I was craving pizza tonight...I mean REALLY craving pizza! My plans were to make LindaSue's deep dish pizza. I ended up working late and the weather is so bad I went straight home without stopping at the grocery store.
So...I made do with what I had.

The crust:
1/4 c flaxmeal
1/4 tsp baking powder
1/4 tsp garlic salt
1/4 tsp onion salt
1 packet Splenda
1 tbs Italian seasoning
1 tbs grated parmesan
1 egg
2 tsp water

Mix dry ingredients, then add egg and water. Spay a dinner plate with Pam and spread mixture into plate. (Will be about the size of a 'personal pizza') Microwave for about 1 minute 40 seconds.
Slide off plate into a pam sprayed frying pan and brown both sides on high.
Place crust on a cookie sheet lined with parchment paper. Spread pizza sauce over crust almost to edges. Top with cheese of your choice (I used a moz./jack blend) and toppings of your choice. Pepperoni and mushroom for me. Heat in oven at about 350 until cheese melts and toppings reach desired 'doneness'. Cut into 4ths and enjoy. It looks like pizza, tastes like pizza, you can pick it up and eat it like pizza, has that crunch like a thin crust pizza. I loved it....and wouldn't you know...by the time I finished making it I was hungry and ate it (the whole thing!) without taking a pic!

I will have to try your Pizza, Candy! You sure are getting creative! A sure sign of a successful weight loss plan... I am so proud of you. What an honor to be able to see your progress and determination! Thanks for sharing.

BTW, someone here had a black one piece bathing suit on the avator that I have been eyeing--most cute! Who was it and where did you get it, lol?

Ok, I just updated my goal for the 30-in-3 challenge in fitday. I had the wrong date in there. We started March 1st, so my ending date would be May 31st, right ? That leaves 67 days ... 2.09 lbs per week. That sounds more realistic than before. I had Aprill 30th as the end and it said over 3lbs per week. I can't count.

Also, updated my menu from yesterday and breakfast so far today.

I don't like fitday sometimes, because it doesn't subtract the fiber in your totals. SOOO ... the only thing to officially go by is my total carb count.

We are headed back outside to finish a few things and little more laundry.

Then I will check back in.

From there, we are cleaning inside and cooking up a few things for the week.

You can do two pounds a week..no problem! Just imagine you in that bathing suit you want to get in this summer!! You will be looking good girl!

Now that I look at that pizza again....I think I will have to try it! I said in my response to you in my journal that I wasn't using any flour substitutes but that doesn't have any in there...read it wrong!

Your menu looks good...I hate that about Fit day too! At least we always know that we are doing better than it tells us.

It is a beautiful day to be out...a little hot but beautiful. I plan to plant some flowers this afternoon myself. Make sure you stop by and read my long response to you!

Beth I love that pizza it realy works well.
I have added minced roasted garlic ( from the jar) and it is sooo good.
I have topped it with pizza sauce and oil and garlic.
It is nice to be able to pick it up and have pizza with the family.

Posting some info from Becky (seriouschick) on coconut bark:

It's like the yummiest, chocolate covered banana (with nut topping!) ever!!

I just mixed up a new batch to pop in the fridge for tonight. I used SF Davinci syrup in Cookie Dough flavor. YUM!!! I find that if I make it just a few minutes before eating it, the freezer is great -- cuz it gets firm right away. But if I'm not going to eat it until evening and I'm making it earlier in the day, I just leave it in the fridge -- then it's the right chocolate-y consistency and not too hard.

I don't do anything for the coconut oil bark except mix it up. It takes about 30 seconds to make it. I just use Hershey's unsweetened cocoa powder. I just toss everything in a little bowl, stir until combined. Then I line a little ramekin/dish with saran wrap & spray it lightly with Pam. Pour the chocolate bark in it, pop it in the freezer for about 3 minutes and you can pop it out and eat it. YUM.

Hey Candy, just stopping in to say good luck this week, just in case I don't make it back here before I get home from my trip! I think 2 lbs a week is totally do-able! I think I have just about been convinced to give coconut oil a try. I know they carry it at my health food store, and those recipes youve been posting look like something I could totally do! Of course, it will have to wait till I get back. Anyway, good luck and I hope to see great stats next week when I get back!

Thanks Krysta. I hope you have a wonderful trip.

I am not sure my coconut oil is the acceptable type. I mean I don't think it's bad, just not sure it's effective. It's the LouAnn brand from Walmart. Apparently that's not EVCO.

I am somewhat disappointed this morning. Do you think your eating has a direct impact on the scales the next morning or the day after ? I mean would what I consumed yesterday be showing on the scales this morning, or would what I consumed Saturday be showing ??

I had my fitday all missed up. I had skipped Friday somehow, so all my foods were on the wrong day.

Anyway, I had 2 of the Atkins bars (at 2 different times) on Saturday. I had a LC beer yesterday evening (and they normally don't bother me and they make me pee a lot). Saturday morning, I was down a pound from Friday. Yesterday morning I was still down that lb. This morning, I am UP 3 lbs from Friday

I am not freaking out, just a little confused. I am in ketosis -- the large zone. I still feel "hot" and like I am burning ....

I thought surely with all the sweating out in the yard that I would at least stay the same this morning. I have not gazelled since Wed evening. I gazelled 20 minutes last night.

Just wondering how I retained 3lbs of water ....

Oh well, can't change it ... I can only learn from it --- ONCE I pinpoint the problem.

I don't think I even had ENOUGH carbs yesterday ....
