Eating? Well, it was pretty good. Sausage egg and cheese muffins this morning, 3 cheese burgers during the day and a chuck eye steak tonight. I ate grilled catfish yesterday. I need to find a recipe for LC catfish batter. Impossible?

Yes, I miss the Zatarains batter. If you find a batter that works you let me know, OK ? Tell me about the muffins ?
I had some sitr fry semi-breaded shrimp & banana peppers from Longhorns w/ranch dressing for lunch. Flax muffin and bacon for breakfast. 2 hamburger patties w/dehydrated onions (oops just realized I didn't add that in ******), and a cup of green beans.

Here ya go! I just finished a batch of them. getting ready to start another.


Egg MockMuffin
Recipe: 1 pg. sausage meat
10-12 eggs (beaten)
6 tbsp. whipping cream

Optional:
1 oz. shredded cheese (cheddar, swiss, etc.)
Cooked bacon pcs., mushroom pcs., diced onion .... use your imagination for variation.

(1) Cook sausage meat untill crumbly.
(2) Spray muffin tins with Pam (I use olive oil in a pump spray container).
(3) Preheat oven to 350 degrees.
(4) Pour cooked sausage meat into muffin tins, filling to half full.
(5) Add water to beaten egg mixture, stir.
(6) Add egg mixture on top of sausage meat to almost full.
(7) Add cheese or optional items.
(8) Bake at 350 degrees for 20 minutes or until done.
(9) Remove from muffin tins and refrigerate.

Good for on the run breakfasts or snacks.

You can also make this using cooked bacon or ham instead of the sausage meat.


I ought to make som flax muffins tonight.

Man, I can't wait to make them. I think I have seen this before, but I am not going to be home this weekend, and I have "issues" with cooking at night. I am gonna print the recipe out. Ate the last flax muffin this morning. Out of revolution rolls. Don't really want to stock up too much since I will be out of town from Fri - Sun. (Going to load the dishwasher and clean up from the hamburgers that Randy made).

I use Jimmy Dean Bold Country sausage and sharp chedder cheese. I usually make 24(a double batch) at a time, put them in baggies and throw them in the fridge. I grab them (1 baggie, 2 muffins in each baggie) on the way out the door and eat them at work.

Those sound good. I love sausage balls,and that's what they make me think of. I made some of those w/o the Bizquik and they weren't too bad, but this sounds much better. I love extra sharp cheddar too.

I am so gonna make those egg things..lol..

here is the pizzaa...

DEEP DISH PIZZA
4 ounces cream cheese, softened
2 eggs
1/4 cup parmesan cheese, 1 ounce (I used the kind in a can)
1/4 teaspoon oregano or Italian seasoning
1/4 teaspoon garlic powder
8 ounces Italian cheese blend or mozzarella cheese, shredded
1/4 cup pizza sauce
4 ounces mozzarella cheese, shredded
Assorted toppings: pepperoni, ham, sausage, 4 ounce can mushrooms, green peppers, bacon,
ground beef, etc.
Dash of garlic pepper or garlic powder and some Italian seasoning for top of pizza

In a medium bowl, whisk cream cheese until smooth and creamy. Whisk in eggs until mixture
is well-blended and smooth. Add the parmesan and seasonings, then stir in the 8 ounces of
mozzarella until completely moistened. Spread cheese mixture evenly in a well-greased 9x13"
glass baking dish or lightly greased and lined with parchment paper (see note below). Bake
at 375º 20-25 minutes or until evenly browned, but not too dark. Let cool completely on a
wire rack. When nearly cooled, take a metal spatula and carefully pry up the edges to
loosen from pan. Ease the spatula under the whole crust to loosen. Keep crust in the pan.
This makes it easier to remove the finished pizza later. Refrigerate, uncovered, until
shortly before serving time.

Spread chilled crust with pizza sauce, then cheese and toppings of your choice. Lightly
sprinkle with seasonings of your choice. Bake at 375º about 15-20 minutes or until toppings
are bubbly. Let stand a few minutes before cutting.

