Thought I'd better make a list of what I've been eating in case I have to refer to it later should I need to know what certain foods do to me. Since I've had eggplant yesterday, I'm quite itchy and my nose is running and I can't sleep tonight, although I was very drained all day. Up at 6 a.m. Coffee/cream and 1/2 tsp. maple syrup Breakfast: bacon & eggs Mid. a.m.: Another coffee Snack: About 1/4 avocado Supper: roast beef/lowcarb gravy eggplant salad with dandelion, lettuce, tomato, cuke,/caesar bacon dressing & asian sesame dressing (mixed) lowcarb coleslaw 1/2 cup cooked spinach Weight: 166.5 lbs.: ![]() |

Hi there Eggplant
One of my favorite songs is by Michael Franks it's called Eggplant. He is a sort of soft jazz singer also sings Popsicle Toes. He's good--really!
I love eggplant parmesean (sp) it is probably very low carb. eggplant,(sauteed) covered in tomato sauce and sprinked with parmesean cheese then baked. Actually a pretty hearty main dish and yummy with green salad. That's all you need, the eggplant takes the place of the meat and the veggies. I am down another two pounds but I am not really die hard low carbing because I have been worried by the posts I have been reading from serious LCF who went off plan for as little as two weeks and gained fourteen pounds or more. Ixtapacheryl and Mel. They seem like well grounded knowledgable women and so when they say they went "off Plan" in their posts I don't think they mean that they gave into a steady diet of sugar and fat. They are too smart for that and have been long term LCF. So they probably enjoyed the holidays I would guess moderatly and it surprises me that there would be such large weight gains from a little indulgence. I love how lc gets it off fast but I don't like the way it comes back on so rapidly with just a small slip. I am going to in-depth-read South Beach. I have some friends who have had success with it and it seems a slightly more normal way to live. Still doing major walks with my friend. It is wearing us out but we are determined to walk alot until spring and see what it does for us health and weight wise. 16 more weeks of walking. 166.5 is great
