Hi, Monet,

The "cake" I make is the 3-minute Chocolate Cake from Linda Sue's site.

http://www.genaw.com/lowcarb/3_minut...late_cake.html

I use flax meal instead of almond flour. Gives me some fiber that way

These are the Flat-outs. I buy them at Super-Walmart by the deli section, but the other grocery stores in our area also carry them. They have 16 carbs-9 fiber-1 sugar alcohol=6 net carbs. I only eat half (3 net carbs) because that's usually enough for me. I also like them because, although they contain soy oil, they don't contain soy flour or soy protein isolate. Can't stand the taste of soy flour anymore. Even the smell makes me ill. They are also good as the "crust" of a pizza! I them.

I buy the Light Flat Outs.

If your seeds aren't ground, you'll want to grind them first. I think you can use a blender or clean coffee grinder. It definitely will not be as fine as white flour so don't worry that you have to keep grinding and grinding. I've purchased flax at Wal-mart and it was already "meal".

Okay, now the coconut bark. I've been reading a lot about coconut oil and had to try it. I love it!
http://lowcarbfriends.com/bbs/showth...ht=coconut+oil

I melt 4 Tbs. coconut oil in a square "sandwich" plastic container. I add to that 2 Tbs. unsweetened coco and between 1 teaspoon and 1 Tbs. Xylitol (which is the sweetener that I use, but you could use Splenda). Mix it up well and freeze for about 5-10 minutes. Sometimes I add chopped pecans! Whenever I need a chocolate fix, I break off some and eat it. Doesn't give me bathroom issues and thoroughly satisfies my chocolate cravings.

Now, my weight has been bouncing up and down a pound or two over the last week and some would say that I'm eating too much extra stuff, BUT I am feeling happy and satisfied and I'm staying on plan which I think is more important than losing fast! (No, that's not justification--it's a difference of opinion and goals.) AND my clothes are hanging off me like crazy, so although the scale might not be saying anything, my body is definitely changing! Plus, TOM is going to show up anytime now and my body is trying to fight horrible, evil, mean Poison Ivy, which I have on large areas on my leg, chin, stomach.

Well, today I get to go to my 20 yr. high school reunion. Actually, I opted not to go to the big shindig this evening and am just going to the family picnic this afternoon. Not sure how I feel. Wish me luck.

Sorry I haven't been in lately....

Went to the picnic. It was lame. Only about 8 or so people. Same people who didn't talk to me then, didn't talk to me at the picnic. Same ole same ole. Don't know how the actual evening went.

Spent the rest of the day at my brother's and had a really nice time.

Had my garden party on Thursday. Stayed on plan. The only thing that tempted me was the Brie/Apricot tarts. Oh my gosh, they looked soooooo good, but I resisted. I kept thinking back to how whenever I go off, even for just a minute, it turns into a really ugly binge for months and months. Don't want to start that again, if you know what I mean!

Scale said 214 after getting back up to 216 from TOM.

Bought the unrefined coconut oil today and there is a big difference in taste. From now on, I'm paying the extra two bucks for the unrefined. Love the coconutty taste!

Thanks, Monet.

I buy my CO at a local health food store, but Netrition has some really good deals. I have ordered from Netrition in the past and was very pleased.

This morning the scale said 213 I'm back to losing.

I'm addicted to Roasted Green Beans lately. Can not get enough of them!!! Trim the ends off fresh green beans. Spread them out on a cookie sheet. Sprinkle generously with olive oil, salt, and pepper. Roast at 375 for 20-30 min. I like mine really brown and crispy, so I cook them 30-35. I stir them after 20 minutes.

Going to go sit out in the back yard. Have a good night!

212.5 this morning!!!!!

I really want to get back to 191 so that I'm losing "new" weight.

Bob Evans sausage was on sale at our grocery store, so I bought a bunch. Had some for breakfast this morning. Yum! Yum!

Still eating flaxmeal cake every morning for breakfast and coconut bark made w/ 4 TBLS. of coconut oil throughout the day.

I feel completely satisfied with how I've been eating. I'm really not tempted to go off plan....well, if I am, I eat some coconut bark. LOL

Whenever I'm at a potluck, I always try to pick what looks like the lowest carb options. Just about everywhere I go, there is a veggie tray or fruit salad. I just pick out the cantelope, blueberries, and strawberries to eat. I also plan ahead by eating before I go. If I'm supposed to bring something, I bring a cheese/veggie/olive tray.

NOW-if I could just keep this up for the rest of my life, I would be okay. but we know my track record. On of these times has to stick, right?

So I've been craving green beans lately. Guess what I found out...they are a good source of potassium. I was having a lot of cramps lately, so my body was trying to tell me something.

From another post I posted on the ML

Quote:
I had a huge non-scale victory yesterday.

