1 large egg
1/4 cup melted butter
2 tablespoons splenda
1 teaspoon vanilla
1 scoop vanilla whey protein powder
splenda
cinnamon -- for topping

Taste- and texture-wise, these fall somewhere in between true doughnuts and funnel cakes. They cook very fast, so make sure you have everything on hand!

Heat about 1 inch of oil in a heavy skillet until it's hot enough for frying. While the oil heats, beat the egg lightly with the melted butter, then add the Splenda, protein powder, and vanilla. Whisk together until all the lumps are pretty much broken up, then let it rest a minute or two and whisk a bit more (batter will still have a grainy look to it, but that's fine). Using a large tablespoon or serving spoon, drop the batter by large tablespoonfuls into the hot oil in batches of 4. Fry until bottoms are golden-brown, which will only take a few seconds, then flip. Drain on paper towels, then sprinkle with Splenda and cinnamon to taste and serve hot.

Makes about 8 doughnut holes, and servings 2-4. I ate 6 LOL! I fried these in coconut oil. I made a double batch for DH and I.

Well, I am not sure this stuff is working for my dear Hannah. She has been to the potty twice earlier today, then nothing. She has been on it every 2 hours .... I fear she is getting deyhydrated because she is not peeing. So, we are upping the gatorade.

This is so hard.

Sunnysider's Easy Revolution Rolls

Ingredients:

5 eggs (throw 2 yolks away after seperating or else fry them up later)

*Dash of cinnamon or cinamon to taste (don't need this, but I like it and add it all the time no matter what I'm using the rev. rolls for)

1 packet splenda or sweet n low (splenda is preferable)

3 TBS. sourcream

Preheat oven to 300 degrees

Separate eggs. Put 3 egg yolks in one bowl, and 5 egg whites in a metal bowl. Beat the egg whites w/an electric beater until they are so super stiff your arm feels like it wants to fall off. I'm talking so stiff that when you turn the bowl over the egg whites don't budge or slide, they just stay planted there no matter what!

To the egg yolks add 1 packet splenda, some cinnamon, and 3 TBS. sour cream....mix all together, but doesn't have to be super mixed, just kinda mix it together with a spoon, fork or whatever. Now add that yolk mixture very slowly to the egg whites with a spatula a little at a time and gently fold the whites over the runny yolk mixture over and over as you add a little more of the yolk mixture each time...but try not to break down the egg whites.... you don't want them to be all runny and nothing but mush.

Make 9 mounds on a cookie sheet presprayed with Pam. Bake for 50 minutes @ 300 degrees. Store in zip lock type platic bags in the fridge. They taste best after being refrigerated instead of warm out of the oven. You can toast these if you want to, later.

That's it, easy peasy!! You may be tempted to take the rolls out earlier, but don't...keep them in the full 50 minutes, even if they look done at 25 or 30 minutes.

BTW. some people like to add some garlic powder and other spices instead of the cinnamon and splenda.

Hey Candy girl!!

bars - How are you doing on those bars?? I know A LOT of people stall with them. I know that if you want a meal replacement or snack it is better to have a shake than a bar - stall wise.

Hannah - I used to do medical transcription for GI doctors. This is the second time (that I know of) she has gone to the doctor about this. I would take her to a specialist, sweetie. I hope she gets better soon .

Thanks Dixie. We just had the 1 box of bars, they're gone now.

The ped. thinks it's an overgrowth of good bacteria causing it. He says this Flagyl stuff is exactly what the GI would do. He said he good culture but the lab would only report bad bacteria.

She has gone to bed for now. I just can't phathom how she can not move some more after all that.

I already counted this in my menu, but I was just playing around needing a snack. Impressive, I created something. I guess Monet's caramel and whipped cream got me thinking. I added some caramel to 2 TBSP of whipped cream cheese. Then I noticed Randy's little Vanilla flavored splenda coffee packets. Mixed it all together. OMG ... it is so reach and creamy. Glad I only mixed up 1 small serving. But it tastes just like real cheesecake.

Hey Candy! I see lots has been going on while I have been away. I am so sorry about Hannah! I hope she gets better soon. How did that Miralax work? We have some of that in our cabinets too.

I posted an update on my journal. Thanks for the encouragement. We all need it don't we?! I am interested in your measurements. I haven't been measuring at all. I would love to know how that is working for someone else compared to how the scales are going. We are having a good time with our company. I will check in to see how you are doing later! Candy, don't be scared of adding a few carbs. The whole idea of moving up the carb ladder is to allow the body to adjust to more carbs. I would count just net as long as you are losing. But when you add carbs you have to give up calories to make it work. Most lower fats but I have seen people lower protein and still do fine. I also think that by experimenting with new recipes you are setting yourself up for great success. I always cooked new things, back in the good old days, lol. If we have to learn to change the foods we eat, then we have to learn how to cook them too. You will be the next success story here, I am positive!
