Starting my New Year's Resolution a Month Early

Today, I found this website and it is WONDERFUL!!!!! I love it! I just started off with SBD on Tuesday. Monday night I printed some recipes and made a grocery list for Tuesday morning. So of course, at the Crack of Dawn I dropped off DH at the Airport and Went SHOPPING! I was pleasantly surprised that the Cost of Groceries was a lot cheaper than what I usually pay. Oh yeah, did I mention that my DH is in for a Rude Awakening Lifestyle Change! He has no idea! Well, I was back in Time for Breakfast. I made an omelet with egg substitute with spinach and smoked salmon. Mind you I hate eggs....but, I forced it down. Not bad...but, I think I am going to find an alternative for breakfast or use less egg. I did love the smokeyness of the salmon though. For Lunch, I made this delicious chicken salad
For Dinner, I made Steak with Sundried tomato-garlic sauce with a side of greenbeans (without the grey poupon) For Dessert: Fudgicles SF/FF I wasn't hungry at all![break]

Today, For breakfast, I improvised. I had a BLT without the bread. I used 2 slices of bacon on top of a Piece of Romain Lettuce topped with Cottage Cheese and Tomatoes. This was sooo good!

For Lunch- My left over chicken salad. H20 with Lemon

For Snack- 1 Celery Stick

For another snack/midday dessert-fudgicle

For Dinner-Salmon with spinach and mushrooms

Dessert- small serving of Jello with Whipped Topping

I forgot to mention that my weigh at the start of SouthBeach is 154.4.

Today, Day 3 of SB diet. It is so much easier than I thought. A lot easier than WW!! The counting was a pain!!

For Breakfast:
TBLT on Romaine, Tomato, cottage cheese
Lunch: Baked Fish, Cabbage, and Broccoli
Dinner: Turkey Chili
2 Snacks today: fudgicle with whipped cream and cz stick
And several Glasses of H20!!!!

I was very full today!!! I am looking forward to tomorrow!

Didn't get a chance to post last night. But, yesterday was fantastic! I am so happy that I made it to Day 4 without starving myself. I love to cook so cooking healthy has had it's challenges but it's not too difficult. The only downside is that I a cook more often whereas I would cook 3-4 times a week. I think the preparation of meals will be my challenge. But, I am going to try my hardest to remain focus. I think seeing the results of these past four days so far (4lb lost and the week is not over) will keep me motivated. Woo Hoo!

So Yesterday, for breakfast, I made a flaxseed muffin. Kudos to the SB dieter poster who posted the recipe for a single serving! Ill get your name soon. But, Thanks! For Lunch, I had Turkey Chili topped with a slice of avocado. Jello for snack. And for dinner, I made a single serving of Snapper topped with Almondine with Spaghetti Squash topped with 2 % mozzarella cheese, a little parmesan with crushed tomatoes (I added basil, red pepper, garlic and onion to enhance flavor to the crushed tomatoes and let it simmered for a few minutes......it tasted like Fra Diablo Sauce) and I had spinach and mushrooms.

Fish- was tooo mushy. I don't know what went wrong. So, that was pretty much a toss out but I did eat most of it.

Spinach/Mushrooms- I added Lemon Juice too soon and it became tooo bitter. Blah. That was a toss. What is wrong with me? I know how to Cook!!!!

But, the most delicious dish was the Spaghetti Squash with crushed tomatoes and cheese. OMG, that was to die for! I froze two servings. If you have never had it, I totally recommend it as subsitute for pasta. The stringyness of it reminded me of real spaghetti. My squash was Al Dente. LOL DH who is a finicky eater....he LOVED It! Although it is not my picture, this is what it looked like,

It is 10:11 am. I better get going with Breakfast. Hmmmm, what shall it be today! Ill keep ya posted!

Okay, I didnt have much of a breakfast since I woke up so late. I had three strips of turkey bacon. I feel guilty b/c I didnt have any greens with it.

For Lunch, Turkey chili with left over spaghetti squash. Thank goodness for Left Overs!!! I used to toss left overs but stored properly, it taste just as good or better. I am going to try not to keep them frozen too long. Don't want to deal with Freezer Burn.

I also had Chocolate Milk with Cocoa mix (no sugar added) and 1% Milk. and 2 small tsp of Splenda. I made 2 servings for me and DH. I threw it in the blender and Walah... I threw it in the Freezer for a few minutes b/c I like my MILK COLD. Well, it was so delicious! I could not believe it was 1% Milk. It hit the spot. We are off to a Christmas Festival tonight....I hope I do well!

Okay, I have a problem with not eating a proper breakfast on the Weekends. I ate Cottage Cheese with 2 tsp of ground flaxseed. Not sure if this is suffice.

Today was a great Day! For Lunch, I had a cup of Broccoli and Cheese soup and a Salad. For Dinner, I made Ground Turkey Tacos without the shell. I used the iceburg lettuce to create a shell. It was so yummy!

I also converted a cheesecake recipe , Cheesecake Tarts (in muffin tins)....Delicious! This is for the rest of the week.

Okay, I just realized I wasn't suppose to have the Broccoli and Cheese Soup yesterday! Lesson Learned

This morning I had a flaxseed muffin, v8 and 1/2 cup of coffee.

Lunch Turkey BLT with a slice of avocado.

Sn-cheesecake tart

Dinner- I planned to have Grilled Cat Fish and broccoli quiche and another veggie.

Sn-haven't thought of it yet.

So far, this is it for the day! I am staying motivated

Well, Today is officially...One Week! I only lost 4 lbs but it maybe because that AF Or TOM is on the Way. Eitherway, I am happy. 4lbs is 4lbs.

Lunch was Great! I made a salad with salmon topped feta cheese. This was yummy. For Snack, I had a fudgicle. It was delicious!

I missed signing in yesterday. I was busy running around but I am happy to say that I am still going strong with SB. The only down side is that I haven't lost anymore weight but I am not too troubled by it b/c of TOM is on its way today or tomorrow. For phase 1, if I lose a total of 7-8lbs, I will be happy.

Yesterday for Breakfast-V/8 Tomato Juice (I was on the Go) and Cz Stick ( I am still working on improving my breakfast)
Lunch- Grilled Shrimp Salad that I made at HOme. Yummy!!! Bunch of Veggies, topped with a little feta.
Dinner- Was the highlight of my day. Chile Relleno with Chicken inside topped crushed tomatoes with mexican spices (including chili powder). Veggie was mixed squash and zucchini. This meal will take the place of my enchilada cravings. I LOVE Mexican FOOD!

Last night, I had a delicious dinner! Mock Lasagna. I used Egg Plant as a replacement for the noodles, turkey meat with crush tomatoes and mushrooms with italian spices and Red Flake pepper. I also used ricotta cheese and mozarella. I have left overs for lunch today!

This morning, I had T. Bacon, Sourcream with vanilla and Flax Seed.

Yesterday for Lunch, I ate the left over Lasagna. I will defintely be making this again!

Last night, DH and I celebrated hanukkah. I Love Latkes!! So I made regular potatoe latkes for DH and I made sweet potatoe/zucchini latkes for ME! I have 2 days before Phase 2, so I kinda cheated and ate the sweet potatoes. But, the scale didn't reflect differently this morning, so I am okay. Next week is Christmas, I am going out of town....So I am going to have to be creative with my menu. I have to do a search for SBD Christmas Desserts!