Our youngest daughter had a stomach bug this weekend. We needed to take her to the emergency room on Sunday afternoon because she was so dehydrated. They gave her IV fluids and an anti-nausea medication and she is doing just fine.

I realized I hadn't eaten anything all morning (or had my coffee) so dh went through Wendy's on the way to the hospital. I WANTED that hamburger bun soooooooo bad. I could feel how it would feel in my mouth. I could taste the way it would taste. I was ready to eat that bun! Then I snapped back to reality and realized that no matter how many buns and fries I ate, they were not magic and the outcome at the hospital for my daughter would be the same whether I ate the carbs or not.

So.....

I threw away the bun and drank my plain iced tea.

After we got home from the hospital, I really wanted to eat a bunch of carbs. I was ravenous and wanted to grab everything in site as post-stress eating.

I didn't. I talked to dh who reminded me how well I was doing and white-knuckled it through the evening, only eating on-plan food.

I woke up this morning very proud of myself.
Quote:
My daughter is feeling much better.

Thank you all for your kind responses. I'm down another pound.

Sunday was very difficult (on so many levels) because my habit is....LC, LC, LC, lose between 25-40 lbs. Some emotional life event happens and I go off plan. And I don't just go off plan-I GO OFF PLAN. No discretion what so ever and quickly, I'm back to where I was +5 lbs. January is the perfect example. I had started LC (again) in November, 2006. Lost down to 190. Stayed on plan all through the holidays. Went to a dental cleaning in the middle of January and found out that I had a tooth that needed to be pulled. The infection had also eaten into the bone and infected the sinus above. I came home from the dentist and ate everything in site and continued eating until this June. Result=40 lb. gain.

Now I'm back where I was last year at this time really, really trying to get a handle on the the emotional part of weight loss.

I would have to say that this is the first "big" thing that I made it through without turning to food for my comfort.

It's stories like yours (BTW, so glad DD is doing better!) that make all the difference to me.

It's so hard sometimes.. and I always instantly turn to carby, sweet foods when I am sad or down or anxiety ridden... (allot lately thus the 20 pound gain!)

I love the term "white knuckle it".. it's right on..
I saved your post.. I put it in my journal.. will go to it next time I am freaking out..

I just found these journals, I started Atkins once again last November after many attempts and really would have done good to have journaled like this. I started then at 212 and made it to 175 throughout the first 6 months or so and have kept at it pretty good but went off during October, didn't gain but a couple lbs as I kept my excersise going but saw myself going down a very slippery slope with junk food at the ready to often. Amazing the adiction brings me right back to old habits as soon as I give myself the green light for "regular" food. Decided last week that Nov 1st it was time to get serious again before I got to far gone. Thank you for your journal and inspiration. I hope to check in frequently.

Keep it going

Thank you for visiting, pritchard & twinkerbell.

Alas, I have not been on here lately. Sigh! I'm sorry I didn't answer your questions.

Twikerbell, my typical menu looks something like this:

B: 1 minute-muffin made with blueberries. NO artificial sweetener.
L: protein and veggie
S: protein and veggie
Snack: 1/4 frozen raspberries w/ cream

I don't eat any artificial sweeteners....no Splenda, no nutrasweet, no xylitol. These things give me wicked bad headaches. I haven't eaten a Flat-out in about two weeks or so.

My journey has been a long one-years and years. I think I have finally reached the point where food is about how it makes me feel/what it does for my body and not about celebrating, emotions, and what everyone else is eating. I actually took a cooler full of my food with me when we traveled to Virginia for the long weekend over Thanksgiving. Did I feel weird? Yeah, but, when I got home, I didn't have any damage control to worry about.

I should add that my weight loss is happening at a snail's pace now. I have PCOS and am hypo-thyroid.

195 lbs.

3 lbs. in one month. Slow and steady, I guess. Better than last year at this time.

My plan is to start exercising in January. Hopefully, I can get a few workouts here and there this month. I'm not going to try to start anything new this month. Too much holiday stuff to get done. Busy, busy, busy. I will feel successful if I can get through to New Year's Day completely on plan. Weight loss will be an added blessing.

Still 193.5.

Just read over last year's journal from this time. I'm in such a different place than I was last year at this time. The beginning of this year was very, very difficult for me, but I got through it and have a different resolve than last year.

In other news, I pulled out an old pair of jeans that I received for a gift a couple of years back and never really wore. The are size 18 Petite and I am wearing these things and they look good!

Oh, forgot to mention yesterday that they measured me at the doctor's yesterday and I've lost 3/4 of an inch. Can you believe it? I am now only 5'3".

194.

I think the Synthroid is finally kicking in because I am definitely feeling better. Hasn't shown up in the weight loss yet.

Looking for good LC recipes to cook for the holidays. Any suggestions?