Makes 8 servings
Can be frozen

Per Serving: 304 Calories; 25g Fat; 17g Protein; 3g Carbohydrate; 1g Dietary Fiber;
2g Net Carbs

I make mine of parchment paper.. easier to get up and clean up..

let me know when you make this..

have fun fishin.. sniff sniff..lol.. oh and congrats on the new reel..

ummm...yeah...I've been feeling pressure here lately. Food pressure and tobacco pressure. Eating today has been good. Last nightit was good untill we got home from the river. I just ate, and ate, and ate. Or so it seemed. I woke up this morning at 296, which is where I have been hanging around for over a month. I'm not stalled or anything like that. I get fed up and screw up. I throw away everything Iwork for all the damn time. It really sucks.

Second pressure...My mind is telling my body that it needs a chew. This pressure isn't so bad as it only last a few seconds. I can live with that. I have been with out for almost 8 months now. My body craves it. One pinch of chew would set my entire body at ease. One pinch would also be the rock that cause the rock slide. Chew in Iowa is over 5 dallors a can now. I chewed the cheap stuff but still, its now over 3 bucks a can. Right now my cravings are gone. I can control them, they don't control me.

So why does food control me? Why is is that I can bust my ass all week long and feel great about myself and then the weekend comes along (not this weekend...I already blew it) and things go down the crapper? Why is it that I can not get out of the 290's? I havent seen them since who know when. The lowest I have been this year was 283.

Where do I find my motivation? What happened to it?

Sorry for a dull post. I wanted to put down my feelings before I screwed up again and raided the fridge.

I'm not depressed. at least I don't think I am. Maybe its my meds. I would love to go back on Efexor again. That's what I was on when I was in the 240's. Maybe it's just another mind game that I haven't figured the answer to yet? Who knows.

this is something I wrote in another journal on 09-28-06. It took me awhile to find it so I thought I would post it here since this journal is only 7 pages long.

Oddly enough I weighed the exact same then as I do now.


Anyway, this is whats happening in my life. I am miserable at my current weight, but it's better than 307 or 315. It's kind of strange how my weight hasn't REALLY bothered me untill I was walking into the Wal-Mart one afternoon. I saw my reflectin in the door as I was walking toward it. I slowed my pace and kept looking at my self. I thought to myself "you fat peice of ****, what happened to you." Thoughts of wearing size 38 pants and XL shirts 2 years ago ran through my mind. I remember feeling real good about myself. What happened? I slipped! That's what happened. I got to cocky and lost my edge. I just knew that there was no way that I would ever let myself go to the point of being over 300 pounds again. Guess what? I decived myself. I started eating whatever I wanted. It all started on the July 4th weekend of 2004. I was weighing in at 239, the lowest that I can ever remember being since high school, maybe even middle school. I went to a family reunion that weekend. I ate fried chicken, potatoes, gravy, pie and other deserts, and not just one peice either. I remember feeling miserable. I didn't care, I weighed 239 pounds after all and looked great! (I thought I did anyway.) We left the following Monday for Sandusky Ohio to go to Cedar Point for a couple days and then to Holland Michigan to stay with my brother and his family for a few days. Man, I felt so proud of myself! I knew I was in the upper 240's but hey, I was on vacation and I was still a damn sight smaller then I was in January. I didn't mind meeting the friends of my brother's family. I felt GOOD! When we got home I was in the 250's. Not bad but still it wasn't 239. By Christmas I had snuck up into the 275-280 pound range. Time to change. I just couldn't get back on the Atkins kick. After you go off Atkins for a bit, it's a real ***** it get back on and stay on. Why the hell didn't I start something senseable back then like weight watchers and learn about good foods and portion control? I never even thought about it and never tried. Honestly I knew my weight was climbing, I just choose to ignore it, and then one day I was walking into the Wal-Mart and saw my reflection..........

