The "cake" I make is the 3-minute Chocolate Cake from Linda Sue's site. http://www.genaw.com/lowcarb/3_minut...late_cake.html I use flax meal instead of almond flour. Gives me some fiber that way ![]() These are the Flat-outs. I buy them at Super-Walmart by the deli section, but the other grocery stores in our area also carry them. They have 16 carbs-9 fiber-1 sugar alcohol=6 net carbs. I only eat half (3 net carbs) because that's usually enough for me. I also like them because, although they contain soy oil, they don't contain soy flour or soy protein isolate. Can't stand the taste of soy flour anymore. Even the smell makes me ill. Okay, now the coconut bark. I've been reading a lot about coconut oil and had to try it. I add to that 2 Tbs. unsweetened coco and between 1 teaspoon and 1 Tbs. Xylitol (which is the sweetener that I use, but you could use Splenda). Mix it up well and freeze for about 5-10 minutes. Sometimes I add chopped pecans! Whenever I need a chocolate fix, I break off some and eat it. Doesn't give me bathroom issues and thoroughly satisfies my chocolate cravings. Now, my weight has been bouncing up and down a pound or two over the last week and some would say that I'm eating too much extra stuff, BUT I am feeling happy and satisfied and I'm staying on plan which I think is more important than losing fast! (No, that's not justification--it's a difference of opinion and goals.) AND my clothes are hanging off me like crazy , so although the scale might not be saying anything, my body is definitely changing! Plus, TOM is going to show up anytime now and my body is trying to fight horrible, evil, mean Poison Ivy, which I have on large areas on my leg, chin, stomach.

I just tried the cake, really pretty good! I used soy floud instead of almond flour because I can't find almound flour here in my area. Really good! Gonna make several and freeze them for quick snacks

Thank you a bunch.. I went to save the choc cake.. and I already had it..
.. but I have never tried it.. I also put it can be made with the flax..also.. I have heard about the coconut bark.. but I was thinking coconut flakes..lol.. so I got to excited.. ![]() ![]() ![]() I have made it.. but wasn't what I was expecting when I made it.. ![]() I will for sure look for me some flatouts.. looks great.. Sorry I haven't been in lately....
Went to the picnic. It was lame. Only about 8 or so people. Same people who didn't talk to me then, didn't talk to me at the picnic. Same ole same ole. Don't know how the actual evening went. Spent the rest of the day at my brother's and had a really nice time. Had my garden party on Thursday. Stayed on plan. The only thing that tempted me was the Brie/Apricot tarts. Oh my gosh, they looked soooooo good, but I resisted. I kept thinking back to how whenever I go off, even for just a minute, it turns into a really ugly binge for months and months. Don't want to start that again, if you know what I mean! Scale said 214 after getting back up to 216 from TOM. Bought the unrefined coconut oil today and there is a big difference in taste. From now on, I'm paying the extra two bucks for the unrefined. Love the coconutty taste! |

I really want to get back to 191 so that I'm losing "new" weight. Bob Evans sausage was on sale at our grocery store, so I bought a bunch. Had some for breakfast this morning. Yum! Yum! Still eating flaxmeal cake every morning for breakfast and coconut bark made w/ 4 TBLS. of coconut oil throughout the day. I feel completely satisfied with how I've been eating. I'm really not tempted to go off plan....well, if I am, I eat some coconut bark. LOL Whenever I'm at a potluck, I always try to pick what looks like the lowest carb options. Just about everywhere I go, there is a veggie tray or fruit salad. I just pick out the cantelope, blueberries, and strawberries to eat. I also plan ahead by eating before I go. If I'm supposed to bring something, I bring a cheese/veggie/olive tray. NOW-if I could just keep this up for the rest of my life, I would be okay. but we know my track record. On of these times has to stick, right? |

I just found these journals, I started Atkins once again last November after many attempts and really would have done good to have journaled like this. I started then at 212 and made it to 175 throughout the first 6 months or so and have kept at it pretty good but went off during October, didn't gain but a couple lbs as I kept my excersise going but saw myself going down a very slippery slope with junk food at the ready to often. Amazing the adiction brings me right back to old habits as soon as I give myself the green light for "regular" food. Decided last week that Nov 1st it was time to get serious again before I got to far gone. Thank you for your journal and inspiration. I hope to check in frequently.

Alas, I have not been on here lately. Sigh! I'm sorry I didn't answer your questions. Twikerbell, my typical menu looks something like this: B: 1 minute-muffin made with blueberries. NO artificial sweetener. L: protein and veggie S: protein and veggie Snack: 1/4 frozen raspberries w/ cream I don't eat any artificial sweeteners....no Splenda, no nutrasweet, no xylitol. These things give me wicked bad headaches. I haven't eaten a Flat-out in about two weeks or so. My journey has been a long one-years and years. I think I have finally reached the point where food is about how it makes me feel/what it does for my body and not about celebrating, emotions, and what everyone else is eating. I actually took a cooler full of my food with me when we traveled to Virginia for the long weekend over Thanksgiving. Did I feel weird? Yeah, but, when I got home, I didn't have any damage control to worry about. I should add that my weight loss is happening at a snail's pace now. I have PCOS and am hypo-thyroid. 3 lbs. in one month. Slow and steady, I guess. Better than last year at this time.My plan is to start exercising in January. Hopefully, I can get a few workouts here and there this month. I'm not going to try to start anything new this month. Too much holiday stuff to get done. Busy, busy, busy. I will feel successful if I can get through to New Year's Day completely on plan. Weight loss will be an added blessing. |

Just read over last year's journal from this time. I'm in such a different place than I was last year at this time. The beginning of this year was very, very difficult for me, but I got through it and have a different resolve than last year. In other news, I pulled out an old pair of jeans that I received for a gift a couple of years back and never really wore. The are size 18 Petite and I am wearing these things and they look good! ![]() Oh, forgot to mention yesterday that they measured me at the doctor's yesterday and I've lost 3/4 of an inch. Can you believe it? I am now only 5'3". ![]() |
