afternoon I could barely eat dinner. If I have a tablespoon on coconut oil after lunch, I stay full all afternoon. I have thought about eating a larger lunch and less dinner. The "eat like a king for breakfast, queen for lunch and pauper for dinner" theory might just work, but I don't have much of an appetite in the morning. I might eat like a king for lunch and see how that works. Will post yesterday's menu later. Need to get going here. |