To who ever is reading this, don't do what I did. Don't get all cocky like I did and totaly ignore the fact that slowly but surely, I was getting fat, AGAIN. This was not intended to be a sob story, honestly. I just wanted to make a short post about what and how I was doing. I ended up wrighting a small book. But you know what? My head is out of my ass! I needed to get this off of my chest and out of my mind. I need to focus more now than ever before. I have seen the light. Losing this time around will be harder then it was 2 years ago. But that's the price I am paying.

hey phil. i feel ya. i (not kidding) just typed this out:

i am so annoyed at my eating habits lately, but more annoyed at myself for letting myself eat like a hog and letting food rule me. monday, i've gotta recommit.

your 296 is my 185. i'm comfortable here and i look okay, but i also want 40 pounds gone too before i can really work on maintaining. if you need to go back on meds, then do it. don't beat yourself up over it, just admit it, get it, and move on.

and for the love of god, DON'T START CHEWING AGAIN!! nobody wants to kiss a tobacco mouth!!

Hi Phil, that is some great insight! Thanks for sharing it. What really got me was the "walmart mirror" . For me it's the hall mirror at church. I always hit the bathroom before service, and at the end of the hall is a mirror, and as i see myself walk toward it weekly i cringe. It's funny how we can convince ourselves it's all good until we are confronted by reality. Sigh.
As to the tocacco, you've already showed it who's boss, you don't need it. You're more than a pinch of stinky stuff!

Krissy.....Long time no talkie! I miss seeing you around here. Been catching fish? I wonder if some of my weight problem is my medicine. I'm feeling good, I'm not depressed so I don't want to get off my welburtin just yet. I was on Efexor when I lost in 2004. After awhile it just sort of lost its punch for me and I hat to get off of it so I'm wondering if I could get back on it of if my body is imune (sp?) to it. I'll have to go back to the Dr. in a couple months so I'll talk to him then.

Big delima going on here. The first church league softball game is tonight at 7:00. I love softball but I really really really want to go fishing tonight at the river. I might just do both. I know Hillary wants to go and the fish bite better at night. We can take the portable DVD player so the boys can sit in the van and watch movies while we are fishing and we can park the van real close to the bank. Who knows? I'll figure something out.

i just watched a quick clip on catfish fishing in iowa, thought of you!! i that your wife wants to drag you fishing. i'm the same way. can we go fishing canwego canwego canwego!!!!! i wanted to get out this weekend but we were at a wedding all day saturday and sunday we were just too hungover to fish :blush: but we did take jetta to the river so she could get her swim on.

Good morning! Thanks for stopping by.

For the last 2 day we have been shut down at work at 11:00 for peak alert, brown out, whatever you wanna call it. Bottom line....I was out of work early! Anyway, yesterday the temp was in the 90's and high humidity, and I had a bruch pile to burn. I gathered up everything I thought I woud need, like a water jug, water hose, rake, shovel and my trusty do-rag cause I knew it was gonna be hot! Sprayed some lighter fluid on it and lit it up. This brush pile was a good 20 ft. in diameter and at least 6 foot tall. The heat coming from it was intense and could be felt a goog 50 feet away. I GOT HOT! Hot enough that after 10 min. of work, I would have to sit in the shade and re-hydrate. At times I felt weak enough that I had to stop and drink water or I would of passed out. Thats why I took my water jug!
Anyway, the brush pile is still somldering, but no longer a pile. And I managed to get some more sun!

Today will be pretty slow. There is a T-Ball game at 11 and maybe I'll make it down the river today. I really, really, really need to catch a big fish!

Monet...Thanks for stopping by. We never made it to the river that night with the DVD player, I chose to play softball and had a blast. Have you been fishing yet this year?

Krissy....I got lucky with her! Now, if I could only get her to shooting a bow now. I am big on Flathead right now. I think I would die if I caught anything over 10 pounds. I'll keep trying!

Good morning Phil! Thanks for the weekend wishes in my journal this morning.

There was a good reason you visited my journal this morning, and that was I was suppose to come here and read your journal. And let me tell you. I have been blessed by your openness, especially the one on 6/7. That is exactly where I am this morning. I get fed up with the yoyo's. I hit a new low and then start climbing back up to undo it all! Maybe it helps me just to know that somebody else has those feelings and can put them into words like you did. The post right after was an eye opener as well. I am going to have DH read that post. It will help him in the long run. It sounded so much like him too.

By the way, I am proud of you for resisting the tobacco. Food is enough of a challenge without having another thing to deal with! KUTGW!
